EASY ONE-POT CHICKEN CASSEROLE
A light and quick spring chicken and vegetable stew that can be whipped up in less than an hour

Steps:
- Put the kettle on. Fry 8 bone-in chicken thighs in 1 tbsp oil in a casserole dish or wide pan with a lid to quickly brown.
- Stir in the whites of 5 spring onions with 2 tbsp plain flour and 2 chicken stock cubes until the flour disappears, then gradually stir in 750ml hot water from the kettle.
- Throw in 2 large carrots, in batons and 400g new potatoes, bring to a simmer. Cover and cook for 20 mins.
- Take off the lid and simmer for 15 mins more, then throw in 200g peas for another 5 mins.
- Season, stir in 1 tbsp grainy mustard, the green spring onion bits, a small handful of fresh soft herbs and some seasoning.

EASY CHICKEN CASSEROLE

- Heat oil in a large, flameproof casserole. Season chicken pieces and brown all over for 10min. Remove and set aside. Drain fat from the pan - there should be around 75ml (3fl oz). Pour just 1tbsp oil back in to the pan and discard the rest. Preheat oven to 200ºC (180ºC fan oven) mark 6.
- Add the onion, garlic, celery, carrots, leeks and potatoes to the pan, and cook, stirring, for 5-10min. Stir in the flour, cook for 2min, then pour in the stock. Season well, then return the browned chicken to the pan. Add the rosemary, squeeze over the juice from the lemon half and pop the squeezed lemon half into the pan. Cover and bring the casserole to the boil.
- Cook in the oven for 25-30min until the chicken is cooked through and the sauce is piping hot and thickened.

- In a large casserole dish (Dimensions: 9x13), add chicken, broccoli, cream of chicken soup, rice, cheese, mayonnaise, salt, pepper, Italian seasoning.
- Mix gently until combined.
- Spread mixture evenly in the dish.
- Sprinkle Ritz crackers on top and spread them out evenly.
- Drizzle melted butter over the top.

ONE-POT CREAMY CHICKEN CASSEROLE

- Preheat the oven to 200C (400F) and setting the shelf to the lower third of the oven.
- Pat the chicken dry using paper towels (do not rinse) and season with salt and pepper.
- Dry fry the bacon in a large lidded non-stick pan until it starts to crisp and render some of its fat. Set aside on a kitchen towel lined bowl.
- Add a the olive oil and butter to the pan and pan fry the chicken legs, in batches if necessary, for 4 minutes per side or until nicely browned. Set aside.
- Add the shallots and cook, stirring, for a couple of minutes. Add the potatoes and garlic and cook for a further four minutes.
- Add the cider and stir in the mustard, honey and cream. Sprinkle with the dried tarragon and stir in the bacon.
- Return the chicken to the pot, nestling it in the creamy sauce. Add the thyme sprigs, cover the pan and transfer to the oven. Cook for 15 minutes.
- Uncover the pot and cook for another 5 minutes or until the potatoes are tender.
- Check the seasoning, add the lemon zest and serve with some crusty bread to mop up the delicious sauce and a green salad on the side.

- Put the potatoes into a large saucepan of salted boiling water and boil until cooked (10-15 minutes, depending on their size).
- While the potatoes are cooking, preheat the oven to 400°F (200°C). Cut each chicken thigh into three strips and place in a bowl. Sprinkle the meat all over with salt and pepper. Heat a large frying pan and fry the diced pancetta until golden brown and crisp. Scoop out the pancetta with a slotted spoon and transfer to a plate lined with paper towels to drain. Keep the pancetta fat into the pan, and add chicken, fitting all the pieces snugly in one layer. If the pan is not big enough to cook all the chicken at once, cook it in two batches. Toss and fry over high heat for about 10 minutes, until almost cooked, then remove with a slotted spoon to a large ovenproof pan or dish.
- Prick the cherry tomatoes with a sharp knife. Place them in a bowl, cover with boiling water and leave for a minute or so. Drain and, when cool enough to handle, pinch off their skins. You could leave the skin on, but removing it intensifies the flavor and infuses the potatoes with their sweetness. Add the tomatoes to the chicken.
- Drain the potatoes in a colander, then lightly crush them with a fork and add to the chicken and tomatoes. Blend ¾ of the oregano leaves, a pinch of salt, freshly ground black pepper, the extra-virgin olive oil and red wine vinegar together. Drizzle this mixture over the chicken, potatoes and tomatoes, add the fried pancetta and the remaining oregano leaves and toss everything together. Bake for 40 minutes until golden.
