These melt-in-your-mouth morsels are dainty dynamos. Making the fudge-a mix of marshmallows, chocolate, and milk-is literally a flash in a pan. Then, simply form them into balls and roll in snazzy toppings like freeze-dried raspberries, pistachios, toasted walnuts, and peppermints.

Vegetable-oil cooking spray, for pan
4 tablespoons unsalted butter
3 packed cups mini marshmallows, or cut-up regular marshmallows (6 ounces)
1 1/2 cups sugar
1/2 cup whole milk
1/4 teaspoon kosher salt
1 teaspoon pure vanilla extract
12 ounces bittersweet chocolate, coarsely chopped
1 cup pulverized peppermint candies; or finely chopped toasted walnuts; or finely chopped pistachios; or ground freeze-dried raspberries (or a combination of all four)

Steps:

  • Lightly spray a 9-by-9-inch cake pan with cooking spray. Line with 2 crisscrossed pieces of parchment, leaving a 2-inch overhang. Spray parchment. In a saucepan, combine butter, marshmallows, sugar, milk, and salt.
  • Cook over medium-high heat, stirring frequently, until marshmallows have melted, 6 to 7 minutes. Stir in vanilla. Remove from heat; stir in chocolate until melted. Pour mixture into prepared pan. Let cool 30 minutes, then refrigerate until set, at least 1 hour and up to 3 days.
  • Using overhang, lift fudge onto a cutting board; cut into 1-inch squares. With rubber-gloved hands, to prevent fudge from becoming too slippery and messy, roll into balls (if mixture is very cold, it may crumble a bit; just let it warm slightly first), then roll in desired toppings as you go. Refrigerate until firm, 1 hour. (To make ahead, place balls in a single layer on a parchment-lined baking sheet, wrap in plastic wrap, and refrigerate up to 3 days.)

⅓ cup water
1 (3.9 ounce) package JELL-O Chocolate Instant Pudding
3 cups powdered sugar
6 tablespoons multi-colored sprinkles

Steps:

  • Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave first 4 ingredients in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted.
  • Add dry pudding mix; stir with whisk 2 min. Add powdered sugar, 1 cup at a time, stirring after each addition until blended; press onto bottom of prepared pan. Top with sprinkles; press into fudge to secure.
  • Refrigerate 2 hours or until firm. Use foil handles to lift fudge from pan before cutting into pieces.

Nonstick cooking spray
1 1/2 cups semisweet chocolate chips
7 ounces sweetened condensed milk (half a 14-ounce can)
2 tablespoons unsalted butter
Pinch kosher salt
1/2 cup walnuts, toasted and finely chopped
1/2 teaspoon pure vanilla extract
One 16.5-ounce package ready-to-bake sugar cookie dough
All-purpose flour, for dusting
Store-bought royal icing
1 to 2 drops gel food color (any color you like)
Candied violets (see Cook's Note)

Steps:

  • For the fudge: Spray a 9-by-9-inch baking dish with cooking spray and line with parchment paper, leaving an overhang on two opposite sides so the fudge can be easily removed.
  • In a medium saucepan, combine the chocolate chips, sweetened condensed milk, butter and salt. Bring to just short of boiling over medium heat, until the mixture is loose and the chocolate chips are melted, 3 to 5 minutes. Remove from the heat and stir in the walnuts and vanilla using a wooden spoon.
  • Pour the hot mixture into the prepared baking dish and refrigerate until cool and set, about 2 hours. Then, using a 1-inch square cookie cutter, cut the fudge into cubes.
  • For the cookies: Meanwhile, preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Remove the cookie dough from its packaging and transfer to a lightly floured surface; roll to 1/4 inch thick. Transfer to the prepared baking sheet and parbake for 10 to 11 minutes.
  • Using the 1-inch square cookie cutter, cut the parbaked cookies and return to the prepared baking sheet. Bake the cookies until they are lightly golden around the edges, 5 to 6 minutes. If they have puffed up and lost their shape, use the same cookie cutter to punch out the cookies again while they are still warm, for cleaner edges. Transfer the cookies to a wire rack to cool.
  • For the assembly and decorations: In a medium bowl, combine the royal icing with gel food color and mix until completely incorporated. Transfer to a piping bag fitted with a round number 2 tip. Pipe a dab of the royal icing onto the center of each cookie and adhere a cube of fudge on top. Decorate each fudge bite with more royal icing then top with a candied violet. Transfer to a platter to serve.

If you like fudge and you like easy, this is the recipe for you! My grandma used to give this to us for Christmas served in circular tins, separated by wax paper. I prefer plain chocolate fudge, but have been known to insert some Andes mints in here or there. I went through a phase in high school where I made this almost bi-weekly.

3 tablespoons salted butter
12 ounces semi-sweet chocolate chips (I use Nestle)
1 (12 ounce) can sweetened condensed milk (I use Eagle brand)
1 teaspoon vanilla
10 chocolate-covered mint candies (I use Andes brand) (optional)

Steps:

  • Spray a large bread pan (or two small bread pans) with a non-stick spray. Also, prepare a double boiler by getting the water boiling. Also, this is a recipe which requires constant stirring, so have a spoon handy!
  • In the double boiler, add the butter, vanilla and sweetened condensed milk and melt together. Note: if you don't have a double boiler, create a makeshift one by boiling water in a pot and placing another similar-sized pot over it. It keeps you from burning the chocolate by providing an even heat source.
  • Once the mixture is blended and easy to stir, add the chocolate chips, stirring constantly.
  • Stir until the mixture is glossy and well blended with no chunks.
  • Pour into the prepared bread pan(s). If desired, insert Andes chocolate mints throughout the fudge by pushing it into the top. Let cool completely before serving. (Don't put into the refrigerator to cool either.) Enjoy!

This is a fun fudge to do with the kids, because of it's ease and rich/creamy flavor. Prep time does not include refrigeration.

1 (450 -500 g) can sweetened condensed milk
1 (300 g) bag chocolate chips
1 (100 g) chocolate candy bars
1/2-3/4 cup peanut butter (optional)
1 pinch salt
1 dash vanilla

Steps:

  • Melt condensed milk and chocolate in microwave (using microwave safe bowl) for about a minute and a half or until the milk is hot and watery and the chocolate chips are beginning to melt. DO NOT OVERHEAT (will burn chocolate and leave a clumpy/grainy mixture with a bad taste).
  • Take bowl out and stir until mixture is smooth and well blended.
  • Add peanut butter for peanut butter/chocolate fudge OR add salt and vanilla. Or add all three, depending on your tastes.
  • Stir until all is well mixed, smooth, even and shiny.
  • Pour mixture into an UNGREASED foil lined cake/brownie pan.
  • Put in fridge until mixture is hard (overnight is best).
  • Take out of fridge and cut into squares (or other desired shapes) and put into a Tupperware or other covered/airtight container.
  • Freeze if desired.
  • Or just EAT and ENJOY!
