Homemade Cheddar Cheese Sauce image

Don't care for Velveeta®? Try this recipe. It can be used in place of it. Five ingredients and in less than 10 minutes, you've got a delicious substitute for it.

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
¼ teaspoon salt
1 cup whole milk
1 ¾ cups shredded sharp Cheddar cheese

Steps:

  • Melt butter in a saucepan over medium heat. Whisk in flour and salt until a paste forms. Slowly add milk; cook and stir until fully incorporated, about 2 minutes. Add cheese, stir to combine, and cook until melted, 1 to 2 minutes.

1/2 large yellow onion, Diced
5 large garlic cloves, Minced
2 cups milk or 2 cups cream
1 cup shredded cheese, Your Choice
1/8 cup Jack Daniels Whiskey
3 tablespoons flour
3 tablespoons butter
1 tablespoon butter
1 tablespoon olive oil

Steps:

  • Make a roux with the equal parts butter and flour.
  • Melt the remaining butter in a sauce pan with the olive oil.
  • Add the onion, saute until tender.
  • Add the garlic, saute until lightly brown. Deglaze with Whiskey.
  • Add milk, bring to very gently simmer, low heat.
  • Add the roux until sauce starts to thicken, you may not need all the roux.
  • When thick, remove from heat and stir in cheese.
  • Pour over desired side or main dish and ENJOY!

I made this super simple cheese sauce to serve with steamed broccoli. Pour it on top or use it as a dip. You can't go wrong either way. I used sharp cheddar cheese, but a stronger or milder version of cheddar would be a fine substitute. Enjoy!

1 cup sharp cheddar cheese, shredded
1/4 teaspoon black pepper, ground

Steps:

  • In a small saucepan over medium-low heat, whisk together milk, flour and garlic powder.
  • Heat milk mixture, stirring often, until it begins to steam and thicken. DO NOT BOIL.
  • Stir in shredded cheese and black pepper. Continue stirring until cheese is completely melted and smooth.
  • Remove from heat and allow to cool slightly before serving.

2 1/2 cups shredded medium cheddar or 2 1/2 cups sharp cheddar cheese
1/4 cup milk

Steps:

  • Pour condensed soup in small saucepan.
  • Add milk and stir.
  • Warm over low-medium heat.
  • Stir in shredded Cheddar cheese 1/2 cup at a time.
  • Stir every 30 seconds or so, until cheese is completely melted.
  • Continue to heat another minute then serve immediately.

4 New York strip steaks, 1/2 lb each
2 tablespoons vegetable oil
1/4 cup green onion, minced
1/4 cup red wine
3/4 cup half-and-half cream
3/4 cup boursin cheese or 3/4 cup cream cheese with garlic and herbs
2 tablespoons parsley, minced

Steps:

  • Sear steaks in hot oil, until cooked to your preference.
  • Remove steaks, cover and keep warm.
  • In same pan saute onions for 2 minutes, add wine and cook over high heat until reduced to 1 tbsp.
  • Add half and half cream.
  • Boil until reduced by half.
  • Stir in Boursin cheese or garlic cream cheese until thick and hot.
