Claire Robinson's cookies only use a few ingredients but the last one, sea salt, is key as it gives them their addictive salty finish. Since the cookies are flourless, they're very tender, so let them cool awhile on the pan before moving them.

1 cup natural peanut butter
1 cup sugar
1 teaspoon pure vanilla extract
1 large egg, lightly beaten
Coarse sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven.
  • In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
  • Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.

Gluten Free Peanut Butter Cookies: the best delicious and easy gluten free peanut butter cookies-bursting with sweet 'n rich peanut butter flavor!

1 ¼ cups gluten free oat flour (or learn how to make homemade oat flour)
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾ cup unsalted, natural creamy peanut butter
3 tablespoons melted coconut oil
½ cup coconut sugar
¼ cup pure maple syrup
2 flax eggs (whisk together 2 tablespoons golden ground flaxseed + 6 tablespoons water, set for 15 mins) or eggs of choice
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a large bowl, whisk together all of the dry ingredients: gf oat flour, baking powder, baking soda and salt.
  • In a medium bowl, whisk together all of the wet ingredients: peanut butter, oil, sugar, maple syrup, flax eggs and vanilla. Whisk until well mixed.
  • Pour the wet mixture over the dry mixture. Whisk thoroughly, as long as you can, until thickened and cohesive. Using a rubber spatula, fold until no flour patches remain.
  • Using a medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet. Using a fork, press down slightly to flatten cookies. Turn the fork and press down on the cookie to create a crisscross pattern on top.
  • Bake for 10-14 minutes. Mine took 11 minutes. Transfer cookie sheet to cooling rack. Allow cookies to cool on cookie sheet for 10 minutes. If desired, transfer cookies directly onto the cooling rack to cool completely. Enjoy! Storing notes below.

1 (15 ounce) package yellow gluten-free cake mix
2/3 cup creamy peanut butter
6 tablespoons margarine or 6 tablespoons butter
1 large egg
2 tablespoons milk
2 tablespoons vanilla extract
granulated sugar

Steps:

  • Mix all the ingredients, except the sugar together in a mixer until incorporated.
  • Place the sugar in a shallow bowl.
  • Form 1 inch balls with the dough and roll each one in the sugar. Arrange them on a cookie sheet, pressing with a fork to make a pattern if desired.
  • Bake at 375 for 10-12 minutes. Enjoy!

1 1/3 cups white sugar
2 eggs
2 teaspoons baking soda
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line cookie sheets with parchment paper or use a Silpat liner for best results.
  • In a medium bowl, stir peanut butter and sugar together until smooth.
  • Beat in the eggs, one at a time.
  • Stir in the baking soda, salt, and vanilla.
  • Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets.
  • Press a criss-cross into the top using the back of a fork.
  • Bake for 8 to 10 minutes in the preheated oven.
  • Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
  • Store in an airtight container.
  • They will get chewier with time, if they last that long!

I found this GF peanut butter cookie recipe on a few sites, but I made a few modifications and added some extra goodies to make these similar to my mother's Peanut Butter Kisses cookies she made at Christmas time.

1/2 cup light brown sugar
1/2 cup sugar
1 tablespoon vanilla
1 egg
1 cup peanut butter (about, usually a bit less)
chocolate chips (optional, but so good!) (optional)
cinnamon-sugar mixture, to be used later (I just eyeball this part, need enough to roll in the dough)

Steps:

  • - Preheat oven to 350 degrees.
  • - Grease a baking sheet.
  • - Mix both sugars, vanilla, egg and peanut butter in a large bowl (using a large wooden spoon works, some recipes call for a hand mixer).
  • - Once smooth roll into small balls (about the size of a dollar coin)
  • - Roll the balls in the cinnamon/sugar mixture and place on the cookie sheet leaving space for them to expand.
  • - Place the completed cookie sheet in the oven for 8-11 minutes.
  • - Take the cookie sheet out and promptly place a few chocolate chips (morsels or whatever you have) in the center of the cookie while they are still hot and soft.
  • - Let the cookies cool on the cookie sheet for another 2-3 minutes and then remove.

Steps:

  • Preheat oven to 375.
  • Make sure you have beaters that can handle thick batter.
  • In a medium bowl, cream margarine and sugars.
  • Beat in egg and peanut butter.
  • In a separate bowl, mix flours and baking soda evenly.
  • Add in two parts to wet ingredients, beating on med-high speed until thoroughly blended.
  • Roll dough into 1-inch balls, and place 2 inches apart onto ungreased baking sheet.
  • You can press them with a fork if desired, but not necessary.
  • Bake 8-10 minutes.

1 cup reduced-fat creamy peanut butter
1/2 cup unsweetened applesauce
1/2 cup egg substitute
2 tablespoons water (or less)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour the cake mix into a large bowl. Make a well in the center, and add peanut butter, applesauce, egg substitute Mix until well blended if necessary add water. Dough should be stiff.
  • Drop by teaspoonfuls onto ungreased cookie sheets. Flatten slightly using a fork dipped in water.

1 (18 ounce) box yellow cake mix
1 cup peanut butter (creamy or chunky. JIF brand is good)
1/4 cup vegetable oil
3 tablespoons water
2 eggs

Steps:

  • Turn oven on to 350°F.
  • Wash your hands.
  • Dump all ingredients into a bowl.
  • Get mixer out and mix it until it is mixed up good. It will look kinda grainy, but feel oily.
  • If you haven't washed your hands yet, now would be a good time to do it.
  • After it is mixed up good,grab enough out to make about a 1 inch ball in your hand and roll it around in your hand like you did with Play-Doh when you were a kid.
  • Place the balls about 2 inches apart on an ungreased cookie sheet.
  • Get a fork and use the tines to make a criss cross pattern on each ball by gently pressing down on the ball 2 times. Once for each direction.
  • Place in oven and bake for 8~12 minutes.
  • Remember that the shorter the baking time, the softer the cookie. 8 minutes would be the minimum though (unless you have a one of those fancy convection ovens).
