EASY SPAGHETTI AND MEATBALLS
WHEN I was a teenager, I cooked dinner every night for our family of four...Mom, Dad, Grandmother, who lived next door, and myself. Through the years, I have modified and changed this recipe for two people to better fit our tastes. That's one of the great things about this dish. It's easy to do just that! -David Stierheim, Pittsburgh, Pennsylvania

EASY SPAGHETTI AND MEATBALLS
This is a very tasty dish that I've had lots of compliments on, even tho I cheat and use jarred sauce (shhh)...I think the slow simmering of the flavorful meatballs really makes this taste homemade all the way!!! This makes a lot, so I usually use the leftovers to make meatball subs.

Steps:
- Preheat the oven to broil on high. Line a 9-by-13-inch baking dish with foil and coat lightly with oil.
- Put the breadcrumbs in a large mixing bowl and pour the milk over the top. Stir to combine and let stand 5 minutes. Add the beef, pork, Parmesan, oregano, garlic, 3/4 teaspoon salt and 1/4 teaspoon black pepper and mix to combine with your hands. Add the egg and mix well to incorporate. Roll the mixture into 1 inch balls, arranging them in the prepared baking dish.
- Broil the meatballs about 3 inches from the element until browned on top, about 4 minutes. Turn the meatballs over and continue to broil until golden brown and cooked through, about 4 minutes more.
- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Season with salt and pepper.
- Meanwhile, cook the fusilli in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and transfer to a large bowl.
- Add the tomato sauce, meatballs and half of the mozzarella and Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish. Dollop the ricotta by spoonfuls onto the pasta. Top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.
CHEESY STUFFED MEATBALLS AND SPAGHETTI
I got this recipe from Tops courtesy of Ragu. My family loved these meatballs. I added some salt and pepper to my meatball mix. I used 1-inch pieces of mozzarella cheese. I baked my meatballs in the oven on 350 for 30 minutes then finished them in the sauce as directed.

FAVORITE QUICK & EASY SPAGHETTI AND MEATBALLS
I've been enjoying spaghetti all my life! Been to Italy, and have tried numerous versions all around the globe including this one which remains my all-time favorite (perfected over the years by yours truly!). Hope you enjoy, too. Notes: I like to keep a bag of meatballs (see my Frankies Spuntino New York - Italian Meatballs recipe #452689) on hand in the freezer, for ease of prep. You can use your favorite fresh or frozen prepared meatballs, -or- crumbled & browned ground beef is also fine. Just add a tossed green salad and garlic bread (see recipe #109257), and a nice bottle of red wine to round out the meal. Salut! Tip: I use a jar of Classico Italian Sausage & Peppers Pasta Sauce, and whole wheat spaghetti noodles (De Cecco), but your favorite pasta sauce and regular spaghetti noodles is fine.

CHEESY BAKED SPAGHETTI AND MEATBALLS
This is a new spin on a recipe from my childhood-- my dad would make spaghetti and meatballs for me and my sister when my mom was too busy to cook. It was his favorite dish to cook-- boil spaghetti, heat frozen meatballs and refrigerated store-bought sauce, mix and serve. Once I got the hang of how Dad made S&M, I took it a few steps further-- and the result was a huge hit with my family!
