EASY SPAGHETTI AND MEATBALLS

Easy Spaghetti and Meatballs image

WHEN I was a teenager, I cooked dinner every night for our family of four...Mom, Dad, Grandmother, who lived next door, and myself. Through the years, I have modified and changed this recipe for two people to better fit our tastes. That's one of the great things about this dish. It's easy to do just that! -David Stierheim, Pittsburgh, Pennsylvania

EASY SPAGHETTI AND MEATBALLS

Easy Spaghetti and Meatballs image

This is a very tasty dish that I've had lots of compliments on, even tho I cheat and use jarred sauce (shhh)...I think the slow simmering of the flavorful meatballs really makes this taste homemade all the way!!! This makes a lot, so I usually use the leftovers to make meatball subs.

A great alternative to the basic Spaghetti Bolognese, that the whole family will love.

Provided by Kylie

Categories     Main Course

Time 1h

Number Of Ingredients 11

1 kg Minced Beef
2 Large Eggs
1 cup Grated Tasty Cheese
1 Large Onion
¼ cup Fresh Chopped Basil
5 Garlic Cloves
Salt and Pepper
1 tbsp Olive Oil
Plain Flour
2 500g Jars of Bolognese Sauce
1 pkt Spaghetti

Steps:

  • Finely chop the onion and chop the grated cheese into small pieces. Lightly beat the two eggs and mince or blend the garlic cloves.
  • In a large mixing bowl, add the mince, eggs, onion, cheese, basil, garlic and lightly season with salt and pepper. Combine until all the ingredients are all mixed through.
  • Roll into 24 palm-sized balls and dredge in flour.
  • In a large frying pan, heat the olive oil over medium heat and lightly brown the meatballs in batches. Do this in batches and until all sides of the meatballs are brown, approximately 5 minutes per batch.
  • While the first batch of meatballs in browning spray the bottom of a large saucepan or a stockpot with non-stick spray. Pour a small amount of the bolognese sauce into the bottom of the pot (just enough to cover the bottom).
  • Drain each batch on some paper towel, then add to the pot. Add some sauce in between each layer of meatballs and top with the final amount of sauce. Cover and simmer for 20 to 25 minutes.
  • Cook your spaghetti according to the directions on the packet.

Fusilli pasta baked with tomato sauce, meatballs and a trio of cheeses: mozzarella, Parmesan and ricotta.

Provided by Food Network Kitchen

Time 1h25m

Yield 6

Number Of Ingredients 20

Olive oil, for the baking dish
1/4 cup dried breadcrumbs
3 tablespoons milk
1/2 pound ground beef (80-percent lean)
1/2 pound ground pork
1/2 cup grated Parmesan
1 teaspoon dried oregano
2 cloves garlic, finely grated
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten
2 tablespoons olive oil
2 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
One 28-ounce can crushed tomatoes
One 15-ounce can crushed tomatoes
Kosher salt and freshly ground black pepper
1 pound dried fusilli
3 cups shredded mozzarella
1 cup grated Parmesan
1 cup fresh ricotta

Steps:

  • Preheat the oven to broil on high. Line a 9-by-13-inch baking dish with foil and coat lightly with oil.
  • Put the breadcrumbs in a large mixing bowl and pour the milk over the top. Stir to combine and let stand 5 minutes. Add the beef, pork, Parmesan, oregano, garlic, 3/4 teaspoon salt and 1/4 teaspoon black pepper and mix to combine with your hands. Add the egg and mix well to incorporate. Roll the mixture into 1 inch balls, arranging them in the prepared baking dish.
  • Broil the meatballs about 3 inches from the element until browned on top, about 4 minutes. Turn the meatballs over and continue to broil until golden brown and cooked through, about 4 minutes more.
  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Season with salt and pepper.
  • Meanwhile, cook the fusilli in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and transfer to a large bowl.
  • Add the tomato sauce, meatballs and half of the mozzarella and Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish. Dollop the ricotta by spoonfuls onto the pasta. Top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

FAVORITE QUICK & EASY SPAGHETTI AND MEATBALLS

Favorite Quick & Easy Spaghetti and Meatballs image

I've been enjoying spaghetti all my life! Been to Italy, and have tried numerous versions all around the globe including this one which remains my all-time favorite (perfected over the years by yours truly!). Hope you enjoy, too. Notes: I like to keep a bag of meatballs (see my Frankies Spuntino New York - Italian Meatballs recipe #452689) on hand in the freezer, for ease of prep. You can use your favorite fresh or frozen prepared meatballs, -or- crumbled & browned ground beef is also fine. Just add a tossed green salad and garlic bread (see recipe #109257), and a nice bottle of red wine to round out the meal. Salut! Tip: I use a jar of Classico Italian Sausage & Peppers Pasta Sauce, and whole wheat spaghetti noodles (De Cecco), but your favorite pasta sauce and regular spaghetti noodles is fine.

Categories     Spaghetti

Time 50m

Yield 8 serving(s)

Number Of Ingredients 12

3 tablespoons olive oil
1 golden bell pepper, roughly diced (optional)
26 ounces of your favorite spaghetti sauce (I use a jar of Classico Italian Sausage & Peppers Pasta Sauce)
1 (14 1/2 ounce) can diced tomatoes with green pepper celery and onion
1/2 cup dry red wine (such as Reggiano Lambrusco, Chianti, Red Rose or Burgundy)
1/4 teaspoon oregano
1/4 teaspoon basil
1/2 teaspoon minced garlic
1 lb prepared italian meatballs (fresh or frozen, -or- use crumbled & browned ground beef)
whole wheat spaghetti (such as De Cecco)
grated parmesan cheese
snipped fresh Italian parsley, to garnish (or snipped basil or oregano)

Steps:

  • Heat olive oil in a large sauce pan over medium heat. Add the bell peppers, and saute them in the oil until slightly softened (5 to 10 minutes).
  • Add spaghetti sauce, diced tomatoes, red wine, the oregano, basil and garlic. Partially cover pot; bring to a boil over medium-high heat, stirring often.
  • Reduce heat, partially cover pot and simmer sauce for 20 minutes, stirring occasionally.
  • Meanwhile in a separate pot, boil water and prepare noodles al dente; drain.
  • Add fresh or frozen meatballs (or browned ground beef) to sauce; cook an additional 10-15 minutes, until hot and bubbly.
  • In individual bowls, ladle sauce over hot noodles.
  • Serve with grated Parmesan cheese and snipped fresh herbs (such as basil, parsley or oregano) at the table, as desired.
  • Great served with a tossed green salad & Mom's Onion Parmesan Bread recipe #109257, and a nice bottle of red wine!
  • Salut!

CHEESY BAKED SPAGHETTI AND MEATBALLS

Cheesy Baked Spaghetti and Meatballs image

This is a new spin on a recipe from my childhood-- my dad would make spaghetti and meatballs for me and my sister when my mom was too busy to cook. It was his favorite dish to cook-- boil spaghetti, heat frozen meatballs and refrigerated store-bought sauce, mix and serve. Once I got the hang of how Dad made S&M, I took it a few steps further-- and the result was a huge hit with my family!
