4 boneless, skinless chicken breasts, cut in half, widthwise
salt, to taste
pepper, to taste
3 tablespoons oil, divided
1 lb portobello mushroom, diced
1 large white onion, diced
1 large red bell pepper, diced
4 cloves garlic, minced
2 teaspoons fresh rosemary, minced
14.5 oz diced tomato, 1 can
½ cup red wine
¾ cup low sodium chicken broth, or vegetable broth
fresh basil, chopped, to serve

Steps:

  • Season the chicken breasts on both sides with salt and pepper.
  • Heat 1 tablespoon of the oil in a large nonstick skillet over medium high heat.
  • Place 4 pieces of the chicken in the skillet and sear until until golden-brown, about 1-3 minutes on each side. Transfer the chicken to a plate and repeat searing with the remaining chicken pieces. Set aside.
  • Heat 1 tablespoon of oil in the empty skillet.
  • Add the mushrooms and stir occasionally until most of the moisture has evaporated from the pan, about 8 minutes.
  • Transfer the mushrooms to a plate and set aside.
  • Heat the remaining 1 tablespoon of oil in the pan.
  • Add the onions and bell peppers and season with salt and pepper. Stir occasionally until the onions and peppers have softened, about 2 minutes.
  • Add in the garlic and rosemary and stir until the garlic is fragrant.
  • Add in the tomatoes, red wine, and broth and stir until the sauce has thickened slightly.
  • Add the mushrooms and chicken back into the sauce and bring to a low simmer.
  • Cover and let cook until the chicken registers 165°F (74°C), about 5-8 minutes.
  • Serve topped with basil.

1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
1/4 cup all-purpose flour
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons butter
1 large onion, chopped
2 celery ribs, sliced
1 large green pepper, cut into strips
1/2 pound sliced fresh mushrooms
1 can (28 ounces) tomatoes, drained and chopped
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 cup dry red wine or water
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1 teaspoon dried oregano
1 teaspoon dried basil
3 garlic cloves, minced
1 tablespoon sugar
Hot cooked pasta
Grated Parmesan cheese

Steps:

  • Dust chicken with flour. Season with salt and pepper. In a large skillet, brown chicken on all sides in oil and butter over medium-high heat. Remove chicken to platter. , In the same skillet, cook and stir the onion, celery, pepper and mushrooms for 5 minutes. Stir in the tomatoes, tomato sauce, tomato paste, wine, herbs, garlic and sugar. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Return chicken to skillet. Cover and simmer for 45-60 minutes or until chicken is tender. Serve over pasta and sprinkle with Parmesan cheese. Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally.

1 ½ lb chicken thighs
3 tablespoons olive oil
8 oz mushroom, sliced
½ medium onion, sliced
1 red bell pepper, sliced
2 tablespoons tomato paste
4 cloves garlic, minced
1 teaspoon dried oregano
½ teaspoon crushed red pepper flake
½ teaspoon dried rosemary
½ cup red wine
14 oz canned diced tomato
1 cup chicken stock
¼ cup fresh parsley
salt, to taste

Steps:

  • Liberally season chicken thighs with salt and pepper.
  • In a 4-quart jumbo cooker, heat 1 tablespoon of olive oil over medium-high heat. Add chicken and cook 3-4 minutes a side, until lightly browned. Transfer to a plate.
  • Add another tablespoon of olive oil to the skillet before adding the mushrooms. Lightly season with salt and pepper, and cook until mushrooms begin to brown, about 5 minutes.
  • Once browned, remove mushrooms to the same dish with the reserved chicken thighs.
  • Add the final tablespoon of olive oil followed by the sliced onion and pepper. Season with salt and pepper, and cook over medium heat until they begin to brown, about 5-7 minutes.
  • Create a well in the middle of the onion-pepper mixture and add the tomato paste. Cook out the tomato paste for about 1 minute before mixing it together with the onions and peppers.
  • Add garlic, oregano, red pepper flakes, and rosemary. Mix them into the onion and peppers before adding the red wine. Use the moisture from the red wine to scrape off any stuck-on bits from the bottom of the pan.
  • Let wine reduce by half before adding the diced tomatoes and chicken stock. Return to a simmer.
  • Place chicken and mushrooms on top of the simmering sauce, being sure to also add any accumulated juices that may have collected. Sprinkle with chopped parsley.
  • Cook while covered for 12 minutes or until chicken's internal temperature reaches 165˚F (75˚C).
  • Serve chicken and sauce with a side of pasta or bread.

1 onion, diced
¼ cup all-purpose flour
½ teaspoon salt

8 chicken thighs
½ cup dry white wine
2 (14.5 ounce) cans diced tomatoes
2 teaspoons tomato paste
¼ teaspoon white sugar, or more to taste
salt and ground black pepper to taste
½ cup chicken broth, or more as needed
½ cup black olives, pitted
1 tablespoon chopped fresh parsley
1 tablespoon torn basil leaves

Steps:

  • Heat 2 tablespoons olive oil in a skillet over medium heat and cook onion, stirring often, until soft and translucent, about 5 minutes. Transfer to a pot.
  • Combine flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Toss chicken thighs in the flour mixture until evenly coated.
  • Heat remaining 2 tablespoons olive oil in the skillet over medium heat, add chicken thighs, and brown on one side, without turning, for 5 minutes. Turn and cook until browned on the other side, about 5 minutes more. Transfer browned chicken thighs to the pot.
  • Pour white wine into the skillet; bring to a boil. Stir to loosen all the browned bits of chicken and flavors in the skillet pour into the pot. I love to serve this with mashed potatoes, but it also goes great with rice or pasta. We like it just as is, but feel free to "spice it up" any way you wish.

¼ cup all-purpose flour
½ teaspoon salt, divided
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with cooking spray.
  • Mix together flour, 1/4 teaspoon salt, pepper, and garlic powder in a shallow bowl. Dredge chicken in the flour mixture, shaking off any excess.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until nicely browned, 4 to 5 minutes per side. Transfer chicken to the prepared baking dish.

1 teaspoon italian seasoning
1 teaspoon garlic powder
2 eggs, well beaten

I found this recipe on the back of a Del Monte Spaghetti Sauce can and it turned out delicious. The kids enjoyed theirs over spaghetti noodles while my DH and I ate it over brown rice. I also sprinkled some red pepper flakes on top of ours for an extra kick. It is very simple to make. Enjoy!

1 tablespoon oil
1/2 chopped onion (I added this-not included in recipe)

1/4 cup olive oil
1/2 sweet onion, peeled and cut into rings
8 garlic cloves, minced
1 (28 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1/2 cup dry red wine
1 teaspoon unbleached cane sugar
2 teaspoons garlic powder
2 teaspoons black pepper
3 tablespoons dried oregano

Steps:

  • Heat oven to 375 degrees.
  • Rinse and dry chicken pieces.
  • In a large skillet, heat the olive oil over medium high heat. Add chicken and sprinkle with half of the garlic, pepper and oregano as it browns in the hot oil. Brown both sides and transfer chicken to a 9″ x 13″ baking dish.
  • Peel and cut the onion into 1/2″ slices. Mince the garlic (*here is an easy way to clean and mince garlic: cut the tips off of the garlic clove; place clove on a cutting board and smash with the flat side of a knife. Peel should come off easily).
  • Add sliced onion and garlic in the hot oil and saute for 3 to 4 minutes until lightly browned. With a slotted spoon, remove from pan and arrange over chicken.
  • In a large bowl combine the tomatoes, tomato paste, wine, sugar, and the rest of the garlic, pepper and oregano. Blend well with a whisk.
  • Pour over the chicken and vegetables.

1 tablespoon olive oil
4 slices bacon, diced
1 medium onion, chopped
1 celery rib, coarsely chopped
2 carrots, coarsely chopped
1 (24 ounce) jar spaghetti sauce
2 tablespoons Worcestershire sauce
3 tablespoons balsamic vinegar
2 cups sliced mushrooms
garlic, minced
salt and pepper
1/4 cup spanish sliced black olives
1/4 cup parsley, chopped

Steps:

  • Chop bacon into small pieces and cook until crisp. Drain and set aside.
  • Saute onions and garlic until soft in leftover bacon grease, add mushrooms, carrots and celery until lightly browned, set aside.
  • Add more oil if required to hot non-stick pan and brown chicken on all sides being sure to season with salt and pepper.
  • Place chicken, veggies and bacon in a large stockpot with a lid.
  • Mix spaghetti sauce with Worcestershire sauce and balsamic vinegar. DO NOT be tempted to leave these 2 ingredients out, they are CRUCIAL to the taste! Pour over chicken and veggies ensuring everything is well coated.
  • Add olives and stir through.
  • Cover and simmer over medium low heat for 25-30 minutes, stirring occasionally.
  • This can also be baked covered in the oven for 35-40 min at 375.
  • Serve with hot crusty bread for dipping in the sauce and a crisp, tangy side salad.
