8 ounces semisweet Bakers chocolate chopped
2 (8-ounce) containers Cool Whip topping
Basic Chocolate Mousse:
1/2 cup of toasted coconut, slivered nuts, or crushed candy
Malted Chocolate Mousse:
1/3 cup malted milk powder
1/2 cup Whoppers candies, crushed
Chocolate Amaretto Mousse:
3 tablespoons amaretto liquor
1/2 cup slivered almonds,

Steps:

  • 1. Place chocolate in a large microwaveable bowl. Melt in microwave for 2 minutes, stirring every 30 seconds. Stir chocolate until smooth.
  • 2. Once chocolate cools, add 1 cup of Cool Whip to the chocolate, stirring quickly. Continue folding in the rest of the Cool Whip in 2 batches, until there are no visible streaks.
  • 3.Divide mousse into thirds.
  • Basic Chocolate Mousse:
  • Place one-third of the mousse into a medium-size zip-locking plastic bag, cut off one corner, and pipe mousse onto 6 spoons, about 1 tablespoon per spoon. Top with your favorite toping, such as toasted coconut, slivered nuts, or crushed candy.
  • For Malted Chocolate Mousse:
  • Fold malted milk powder into one-third of the mousse. Place mixture in a medium-size zip-locking plastic bag. Pipe onto 6 spoons and top with crushed whoppers.
  • For Chocolate Amaretto Mousse:
  • Fold Amaretto into one-third of the mousse. Place mixture in a medium-size zip-locking plastic bag. Pipe onto 6 spoons and top with toasted almond slivers.

4 large egg yolks
3 tablespoons granulated sugar
2 1/2 cups heavy cream
6 ounces good quality semisweet chocolate, chopped
1 teaspoon vanilla extract
Pinch kosher salt
2 tablespoons confectioners' sugar
8 chocolate covered almonds, roughly chopped

Steps:

  • Beat the egg yolks and granulated sugar in a medium bowl with an electric mixer on medium-high heat speed until thick and bright yellow.
  • Heat 1 cup cream in a medium saucepan until just at a simmer, then slowly whisk about half of the hot cream into the yolk-sugar mixture to temper it. Slowly add the remaining hot cream, then transfer the mixture back to the saucepan and cook, stirring, until thickened, about 5 minutes (do not boil).
  • Add the semisweet chocolate to a bowl and slowly pour the egg-sugar-cream mixture over it. Stir until the chocolate is smooth and melted, then add the vanilla and salt. Cover with plastic wrap and refrigerate until cold, about 2 hours.
  • Beat the the confectioners' sugar with the remaining 1 1/2 cups cream in a bowl with an electric mixer on medium-high speed until it just holds stiff peaks. Reserve 1/2 cup for garnish. Gently but thoroughly fold the remaining whipped cream into the chocolate mixture. Spoon the mousse into a piping bag, then pipe the mousse into 6 teacups. Dollop the reserved whipped cream on top and refrigerate until set, about 1 hour. Sprinkle with chopped chocolate covered almonds and serve.

2 tablespoons unsalted butter
2 large egg yolks
1 1/2 cups heavy cream
2 tablespoons superfine sugar
1 teaspoon vanilla extract

Steps:

  • In a microwave safe bowl, combine the chopped chocolate and the butter. Heat in the microwave until melted, about 35 seconds depending on your microwave, and stir to melt completely. Whisk in the egg yolks and set aside to cool.
  • Pour the cream into a chilled bowl of a mixer and beat on medium speed until it starts to thicken. Add the sugar and vanilla and whisk until the cream starts to form stiff peaks. Carefully fold the whipped cream into the cooled chocolate mixture. Serve immediately or cover and chill until ready to serve.

2 tbsp golden caster sugar
4 tbsp crème fraîche and grated chocolate, to serve

Steps:

  • Melt the chocolate in the microwave in a microwaveable bowl, stirring every 30 seconds until just melted. Whisk the egg whites to soft peaks, scatter in the sugar and whisk again until the mixture forms stiff peaks when you lift the whisk out (around 30 seconds).
  • Add a big tablespoon of the egg white to the melted chocolate and mix vigorously, working fast so the chocolate doesn't cool and harden. Then fold in the remaining egg whites carefully using a spatula or large metal spoon. Spoon into 4 glasses or ramekins and set in the fridge for 2-3 hours.   • Position knife blade in food processor bowl; add chocolate morsels, vanilla, and salt. Process 30 seconds.

Usually when I say my grandmother, I mean my maternal one, but this is one of the few recipes I have from my paternal grandmother. She died when I was a toddler but I sure do remember this mousse! It really is quite simple to make and is delicious and elegant served with fresh berries of any sort.

8 ounces semi-sweet chocolate chips (or bits, or mini chips, etc)
4 tablespoons hot water
4 eggs, beaten (I use the pasteurized ones since the eggs won't be cooked)
2 tablespoons Grand Marnier (to taste)
1 pint whipping cream, whipped very stiff with no sugar added

Steps:

  • Melt chocolate with hot water. To melt completely, it may be necessary to place the bowl in a pan of hot water.
  • Cool and then add beaten eggs.
  • Add Grand Marnier.
  • Carefully fold in whipped cream.
  • Chill and serve.
