SLOW COOKER SPANISH RICE
This Slow Cooker Spanish Rice is an easy and delicious side dish that's perfect for both the dog days of summer and the cold nights of winter!

Steps:
- Using a large skillet, add olive oil and place over medium heat. Once hot, add rice and diced onions; stir. Cook for 5-6 minutes, stirring often, or until rice has turned light brown in color.
- Spray a standard slow cooker with non-stick baking spray.
- Transfer the rice into the slow cooker and add broth, tomato sauce, diced tomatoes, garlic, bell peppers, chili powder, cumin and salt; stir until well combined.
- Cover and cook on high for 2½-3 hours, or until all of the liquid has been absorbed.
- Stir fresh cilantro into rice.
- Garnish with fresh lime wedges before serving.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until lightly browned and crumbly, 5 to 7 minutes. Drain and discard fat.
- Transfer beef to a slow cooker. Add tomatoes, tomato sauce, green bell peppers, water, onions, rice, Worcestershire sauce, chili powder, and hot sauce. Cook on High until rice is tender, about 3 hours. Serve in bowls and top with Cheddar cheese.

- While that is heating brown the ground beef and cook the bacon.
- When it begins to boil add the ground beef and bacon with bacon dripping.
