1 cup water
1 cup chicken broth
1 cup uncooked white rice
1 ½ cooked boneless chicken breasts, shredded, or more to taste
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) can water chestnuts, drained and chopped
2 cups shredded Cheddar cheese
¾ cup chopped fresh broccoli
¾ cup chopped mushrooms
1 pinch cayenne pepper, or to taste
salt and ground black pepper to taste

Steps:

  • Bring water, chicken broth, and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
  • While rice is cooking, preheat the oven to 375 degrees F (190 degrees C).
  • Place shredded chicken in a large casserole dish. Add soup, water chestnuts, Cheddar cheese, broccoli, mushrooms, cayenne, salt, and pepper. Stir well, then spread the top so it's even.
  • Bake in the preheated oven until nicely browned and bubbly, 30 to 45 minutes.

3 tablespoons butter
⅓ cup red bell pepper (diced)
1 onion (finely diced)
½ teaspoon seasoning salt
1 teaspoon chili powder
10 ¾ ounces cream of chicken soup (condensed)
1 ⅓ cups milk
3 cups sharp cheddar cheese (shredded, divided)
⅓ cup parmesan cheese (shredded)
4 ounces mild green chiles
3 cups cooked chicken

Steps:

  • Heat oven to 375°F.
  • Cook shells al dente according to package directions.
  • Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.
  • In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chiles.
  • Spread into a 9x13 casserole dish. Top with remaining cheese.
  • Bake 30-35 minutes or until hot and bubbly.

4 skinless, boneless chicken breast halves - cut into bite size pieces
salt and pepper to taste
2 cups cooked white rice
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
3 slices soft white bread, cubed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Cook Chicken: Season chicken with salt and pepper to taste, place in a microwave-safe dish, cover and cook in microwave for 5 to 6 minutes. Turn and cook another 2 to 3 minutes or until cooked through and no longer pink inside. Let cool.
  • In a 9x13 inch baking dish, combine chicken, rice and soup and mix well. Top with cheese, then with bread cubes.

2 cups boiling water
4 boneless skinless chicken breasts, about 1 lb
1/4 teaspoon garlic powder
2 cups frozen broccoli
1 cup shredded low-fat cheddar cheese (4 oz)

Steps:

  • Preheat oven to 425 degrees and boil water.
  • In a 13x9 casserole dish, combine rice and contents of seasoning packet; add boiling water to dish and mix well.
  • Add chicken, sprinkle with garlic powder; cover and bake for 30 minutes.
  • Add broccoli and cheese; cover and continue to bake for another 8-10 minutes or until chicken is no longer pink in center.

1 green bell pepper (diced)

Parsley garnish

Steps:

  • Preheat oven to 375°F and spray a 9x13-inch casserole dish.
  • Cook and drain the spaghetti according to the directions on the package for al dente. Return the cooked pasta to the pot.
  • While the pasta is cooking, combine the cream of mushroom soup, chicken broth, cheddar cheese, Velveeta cheese, salt, pepper, and cayenne pepper (optional) in a medium bowl.
  • Add the diced chicken, pepper, onion, pimentos, and cream mixture to the pasta. Toss to combine.

  • Thaw the spinach. You can do it overnight, or simply put it in a colander and pour some hot water over it. Once it cools off, press and squeeze as much water as possible out of it. Yes, spinach loves water, but all of that water hidden inside can make chicken casseroles watery! Place the spinach in your casserole dish.
  • Now let's make the sauce. Over low to medium heat (we don't want it to burn) melt 3 tbs of butter. While stirring add the flour and seasoned salt. Cook it for a few minutes. Then, gradually add the milk and keep stirring until the sauce thickens. Last but not least, it is time for the Parmesan and cream. Slowly stir in the last two ingredients until the cheese melts. Salt and pepper to taste.
  • Add the chicken to the sauce mixture, stir it lightly and pour everything into your casserole dish.
