The world's easiest yeast bread that's just like the very best artisan bread you pay top dollar for, with an incredible crispy, chewy crust, and big fat holes like sourdough. 3 cups (450g) flour (, bread or plain/all purpose (Note 1))
2 tsp instant or rapid rise yeast ((Note 2 for normal / active dry yeast))
2 tsp cooking / kosher salt (, NOT table salt (Note 3))
1 1/2 cups (375 ml) very warm tap water (, NOT boiling or super hot (ie up to 55°C/130°F) (Note 4))
1 1/2 tbsp flour (, for dusting)

Steps:

  • Mix Dough: Mix flour, yeast and salt in a large bowl. Add water, then use the handle of a wooden spoon to mix until all the flour is incorporated. Dough will be wet and sloppy - not kneadable, but not runny like cake batter. Adjust with more water or flour if needed for right consistency (see video at 17 sec, Note 5).
  • Rise: Cover with cling wrap or plate, leave on counter for 2 - 3 hours until it doubles in volume, it's wobbly like jelly and the top is bubbly (see video at 24 seconds). If after 1 hour it doesn't seem to be rising, move it somewhere warmer (Note 6).
  • Optional - refrigerate for flavour development (Note 9): At this stage, you can either bake immediately (move onto Step 5) or refrigerate for up to 3 days.
  • Take chill out of refrigerated dough - if you refrigerated dough per above, leave the bowl on the counter for 45 - 60 minutes while the oven is preheating. Cold dough does not rise as well.
  • Preheat oven (Note 7) - Put dutch oven in oven with lid on (26cm/10" or larger). Preheat to 230°C/450°F (220° fan) 30 minutes prior to baking. (Note 8 for no dutch oven)
  • Shape dough: Sprinkle work surface with 1 tbsp flour, scrape dough out of bowl. Sprinkle top with 1/2 tbsp flour.
  • Using a dough scraper or anything of similar shape (cake server, large knife, spatula), fold the sides inwards (about 6 folds) to roughly form a roundish shape. Don't be too meticulous here - you're about to deform it, it's more about deflating the bubbles in the dough and forming a shape you can move.
  • Transfer to paper: Slide a large piece of parchment/baking paper (not wax paper) next to the dough, then flip the dough upside down onto the paper (ie seam side down, smooth side up). Slide/push it towards the middle, then reshape it into a round(ish) shape. Don't get too hung up about shape. In fact, lopsided = more ridges = more crunchy bits!
  • Dough in pot: Remove piping hot dutch oven from oven. Use paper to place dough into pot, place lid on.
  • Bake 30 minutes covered, then 12 minutes uncovered or until deep golden and crispy.
  • Cool on rack for 10 minutes before slicing.

This is a no knead, dutch oven bread recipe that peeked my interest in the Dec/Jan'o8 Mother Earth News magazine. The end result is a brick oven type of crust that I've never gotten with home bread baking before, the results are wonderful -believe it or not!

1/4 teaspoon active dry yeast
1 1/2 cups warm water
3 cups all-purpose flour, plus more for dusting, white, whole wheat, a combination of the two can be used also
1 1/2 teaspoons salt
cornmeal or wheat bran, for dusting

Steps:

  • In a large bowl, dissolve yeast in water. Add the flour and salt, stirring until blended.
  • The dough will be shaggy and sticky.
  • Cover bowl with plastic wrap.
  • Let the dough rest at least 8 hours, preferably 12 to 18, at warm room temperature, about 70 degrees.
  • The dough is ready when its surface is dotted with bubbles.
  • Lightly flour a work surface and place dough on it.
  • Sprinkle it with a little more flour and fold it over on itself once or twice.
  • Cover loosely with plastic wrap and let it rest for about 15 minutes.
  • Using just enough flour to keep the dough from sticking to the work surface or to your fingers, gently shape it into a ball. Generously coat a clean dish towel with flour, wheat bran or cornmeal.
  • Put the seam side of the dough down on the towel and dust with more flour, bran or cornmeal.
  • Cover with another towel and let rise for about 1 to 2 hours.
  • When it's ready, the dough will have doubled in size and will not readily spring back when poked with a finger.
  • At least 20 minutes before the dough is ready, heat oven to 475 degrees.
  • Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in the oven as it heats.
  • When the dough is ready, carefully remove the pot from the oven and lift off the lid. Slide your hand under the towel and turn the dough over into the pot, seam side up.
  • The dough will lose its shape a bit in the process, but that's OK. Give the pan a firm shake or two to help distribute the dough evenly, but don't worry if it's not perfect; it will straighten out as it bakes.
  • Cover and bake for 30 minutes.
  • Remove the lid and bake another 15 to 20 minutes, until the loaf is beautifully browned.
  • Remove the bread from the Dutch oven and let it cool on a rack for at least 1 hour before slicing.

4 cups bread flour ((or all-purpose))
2 1/4 teaspoons instant yeast ((1 packet))
2 1/2 teaspoons salt
2 cups warm water ((about 110 - 120 degrees F))

Steps:

  • In a large bowl, mix together the flour, yeast and salt.
  • Pour in the warm water and use a sturdy spoon to mix together until fully combined. The dough should be wet and shaggy but not runny.
  • Cover the bowl with plastic wrap and let rise for about 2-3 hours, or until doubled in size (overnight version in notes).
  • Optional: once the dough has doubled in size you can store it covered in the refrigerator for up to 12 hours for enhanced flavor development, or you can bake it right away.
  • When you're ready to bake, put the dutch oven with the lid on in the oven and preheat the oven to 450 degrees F.
  • Lighlty sprinkle a work surface with about a tablespoon of flour. Scrape the dough out of the bowl onto your floured surface and roughly form into a ball. No need for it to be anywhere near perfect. It'll look nice once it bakes. Place the dough ball seam side down on a sheet of parchment paper.
  • Once the oven is preheated, remove the hot dutch oven and transfer the parchment paper with the dough to the dutch oven. Cover with the lid and bake for 35 minutes. Remove the lid and bake an additional 10-15 minutes until golden and crispy on top.
  • Lift the parchment paper with the bread from the dutch oven and let cool for 10-15 minutes, then slice and enjoy!

CRUSTY CRANBERRY BREAD WITH CARAMEL ALMONDS (ALMOST NO KNEAD)



Crusty Cranberry Bread With Caramel Almonds (Almost No Knead) image

This bread is absolutely amazing!!! I started with the basic dough from the book "Artisan Breads in 5 Minutes a Day" and then started to play around. This is a deliciously sweet (not too sweet, though) bread loaded with nuts and cranberries and then topped off with brown sugar and almond crust. This is very close to the bread from "When Pigs Fly" except it doesn't cost $7 a loaf. This comes together very easily, so don't let the long list turn you off. This makes 4 loaves. The original recipe could be set aside in the fridge for up to 2 weeks, allowing you to make a loaf when you liked. I'm not sure this would work, since I haven't tried it. Also, I like to use non stick foil, but feel free to use a pizza stone instead (with corn meal to avoid sticking). UPDATE: I have changed the order around a bit, since it seems that there was an unexpected fermentation between the yeast and the cranberries.

1 cup almonds (roughly chopped)
3 tablespoons butter
1/2 cup brown sugar, packed
1/2 teaspoon cinnamon

6 1/2 cups flour (I used bread flour but all purpose is ok)
1 tablespoon salt
3 tablespoons vanilla extract
1/2 cup brown sugar
1 1/3 cups dried cranberries
5 tablespoons butter (room temp)
1/2 cup almonds, chopped fine
1/3 cup brown sugar
1 cup hot water

Steps:

  • For the caramel almonds: In a nonstick saucepan heat the ingredients for the caramel almonds over med. high heat for about 8 min until thick and bubbly. Spread out on a non stick pan, and cool in the fridge. Once cool seperate into little pieces and leave at room temperature.
  • For the dough: In a VERY large bowl add the yeast, then the water, flour, brown sugar, and vanilla extract. Mix well until all the flour has been incorporated. Cover bowl with plastic wrap (sprayed with butter spray). Set in a warm area to rise for 2 hours (I turn my oven to warm for 3 minutes, turn it off, and then put my dough to rise in there. Just make sure it's not too hot.).
  • When the dough has risen, you may at this point put it in the fridge to use at a latter time or use now.
  • When ready to use, cut away about 1/4 of the dough from the rest, and gently mix in a 1/4 of the cranberries and caramelized almonds, until well incorporated. Form into a ball by tucking the edges of dough under until it forms a tight ball.
  • Place on a non stick pan (I like to use the non stick foil) and let it rise in a warm area for another 30 minutes.
  • Meanwhile, preheat oven to 375 degrees, with a shallow metal pan on the bottom rack. Mix together the topping ingredients.
  • Once the dough has risen, top off with 1/4 of the topping and place on the middle rack. Before closing the door, toss the 1 cup of hot water into the metal pan, closing the door quickly to trap the steam. Bake for 25 to 30 minutes.

Steps:

  • Combine dry ingredients in a large mixing bowl and stir to mix.
  • Add water and stir to make a batter.
  • Cover with plastic wrap and leave to rise, 4 to 18 hours.
  • Preheat oven to 450 F with a dutch oven or heavy casserole dish in the oven. Allow at least 15 minutes for the bakeware to heat up. Lid must be preheating as well.
  • Dump the batter into the bakeware, put the lid on, and bake 30 minutes.
  • Take the lid off and bake 15 minutes.
  • Dump onto a cutting board. If your bakeware was preheated it should not stick.
  • Eat.
