Some 17 years ago, when I was dating the man who is now my husband, his mother gave me this recipe for his favorite fudge. It's a tasty treat that's so simple to make.

Number Of Ingredients 7

3 tablespoons butter, divided
12 ounces German sweet chocolate, chopped
2 cups semisweet chocolate chips
1 jar (7 ounces) marshmallow creme
4-1/2 cups sugar
1 can (12 ounces) evaporated milk
2 cups pecans or walnuts, chopped

Steps:

  • Line a 13x9-in. pan with foil; butter the foil with 1 tablespoon butter and set aside. Break German chocolate into 1-in. pieces; place in a bowl. Add the chocolate chips and marshmallow creme; set aside., In a large saucepan, bring the sugar, milk and remaining butter to a boil over medium heat, stirring often. Reduce heat; simmer, uncovered, 6 minutes, stirring occasionally. Slowly pour over chocolate mixture; stir until mixture is smooth and blended. Stir in nuts., Pour into prepared pan. Let stand at room temperature until cool. Cut into 1-in. squares. Store in an airtight container in the refrigerator.

2 1/3 cups chocolate protein powder (I use Champion Whey Stack)
1 ounce unsweetened chocolate square
1/2 cup butter
4 ounces cream cheese
1 ounce chopped pecans
1 teaspoon vanilla
2 teaspoons peanut butter
1/4 cup splenda sugar substitute

Steps:

  • Melt butter, cream cheese, peanut butter and chocolate in bowl in microwave and mix together very well. Add Splenda and vanilla, mix well again. Add pecans and protein powder and mix.
  • Place in a baking pan, press down and refrigerate. When cooled and hardened, cut into 20 square bars. This does not get baked but the mixture will be warm from heating the first five ingredients in the microwave.

2 1/3 cups vanilla protein powder
1 ounce unsweetened chocolate square
1/2 cup butter
4 ounces cream cheese
1 ounce chopped walnuts
1 teaspoon vanilla extract
1 teaspoon natural-style peanut butter or 1 teaspoon no-sugar-added peanut butter
1/4 cup Splenda granular, sugar substitute

Steps:

  • Melt butter, cream cheese, peanut butter, and chocolate. Mix well.
  • Add splenda and vanilla, mix well again.
  • Now add nuts and portein powder and mix. Mix well so that the powder dissolves into the mixture.
  • Place in baking pan, flatten and refrigerate, a rectangle casserole dish works well here.
  • Cut into 8 bars.

1 cup butter, softened
2 cups packed brown sugar
2 eggs
2 teaspoons vanilla extract
½ teaspoon almond extract
3 cups quick-cooking oats
2 ½ cups all-purpose flour
½ cup sliced almonds
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter
½ teaspoon salt
2 teaspoons vanilla extract
½ teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat 1 cup butter and brown sugar in a large bowl until smooth and creamy. Stir in eggs, 2 teaspoons vanilla extract, and 1/2 teaspoon almond extract; mix well. Combine oats, flour, sliced almonds, baking soda, and 1 teaspoon salt in another bowl; stir into butter mixture until batter is just mixed. Spread 2/3 batter into a 10x15-inch rimmed baking sheet.
  • Heat chocolate chips, condensed milk, 2 tablespoons butter, and 1/2 teaspoon salt in a saucepan over medium heat until chocolate is melted, about 5 minutes, stirring occasionally. Remove from heat and stir in remaining 2 teaspoons vanilla extract and 1/2 teaspoon almond extract. Spread chocolate mixture into baking sheet over oat batter. Spoon remaining 1/3 oat batter over chocolate.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

1 jar (7 ounces) marshmallow creme
2/3 cup fat-free evaporated milk
1/2 cup butter, cubed
2 teaspoons vanilla extract
3 cups semisweet chocolate chips
2 cups chopped pecans or walnuts, toasted

Steps:

  • Line a 9-in. square pan with foil and coat foil with cooking spray; set aside. , In a large saucepan, combine the marshmallow creme, evaporated milk and butter. Cook and stir over medium heat until smooth. Bring to a boil; boil for 5 minutes, stirring constantly. Remove from the heat; add vanilla. Stir in chocolate chips until melted. Add pecans. Pour into prepared pan. Refrigerate for 2 hours or until firm., Using foil, remove fudge from pan; carefully remove foil. Cut into 1-in. squares. Store in the refrigerator.
