CRANBERRY FRENCH TOAST

Steps:
- Slice challah bread into thick pieces. Combine cream cheese, sugar, fresh cranberries together. Cut a pocket into the bread and stuff cream cheese mixture inside. Melt butter over medium heat in a saucepan. Beat eggs and milk together in a large bowl. Dip stuffed bread into egg mixture, coating both sides. Place bread in pan, heat 1 to 2 minutes on each side.
BRIE WITH ALMONDS AND HONEY
Steps:
- Preheat oven to 350 degrees. Place brie in a baking dish. Drizzle with honey and sprinkle With toasted almonds. Bake for 10 minutes. Serve with thick slices of French bread.
FRENCH TOAST WITH PEARS, BRIE, AND CINNAMON
A delicious twist on french toast that can be made-ahead and chilled for up to 24 hours. Great for brunch, holidays, and special occasions.

Steps:
- Grease a 9x13 baking dish; set aside. In a large skillet cook pears, brown sugar, and rosemary in 2 T butter over medium heat for 4-5 mins or until pears are tender.
- Arrange 7 or 8 bread slices in a single layer in prepared dish. Spoon pear mixture and arrange Brie on bread slices. Top each stack with a bread slice. Brush bread with melted butter.
- Combine sugar and cinnamon. Sprinkle evenly over bread. In a medium bowl whisk together milk, eggs, vanilla, and salt. Slowly pour over bread slices. Cover and chill for 1-24 hours.
- Preheat oven to 375°F Bake, uncovered, for 40-45 mins or until edges are puffed and golden. Let stand for 10 minutes. Serve warm with maple syrup, berries, and honey, or cranberry conserve.

EASY HONEY CRANBERRY FRENCH TOAST WITH BRIE
This recipe came from a booklet from the Dairy Farmers of Canada. It's easy and impressive. If you don't have Brie cheese on hand, the following may be used for a change of taste: Havarti, Mozzarella. Cheddar or Gouda.

Steps:
- In saucepan, melt butter and cook cranberries over medium heat. Add honey and continue cooking until cranberries are soft and honey has thickened, about 3 minutes.
- Meanwhile in a wide, shallow dish, beat eggs with sugar, milk and vanilla.
- Melt butter in 2 large non-stick pans to coat pans.
- Dip each slice of bread into egg mixture, several seconds per side. Bread should be well-coated but not saturated. Cook immediately, 3 - 5 minutes per side, depending on thickness and desired level of doneness.
- Arrange as follows on 4 serving plates; honey-cranberry sauce on plate then 1 slice french toast, top with sliced brie and cranberries, another piece of french toast, top with honey cranberries plus an artfully placed wedge of brie and a nice drizzle of sauce.
- Serve with warm honey if desired.
- NOTE: French toast may be prepared ahead and reheated in oven. Honey Cranberries may be served cold or re-heated in microwave oven. Also, Honey Cranberries may be frozen and thawed.

- Arrange half the bread in a single layer in a greased 13x9-in. baking dish; top with cream cheese and spoonfuls of cranberry sauce. Top with remaining bread., In a large bowl, whisk eggs, milk, 1/3 cup syrup, cinnamon and nutmeg until blended. Pour over casserole. Refrigerate, covered, overnight., Remove casserole from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in center comes out clean, 50-60 minutes. Let stand 10 minutes before serving. If desired, serve with additional maple syrup.

- In a small saucepan, combine the cranberries, vinegar, cranberry sauce and sugar. Cook and stir over medium heat until thickened, about 12 minutes., Brush bottoms of bread with butter; place on ungreased baking sheets. Bake at 350° for 1-2 minutes or until lightly toasted. Top bread with Brie. Bake for 4-6 minutes or until cheese is melted. Spoon cranberry mixture over cheese, about 1 tablespoon on each.
