3 tablespoons butter
1 small onion, finely chopped
1/2 green bell pepper, finely chopped
2 medium potatoes, peeled
1 cup finely diced cooked ham
1/4 teaspoon salt, or to taste
1/8 teaspoon ground black pepper
1/4 teaspoon dried crumbled thyme

Steps:

  • Partially cook the potatoes, then dice: Cut the potatoes in half and cook in a saucepan of simmering water until not quite done and still firm, about 10 minutes. Rinse in cold water to stop cooking. Drain. Dice to 1/2-inch thick pieces. Set aside.
  • Cook the onion and bell pepper in butter: Melt butter in a large cast-iron skillet over medium-low to medium heat. Add onion and cook until softened, about 4 minutes. Add the chopped bell pepper and cook another 2 minutes.
  • Add the potatoes, ham, salt, pepper, and thyme: Add the remaining ingredients; mix well. Cook hash until well browned, about 10 minutes, stirring occasionally.

6 potatoes, peeled and cubed
1 onion, diced
1/2 cup ham, shredded
1 -2 tablespoon olive oil
1 tablespoon butter
1/2 cup cheddar cheese, shredded
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon onion salt
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon cajun seasoning

Steps:

  • Heat oil in large skillet over medium-high heat until sizzling.
  • Add cubed potatoes and the last six ingredients to pan.
  • Fry potatoes until golden brown and fork tender, stirring occasionally.
  • Then add the butter and diced onion. Mix.
  • When the onion has softened slightly, add the ham to the pan and mix again to combine.
  • Once heated through sprinkle the cheese over hash.
  • Serve when cheese has melted.

1 teaspoon prepared horseradish
1/4 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese

  • In a large bowl, combine ham and onion. Shred potatoes and add to ham mixture. Stir in the butter, Parmesan cheese, mustard, Worcestershire sauce, horseradish and pepper. , Spoon into a greased 11x7-in. baking dish, pressing down firmly. Combine cheeses; sprinkle over top. Bake, uncovered, at 350° for 35-40 minutes or until bubbly and cheese is melted.
