Bring a touch of Mexican flavour to your midweek meal with this low-fat, one-pan supper

1 tbsp vegetable oil
1 medium onion, finely chopped
3 garlic cloves, finely chopped
½ tsp dark brown sugar
1 tsp chipotle paste (we used Discovery)
400g can chopped tomatoes
4 skinless, boneless chicken breasts
1 small red onion, sliced into rings
a few coriander leaves
corn tortillas, or rice to serve

Steps:

  • Heat the oil in a medium saucepan. Add the onion and cook for 5 mins or until softened and starting to turn golden, adding the garlic for the final min. Stir in the sugar, chipotle paste and tomatoes. Put the chicken into the pan, spoon over the sauce, and simmer gently for 20 mins until the chicken has cooked (add a splash of water if the sauce gets too dry).
  • Remove the chicken from the pan and shred with 2 forks, then stir back into the sauce. Scatter with a little red onion, the coriander, and serve with remaining red onion, tortillas or rice.
  • If you want to use a slow cooker, cook the onion and garlic as above, then put into your slow cooker with the sugar, chipotle, tomatoes and chicken. Cover and cook on High for 2 hours. Remove the chicken and shred then serve as above.

2 (1/2 lb) whole boneless skinless chicken breast, split
1 teaspoon salt
1 tablespoon oil
1 large onion, cut into 1/2 inch pieces
1 green pepper, cut into 1/2 inch pieces
2 garlic cloves, minced
1 (16 ounce) can diced tomatoes, undrained
1 (16 ounce) can whole kernel corn, drained
1/2 cup picante sauce
1 teaspoon cumin
1 dash cinnamon
1 dash clove

Steps:

  • Cut chicken into 3/4 inch pieces, sprinkle with 1/2 teaspoons salt. Cook in oil in large saucepan until chicken loses pink color.
  • Add onion and garlic. Continue cooking, stirring often until onion is soft.
  • Add remaining salt, tomatoes and their liquid, corn, picante sauce, cumin, cinnamon and cloves. Bring to boil; reduce heat and simmer covered 10 minutes.
  • Add green pepper. Simmer 10 minutes. Ladle into soup bowls and top with a dab of sour cream if desired.

4 tablespoons olive oil
1 medium onion, roughly chopped
4 large cloves garlic, roughly chopped
2 jalapenos, seeded and sliced
1 tablespoon dried oregano
1 teaspoon dried cumin
1 (28-ounce) can chopped tomatoes
3 cups shredded cooked chicken
Few dashes Worcestershire sauce
3 to 4 cups chicken stock
1 lime
1 cup cooked white rice
Kosher salt
Sour cream, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Heat oil in a saucepan over medium heat. Add onion and saute for 1 to 2 minutes. Add garlic and jalapeno and sweat until soft and translucent. Add spices and cook for 1 to 2 minutes until fragrant and aromatic. Add tomatoes, chicken, Worcestershire, and stock.
  • Bring to a simmer and cook 20 minutes.
  • Cut the lime in half, squeeze juice into the pot, and then add the juiced halves as well.
  • Add white rice and cook 5 minutes longer to warm rice through. Season, to taste, with salt.
  • Ladle into bowls and garnish with sour cream and cilantro.

I came up with this stew one night after a long day of teaching. I had read a basic recipe using chicken and salsa to make a stew, but I threw in extra stuff I thought would go well together in a crock pot and this is what came out. Just a warning - this dish is HOT!!

1 lb chicken breast, cut
1 (16 ounce) jar medium salsa
1 (4 ounce) can diced green chilies
2 (8 ounce) cans tomato sauce
1 small onion, diced
1 (15 ounce) can diced tomatoes, undrained
8 ounces sour cream
2 cups shredded cheese

Steps:

  • Brown the chicken chunks until no longer pink in center. Add remaining ingredients and mix together in a large pot. You can add other vegetables of your choosing as well. Simmer for about 30 minutes or until warm all throughout. Serve topped with sour cream and cheese.

This soup is a recipe of my friend's father who passed away a few years ago. It is soooo delicious I was shocked when I found out how easy it is to make!! the El Pato sauce called for in this recipe is easily found in the Mexican isle of your grociery store (unless you live in Queensland, Australia... can't find it here!! I have to have my sister send it to me from the U.S. just so I can make this soup!!) or at a Mexican market. Make sure to get the yellow can labelled "hot tomato sauce" or "salsa de chile fresco" It is really cheap... the grociery store in Colorado (where I used to live) sold it for 69 cents. It is the key to the soup. You can easliy change the meat to beef and use beef broth instead of water... or some nice white fish or shrimp..but if using seafood the seafood should be added in the last 5 minutes of cooking time. Also, you can play with the veggies too!! I do need to warn you that it is a little bit too spicy for most children.

2 carrots, chopped 1/2-inch thick
3 medium potatoes, chopped bite size
1 1/2 cups chopped celery, chopped 1/4 inch thick
1 (7 3/4 ounce) can of el pato brand salsa fresco salsa (or "hot tomato sauce", the yellow can not the green!)
6 -8 pieces chicken thighs or 6 -8 pieces chicken legs, skinless, bone-in
2 tablespoons olive oil
6 cups water
1 teaspoon salt
salt and pepper
1 -1 1/2 bunch cilantro, chopped
lemon wedges or lime wedge (to garnish)

Steps:

  • in one tablespoon olive oil, heat pot on high heat and sear the chicken pieces till brown on all sides.
  • remove and transfer to a plate/bowl (you will add it back).
  • sautee onions with the rest of the olive oil in that same pot till translucent.
  • add all the veggies.
  • add chicken, water, El Pato sauce, and 1 tsp salt.
  • Bring to boil, cover, lower heat to medium and cover and let cook for 25 minutes.
  • lower heat to medium-low and let cook for 35 more minutes--the chicken will be falling off the bone. :D yumm!
  • taste and add more salt and then pepper as needed.
  • then throw in the cilantro, give it a good stir, then cover again and let it simmer for about 2 minutes.
  • ladle in a bowl just like that or over Mexican rice and garnish with lemon or lime wedges so your guests can squeeze it inches.

12 roma tomatoes
1 yellow onion
2 jalapenos
1 cup fresh cilantro
2 limes
4 garlic cloves
3 cups chicken broth
3 -4 chicken breasts
3 tablespoons cumin
1 tablespoon salt
1 tablespoon pepper
1 ounce taco seasoning (or you can make your own)
2 cups frozen corn
2 (15 ounce) cans black beans

Steps:

  • First-make the salsa-place onion, garlic cloves, jalapenos, and cilantro in the food processor and blend, then add 6 of the 12 roma tomatoes and blend, then add the other 6 and blend, add the juice of the 2 limes, cumin, salt, and pepper, and then blend and set homemade salsa aside.
  • Next, heat up 2-3 tablespoons of olive oil, cube the chicken breasts and place them in the skillet carefully, sprinkle the taco seasoning in and cook till done.
  • Next, when the chicken breast is cooked, add 3 cups of chicken broth, next add 3 cups of homemade salsa, then 2 cups of frozen corn, then 2 cans of black beans, and let simmer on low for about an hour.
  • Optional-good served over rice, and/or sprinkled with cheese and/or tortilla strips to make it tortilla soup!
