- Cook rice according to package directions. Meanwhile, in a large skillet, saute shrimp and garlic in oil and butter for 3-4 minutes or until shrimp turn pink., Combine cornstarch and orange juice until smooth; stir in the basil and salt. Gradually stir into the skillet. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened. Serve with rice.

- Spray the inner pot with nonstick cooking spray.
- Add shrimp, beaten eggs, broccoli and onion to the inner pot.
- Cover and lock the lid in place. Place the vent to the sealing position and set to manual on high pressure for 1 minute.
- To make the sauce, combine soy sauce, vinegar, sugar, sesame oil and cornstarch; whisk well and set aside.
- When cook time is finished, quick release the pressure, remove the lid. Set to Saute mode, add sauce and stir using a wooden spoon.
- Cook for two minutes or until the shrimp are completely opaque and the sauce has started to thicken. Add cooked rice and carrots and continue to stir until the rice is heated through and all the ingredients are well combined. Serve topped with chopped cashews.

- Heat sesame oil and olive oil in a large nonstick skillet or wok over medium-high heat. Add shrimp and cook until they are bright pink on the outside and the meat is opaque, about 3 minutes, flipping halfway through.
- Remove shrimp from the skillet using a slotted spoon, allowing oils and cooking juices to remain in the skillet. Place shrimp on a plate and set aside.
- Add peas and carrots and corn to the skillet and cook, stirring intermittently, until vegetables begin to soften, about 2 minutes. Add garlic; cook and stir for 1 minute. - Prepare rice according to package directions. Reserve. Run cool running water over the shrimp until thawed; drain well.
- Heat oil in a nonstick wok or large skillet set over medium-high heat. Add the sugar snap peas and red pepper. Stir-fry for 5 minutes or until tender and lightly browned.

- Combine first 6 ingredients in a bowl; set aside.
- Heat vegetable oil in a large skillet over medium high heat. Add eggs; stir fry for 30 seconds or until soft scrambled.
- Add onions, ginger and snow peas. If using uncooked shrimp, add them to the skillet and cook until just before they start to look pink. Add rice and broth mixture; toss gently to coat.
- If using cooked shrimp, add them at the end and cook until just heated through. Depending on the amount of rice used, you might need to add a bit more chicken broth to give it a bit more moisture.

- If your shrimp is frozen cook it in 2 Tablespoons oil. Cook till it is thawed and all the water is gone. Take out of pan.
- By hand or food processor (which I prefer) finely cut up your green onions, garlic and carrots.
- Put your shredded mix in with 3 Tablespoons oil, rice, soy sauce, salt.
- Cook stirring often till all if well heated and add your shrimp and eggs.
- Continue cooking till your vegetables are done.
- Serve with Soy sauce - like I said never enough soy sauce!
