Easy Homemade Soft Pretzel Bites image

Skip the freezer aisle in favor of a top-rated recipe for Easy Homemade Soft Pretzel Bites that yields perfectly chewy, pillowy soft nuggets.

Provided by Kelly Senyei

Time 2h15m

Number Of Ingredients 10

1 1/2 cups warm (110-115°F) water
1 Tablespoon sugar
2 teaspoons kosher salt, plus more for topping
1 (1/4-ounce) package active dry yeast
4 1/2 cups all-purpose flour
4 Tablespoons unsalted butter, melted
Vegetable oil
10 cups water
2/3 cup baking soda
1 large egg yolk beaten with 1 Tablespoon water

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the water, sugar and kosher salt. Sprinkle the yeast on top and allow it to sit for 5 minutes.
  • Add the flour and butter to the bowl and mix on low until the ingredients are combined.
  • Increase the speed to medium and knead the dough until it is smooth and pulls away from the side of the bowl, about 3 minutes.
  • Remove the dough from the bowl. Clean the bowl, grease it with vegetable oil and return the dough to the bowl. Cover the bowl with plastic wrap and place it in a warm, dark place until it has doubled in size, about 1 hour.
  • Preheat the oven to 450°F and position the oven racks in the middle two positions in your oven.
  • Line two baking sheets with parchment paper then lightly oil the paper.
  • In a large, heavy-bottomed stock pot, stir together the 10 cups of water and the baking soda then bring the mixture to a rolling boil.
  • Turn the dough onto your work surface and divide it into 6 pieces. (Do not flour your work surface.)
  • Roll each piece into a rope roughly 1-inch in diameter then cut each rope into 1-inch pieces to form the pretzel bites.
  • In batches, add the bites to the boiling baking soda mixture for 30 seconds then use a slotted spoon to remove them onto the oiled baking sheets.
  • Brush the bites with the egg wash and sprinkle them with kosher salt.
  • Bake the bites until golden brown in color, 10 to 12 minutes, rotating the pans (between racks and turning to rotate pans) halfway through.
  • Remove the soft pretzel bites from the oven and serve.

EASY HOMEMADE SOFT PRETZELS

Easy Homemade Soft Pretzels image

This is one of the easiest ways to prepare homemade soft pretzels and the results are extra delicious! The dough is a family recipe and only needs to rest for 10 minutes before shaping. The quick baking soda boil gives the pretzels their traditional flavor. Make sure you watch the video for how to shape pretzels!

Provided by Sally

Categories     Snacks

Time 40m

Number Of Ingredients 9

1 and 1/2 cups (360ml) warm water (lukewarm- no need to take temperature but around 100°F (38°C) is great)
2 and 1/4 teaspoons (7g) instant or active dry yeast (1 standard packet)
1 teaspoon salt
1 Tablespoon brown sugar or granulated sugar
1 Tablespoon unsalted butter, melted and slightly cool
3 and 3/4-4 cups (469-500g) all-purpose flour (spoon & leveled), plus more for hands and work surface
coarse salt or coarse sea salt for sprinkling
1/2 cup (120g) baking soda
9 cups (2,160ml) water

Steps:

  • Whisk the yeast into warm water. Allow to sit for 1 minute. Whisk in salt, brown sugar, and melted butter. Slowly add 3 cups of flour, 1 cup at a time. Mix with a wooden spoon (or dough hook attached to stand mixer) until dough is thick. Add 3/4 cup more flour until the dough is no longer sticky. If it is still sticky, add 1/4 - 1/2 cup more, as needed. Poke the dough with your finger - if it bounces back, it is ready to knead.
  • Turn the dough out onto a floured surface. Knead the dough for 3 minutes and shape into a ball. Cover lightly with a towel and allow to rest for 10 minutes. (Meanwhile, I like to get the water + baking soda boiling as instructed in step 6.)
  • Preheat oven to 400°F (204°C). Line 2 baking sheets with parchment paper or silicone baking mats. Silicone baking mats are highly recommended over parchment paper. If using parchment paper, lightly spray with nonstick spray or grease with butter. Set aside.
  • With a sharp knife or pizza cutter, cut dough into 1/3 cup sections.
  • Roll the dough into a 20-22 inch rope. Form a circle with the dough by bringing the two ends together at the top of the circle. Twist the ends together. Bring the twisted ends back down towards yourself and press them down to form a pretzel shape.
  • Bring baking soda and 9 cups of water to a boil in a large pot. Drop 1-2 pretzels into the boiling water for 20-30 seconds. Any more than that and your pretzels will have a metallic taste. Using a slotted spatula, lift the pretzel out of the water and allow as much of the excess water to drip off. Place pretzel onto prepared baking sheet. Sprinkle each with coarse sea salt. Repeat with remaining pretzels. If desired, you can cover and refrigerate the boiled/unbaked pretzels for up to 24 hours before baking in step 7.
  • Bake for 12-15 minutes or until golden brown.
  • Remove from the oven and serve warm with spicy nacho cheese sauce.
  • Cover and store leftover pretzels at room temperature for up to 3 days. They lose a little softness over time. To reheat, microwave for a few seconds or bake in a 350°F (177°C) for 5 minutes.

HOMEMADE SOFT PRETZELS

Homemade soft pretzels image

Edd Kimber demonstrates how to make perfect pretzels with a chewy crust and soft, fluffy interior. Mix honey and mustard for a fantastic dip to go with them

Provided by Edd Kimber

Categories     Brunch, Snack, Treat

Time 25m

Number Of Ingredients 9

500g strong white bread flour
7g sachet fast-action dried yeast
25g dark brown muscovado sugar
50g unsalted butter, melted
plain flour, for dusting
oil, for greasing
3 tbsp bicarbonate of soda, baked (see below)
1 large egg, lightly beaten, for glazing
flaked sea salt, to serve

Steps:

  • Put the flour, yeast, sugar and 1 tsp salt in a large bowl and mix together to combine. In a large jug, mix together 300ml lukewarm water and the butter. Make a well in the flour mixture and pour in the water, mixing together to form a rough dough.
  • Tip out onto a floured work surface and knead for 10-15 mins or until smooth and elastic. Put the dough in a lightly oiled bowl, cover with oiled cling film and set aside until doubled in size, about 1hr.
  • Once risen, knock out the air bubbles in the dough and divide into 8 equal pieces. Using your hands, roll each piece into a long rope about 60cm long.
  • To form into pretzels, lay the rope in a U-shape with the curve pointing towards you. Take the two ends and cross them over.
  • Take the ends, lift them backwards and press them into the curve of the U-shape. Repeat with the remaining dough. Heat oven to 200C/180C fan/gas 6.
  • Carefully place the pretzels on a baking tray lined with parchment and lightly greased with oil. Cover lightly with oiled cling film. Set aside for about 20 mins until puffy (not fully risen like bread dough).
  • Fill a medium-sized saucepan with water, bring to the boil, add the baked bicarbonate of soda, then reduce the heat to a low simmer. One at a time, carefully lift the pretzels into the pan and cook for 20 secs per side. The pretzels will rise to the surface; flip with a slotted spoon.
  • Use the spoon to gently lift the pretzels from the pan and return them to the baking tray. Once they have all been cooked in the water, lightly brush with the egg and sprinkle with flaked sea salt.
  • Bake in the oven for 20-25 mins or until a rich, dark brown. Allow to cool on the baking tray for 10 mins, then transfer to a wire rack to cool completely. Best served on the day made but can be frozen for up to 1 month.

I like to make these...I am not usually very good with doughs but for some reason I can handle this one.

Provided by Love.to.cook

Number Of Ingredients 8

1 tablespoon active dry yeast
1 1/3 cups warm water

  • With a wooden spoon, gradually stir in sugar, salt and 3 1/2 cups of flour until a soft and slightly sticky dough forms.
  • Turn dough onto a well-floured board. To knead fold the dough towards you;with the heels of your hands push the dough away with short rocking motions.Rotate the dough a quarter turn and repeat motion.Continue kneading and turning for about 5-7 minutes, adding another 1/2 cup or more of flour as necessary, until the dough is smooth and elastic. The dough should not stick to your hands or the board.
  • Cut the dough in half and then cut each half into six equal-sized pieces. With floured hands, roll one piece of dough between the palms of your hands to form a dough rope.Continue rolling and stretching the dough rope until it is 15 inches long.Place the rope on a baking sheet.Cross the left side of the rope over to the middle to create a loop. Then fold the right side of the rope over the left to create a pretzel shape.

2/3 cup baking soda
1 large egg yolk beaten with 1 tablespoon water
Pretzel salt

  • Combine the water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Place onto the parchment-lined half sheet pan.
  • Place the pretzels into the boiling water, 1 by 1, for 30 seconds. Remove them from the water using a large flat spatula. Return to the half sheet pan, brush the top of each pretzel with the beaten egg yolk and water mixture and sprinkle with the pretzel salt. • Preheat oven to 425°F (218°C). Line baking sheet with a silicone baking mat or parchment paper. The pretzels can stick to parchment, so give it a light spray with nonstick spray or lightly grease with butter. Set aside.
  • Dissolve yeast in warm water. Stir with a spoon until fairly mixed, about 1 minute. Some clusters of yeast will remain. Add salt and sugar; stir until fairly combined. Slowly add 3 cups of flour, 1 cup at a time. Mix with a wooden spoon until dough is thick. Add 3/4 cup more flour until the dough is no longer sticky. If it is still sticky, add up to 1/2 cup more. Poke the dough with your finger – if it bounces back, it is ready to knead.
  • Turn the dough out onto a floured surface. Knead the dough for about 3 minutes and shape into a ball. With a sharp knife, cut ball of dough into 1/3 cup sections. This measurement does not have to be exact – use as much or little dough for each pretzel as you wish – the size of the pretzel is completely up to you.
  • Roll the dough into a rope with an even diameter. My ropes were twenty inches long. This measurement will depend how large you want the pretzels. Once you have your long rope, take the ends and draw them together so the dough forms a circle. Twist the ends, then bring them towards yourself and press them down into a pretzel shape. See above for link to visual instructions.

  • Place the 1 cup warm water in the bowl of your stand mixer. Sprinkle the top of the water with the yeast packet. Let it dissolve for about 2 minutes. Once dissolved, add in the softened butter, brown sugar, salt, and 2 cups of the flour. Using a dough hook attachment, mix on medium-low speed until a sticky dough comes together and dough is smooth. Stir in any remaining flour, 1/4 cup at a time, until dough begins to pull away from the sides of the bowl and when touched with a finger, does not stick and springs back lightly when touched. Place in a lightly greased bowl and cover with a tea towel. Let rise in a warm place for 20 minutes.
  • Preheat oven to 450°F. Line 2 baking sheets with silicone liners or parchment paper. GREASE whatever liner you use - trust me on this! I just spread a stick of butter around the parchment paper to make sure it is greased well.
  • Punch the dough down a couple times to break up any air pockets. Divide the dough into 8 equal pieces. The best way to do this is to cut in half with a pizza cutter, then cut each half into fourths. Using your palms and the heels of your hands, roll each piece into a 12-15" long rope on a clean work surface - do NOT flour your work surface, as this will prevent the stretch of your dough. Shape the rope into a circle with about 2-3" inch of each end overlapping (think the shape of a breast cancer awareness ribbon). Twist the ends where they overlap, then flip the twisted ends over the circle, pinching the ends into the circle to form a pretzel shape.
  • In a large saucepan, bring the 4 cups water to a boil over medium heat. Add in the baking soda; mixture will bubble violently for a minute. Drop a pretzel into the boiling water using a slotted spatula. Let boil for about 30 seconds, then gently remove with the spatula, allowing excess water to drip off. Place on the greased baking sheets and shape back to pretzel shape if needed. Sprinkle with coarse sea salt, if using. Repeat with remaining pretzels.
