I was so tired of soggy skinned hot wings or too much vinegar in commercial hot wings, so I made this recipe up. I serve it with ranch dressing and sliced fresh veggies. Great to take to parties.

Steps:
- Cut wings into pieces discarding tips.
- Wash and pat dry with paper towels.
- Pre-heat cooking oil to 350 degrees.
- Slowly add 1/2 of the wing pieces to hot oil; fry until golden brown.
- In the meantime, in a large pan, melt the butter on a very low heat.
- Add bottled hot sauce and BBQ sauce.
- Keep sauce warm.
- Add the cooked wings to the sauce.
- Stir to coat.

- Preheat an outdoor or indoor grill to a high heat. Lightly grease the grill.
- Season wings with garlic powder and ground black pepper. Cook wings on the preheated grill until they are very crispy. Turn the wings frequently as they will burn easily.
- While the wings are grilling, in a large bowl, combine both hot sauces with garlic powder, Parmesan cheese and melted butter.
- When the wings are finished cooking, place them in the large bowl of hot sauce mixture and stir until they are coated.

CLASSIC HOT WINGS

- Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
- Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
- Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.
SUPER QUICK AND EASY HOT WINGS
When I make hot wings, it is always for mass quantities of boys at my house (the amount of food teenage boys eat can boggle the mind), so I had to come up with a way to make lots of good hot wings - fast.

- Heat oil, either in deep fryer or deep skillet on top of stove.
- I cut that extra, short little wing piece off each chicken wing.
- Fry the wings in hot oil until the skin is crispy and chicken is done.
- Drain on paper towels.
- Get a large tupperware container, drop in enough wings to cover the bottom, pour desired amount of wing sauce over top, put on lid, and shake shake shake until well coated.
- Continue process until all your wings bathed in hot sauce.

AMAZING AND EASY CHICKEN WINGS

- Mix brown sugar, mustard, and soy sauce together in a bowl. Measure 1/4 cup marinade for basting and transfer to a small bowl; cover and refrigerate.
- Place wings in a large resealable bag. Pour remaining marinade over wings, coating well. Seal and marinate wings at least 2 hours and up to overnight.
- Preheat oven to 375 degrees F (190 degrees C).

- Preheat oven to 350 degrees.
- Spray a disposable aluminum cookie sheet that has 1/2 - 1 inch sides with non-stick spray; set aside.
- Combine all above ingredients except chicken to make hot sauce marinade and blend well.
- Dip chicken pieces in hot wing sauce and coat evenly. Place chicken pieces in an even layer on disposable cookie sheet. Pour remaining hot sauce evenly over chicken pieces.

BAKED BUFFALO WINGS
These easy to make hot wings are crispy without being fried. Always yummy to snack on. They only take 10 minutes for prep, but need to be refrigerated for about an hour so the flour coating is firm. You can add more cayenne or use a higher hot sauce to butter ratio if you like them spicier! Enjoy.

- Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.

Steps:
- Preheat a grill to medium-high.
- Season the wings with Cajun pepper. In a medium bowl, combine the chipotle pepper sauce with 1 tablespoon Cajun pepper, and honey, to taste. Place the wings on the grill and as you cook them, turn them and brush each time with the pepper sauce mixture. Make sure the wings cook long enough on each side so they get crispy around the edges.
- Remove the wings from the grill and brush again with the pepper sauce mixture before serving.

- Cut off wing tips. I save them for stewing later for chicken broth. You can cut the wings into half then if you want. Fry wings in hot oil. No seasoning, no batter, no dredging. Fry until crispy and done.
- Meanwhile, take Funyuns and put in large zip lock bag and crush with rolling pin. I approximated 8 oz. bag. They have 99 cent bags and then BIG bags. You might like to munch on the Funyuns with the wings.
- When wings are done, dump on paper towel lined pan for just a few seconds. Place fried wings into bag with crushed Funyuns. Shake to coat well. Remove and serve. Even good cold.

NASHVILLE-STYLE HOT WINGS RECIPE BY TASTY

- Combine all master spice mix ingredients and separate into three equal portions.
- In a large bowl combine chicken wings, ⅓ master spice mix, the buttermilk. Cover and chill for as long as possible (4 hours to overnight).
- Rinse the brined wing pieces and pat dry.
- Mix the flour with another ⅓ of the master spice mix.
- Dredge the chicken wing pieces in the flour/spice mixture. Shake off any excess. Set aside.
- Heat your oil to 325˚F (170˚C).
- Fry the wings for 8-10 minutes, until the internal temperature reaches 165˚F (74˚C). The wings will splatter so its a good idea to have a lid nearby!
- Take the wings out and drain on a paper bag or paper towels.
- Place the lard in a saucepan and sprinkle over the last ⅓ of your master spice mix. Once the lard is melted and warm, stir the mixture, and take it off the heat. Immediately baste your fried wings with the lard/spice mix and serve right away!

- Put the chicken wings, buttermilk and 1/2 tsp salt in a bowl and toss together to coat. Cover and leave in the fridge overnight.
- Heat oven to 200C/180C fan/ gas 6. Put all the ingredients for the spice mix in another large mixing bowl with a pinch of salt and mix well. Remove the wings from the fridge and, one at a time, roll them in the spice mix. Once fully coated, tip onto a baking tray lined with baking parchment, and roast for 35 mins. Meanwhile, mix the ingredients for the glaze together.
- Once the wings have browned, remove them from the oven and generously brush with the glaze. This is MY recipe and method for preparing hot wings for a party! Prep and clean up is a breeze! I always get RAVE reviews! Especially from the clean up crew! lol I have changed this recipe to include instructions on fresh OR frozen wings. Please let me know what you think. Update: This weekend made these again! Seasoned with garlic powder and cajun seasoning and grilled them starting with a preheated grill set to high. Oiled grill racks and seared each side of the chicken, then cooked over low to perfectly done and brown, crispy perfection. Removed from grill and tossed in sauce! Again, no messy pan to clean! :)

- IF USING FROZEN WINGS: I buy IQF - individually quick frozen- chicken wings that come in a bag and have already been separated into two sections and tips removed. If using FROZEN wings DO NOT THAW just rinse chicken in a large strainer to remove any ice crystals.
- IF USING FRESH/THAWED NOT FROZEN WINGS: Rinse chicken wings and follow directions starting at #3) BUT you may need to reduce your cooking time. I have not done them this way so I dont know how long they will take. Please watch them so they dont burn and do let me know how long they take to cook. Thanks!
- Pat wings dry with some paper towels. They do not have to be perfectly dry-just get most of the water off.
- Place wings in a large disposable foil roasting pan that has been sprayed or oiled well. I also take some foil and very loosely crumple it into balls and fill the pan so the wings can sit on the top of those and everything can drain off.
- Season wings with cajun seasoning and garlic powder. Toss to coat.
- Bake at 375°F until browned -about 30-40 minutes, using tongs flip each wing piece so that the browned side is down. Bake another 30 minutes or until chicken is browned and crispy all over. If you prefer them nice and crispy make sure to use a pan with a rack so that any liquid and grease can drain off.
- Sauce: In microwave safe bowl, combine hot sauce, butter, vinegar and more garlic powder if desired.
- Heat for about 2 minutes of until butter is melted and sauce is hot.
- To Serve: Depending on the formailty of your party- lol- if you are having hot wings it isnt too formal is it?- you can serve directly from the foil pan OR place wings on a platter.
- I like my wings to stay crispy after they are drenched in the sauce SO I serve them with the sauce on the side and allow guests to place the wings in a bowl and add sauce as desired. Some have them swimming and others- like me- dip each wing just before it is eaten. The crispiest!
- Update: This weekend made these again! Seasoned with garlic powder and cajun seasoning and grilled them starting with a preheated grill set to high. Oiled grill racks and seared each side of the chicken, then cooked over low to perfectly done and brown, crispy perfection. Removed from grill and tossed in sauce! Again, no messy pan to clean! :).
