FRENCH DIP-CROCK POT RECIPE
A really nice fireside supper for friends. Taste the Aus Jus first to make sure it's really "beefy" and add another bouillon packet if needed. Edit--if "heat bothers you" start with 1 teaspoon of black pepper.

Steps:
- Coat roast in flour and garlic salt. Braise the roast on all sides on pan prior to placing in crock pot.
- Place all ingredients in a crock pot.
- Cook on High for 5-6 hours or Low for 8-10.
- Remove the meat from the crock pot and place on a deep plate-to collect juices.
- Strain the broth well so that it is clear and no spices or onions remain. Add a few cups of water to create aus jus.
- Place in a saucepan and keep warm.
- Most people prefer to keep the broth as is but you can stir in a small amount of cornstarch mixed with cold water to thicken it up just a touch.
- (Remember to add the juices that drain off the meat).
- Heat Hoaggie buns to warm and slice the meat thin.
- Place a good amount of sliced meat in each of the buns and offer the Aus Jus in individual ramekins.
EASIEST SLOW COOKER FRENCH DIP

- Place the beef roast into a slow cooker. Stir together the water and au jus mix; pour over the roast. Cover and cook on Low for 6 to 8 hours.
- Remove the roast from the slow cooker and shred or slice. Open the hoagie rolls and top with beef and provolone cheese. Serve with small bowls of the hot au jus from the slow cooker.

- 1. Trim fat from roast. Put onions in the Crock Pot. Put roast in Crock Pot over the onions. Sprinkle with soup mix. Pour beer over top. Cook on low for about 8 hours.
- 2. Lift roast out of Crock Pot and shred meat.
- 3. Make sandwiches on hard roll or hoagie bun.
- 4. Juice makes an excellent dip.
- 5. Feel free to exchange the beer for low salt beef broth or beef stock. You may also enjoy cutting up an onion into onion rings and place on top of beef. When beef is done serve the roast with onion rings on the sub roll.

- Rinse the roast and sprinkle it with salt and pepper to taste. I often skip the salt, since the broth and soup mix are salty already.
- Put the roast into your crock pot, and pour the broth and coffee (if using) over the roast.
- Add the soup mix and garlic (if using)into the liquid and stir a bit. Don't worry about getting the soup mix to dissolve. The crock pot does all the work!
- Cook on Low for 8 to 10 hours, slice
- the meat, and serve hot on hoagie rolls with your favorite cheese (I prefer provolone or swiss). These are great with sauteed onions (can add bell pepper too). The broth makes delicious au jus for dipping your sandwiches.
SLOW COOKER FRENCH DIP
Don't like sweet peppers? In their place, try a sprig of rosemary for more flavor. I've not added salt for fear some would think it too salty, but my preference is to salt lightly. The roast and juices are perfect for a New Orleans-style "roast beef on French". Great for football parties, etc. Can be made ahead, frozen and rewarmed.

- In a large, shallow skillet over moderate heat, melt butter.
- Add shallots to butter and saute 2 minutes.
- Add flour to butter and shallot and cook a minute longer.
- Whisk in sherry and cook liquid out.
- Whisk in consomme in a slow stream.
- Bring sauce to a bubble and allow to simmer over low heat until ready to serve sandwiches.
- Pile meat loosely across your cutting board or a large work surface.
