1/4 cup sweet pickle relish

  • In a food processor or mini chopper grind ham to desired consistency. In a medium bowl combine all ingredients, place into a covered container to chill. Serve on a split bun. Garnish with lettuce, bread and butter pickles, and mayonnaise.

Steps:

  • Gather the ingredients.
  • Chop the ham finely and put it in a bowl. Add the finely diced celery, grated onion, mayonnaise, and mustard. Mix until well blended. Add more mayonnaise, to moisten, if desired. Taste and add salt and pepper, as needed.
  • Arrange the bread slices-toasted or not-on the work surface.

1 1/2 tablespoons gherkin pickles (chopped)

1/2 teaspoon ground black pepper

Steps:

  • Place ham slices into a pot add 1 tablespoon of brown sugar. Add enough water to just cover the ham. Simmer for about 20 minutes.
  • Remove ham from water, and allow to cool.
  • In a food processor process the ham mixture by adding ham slices, red onion, gherkin pickles, pickle juice, mayonnaise to the food processor. Pulse several times. Taste, and season with salt and pepper. Place in a large bowl.

I'm not so great at baking whole hams, but I love when my Mom sends me leftover ham that she has cooked. Hubby loves ham salad sandwiches, and whenever we get ham, his first question is always "Are you going to make that ham salad?" It's just been a matter of experimentation to come up with it. It's quick and easy, with common ingredients. Hope you enjoy it as we do. I'm not really sure how many sandwiches this makes--enough for a couple of days for our small family. Let me know if the servings are off. (And I guess it depends on how thick you like your sandwiches.) Can be served on any type of bread, but I have found rye really complements ham salad.
