EASY CARAMEL APPLE SPICE COOKIES

2 1/2 cups all purpose flour
tsp baking soda
1/4 tsp fine sea or kosher salt
1 tsp apple pie spice
1 cup light brown sugar, lightly packed
1/2 cup granulated sugar
1 stick unsalted butter, softened
1 1/2 tsp vanilla extract
2 large eggs
3-4 tbsp caramel syrup
•optional add-ins, 1/2 cup mini cinnamon or white chocolate chips, 1 small granny smith apple diced, nice for a variety once in awhile

Steps:

  • 1. Preheat the oven to 350 degrees, line a rimmed cookie sheet with parchment paper.2. In a large mixing bowl,using a hand held mixer or stand mixer, combine softened butter and sugars until fluffy. 3. Mix in eggs and vanilla on low.4. In a separate mixing bowl, whisk flour, baking soda, salt and apple pie spice. Gently add dry mixture into wet. Scrape down sides of bowl if needed. Mix until all is combined. 5. Drizzle the caramel into your cookie dough and lightly mix.6. Using a cookie scoop, drop 12 mounds onto prepared cookie sheet. 7. Bake 10 to 12 minutes. The cookies should turn a light golden color. 8. Cool cookie sheet for a about 10 minutes on a wire rack then slip paper with cookies right onto the rack. 9. Lay a fresh piece of parchment paper onto the same cookie sheet and scoop out remaining dough. Bake for an additional 10 to 12 minutes until cookies are done. Cool again the same way as above. Enjoy!

1/2 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup packed brown sugar
1/4 teaspoon salt
1 large egg, room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup miniature semisweet chocolate chips
48 round toothpicks
1 package (11 ounces) Kraft caramel bits
2 tablespoons water
1 cup finely chopped pecans, peanuts or M&M minis

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth. Holding a cookie by the toothpick, dip cookie in caramel mixture, turning to coat. Allow excess to drip off. Immediately dip the bottom and sides in pecans., Place on waxed paper. Repeat with remaining cookies, caramel mixture and pecans. Let stand until set.

6 wooden pop sticks
1 package (14 ounces) caramels, unwrapped
2 tablespoons water

Steps:

  • Remove stems and thoroughly wash and dry apples; insert pop sticks into tops. Line a baking sheet with parchment and grease the parchment; set aside., Place caramels and water in a small saucepan; cook and stir over medium-low heat 3-5 minutes or until smooth, stirring frequently. Remove from heat; cool slightly. Dip each apple in caramel mixture, allowing excess to drip off. Place on prepared pan. Refrigerate until set.

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon baking powder
1 cup softened butter
1 (7.4 ounce) box apple cider drink mix (such as Alpine® Spiced Apple Cider)
1 cup white sugar
½ teaspoon salt
2 eggs
1 teaspoon vanilla extract
1 (14 ounce) package caramel bits (such as Kraft®)

Steps:

  • Whisk flour, baking soda, cinnamon, and baking powder together in a bowl.
  • Combine butter, apple cider drink mix, sugar, and salt together in another bowl. Beat using an electric mixer until light and fluffy. Beat in eggs 1 at a time. Add vanilla extract and mix well. Add the flour mixture gradually; mix until just combined. Refrigerate dough for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Microwave caramels in a microwave-safe bowl until softened, about 20 seconds. Flatten caramels using the bottom of a glass.
  • Scoop cookie dough into balls about 1 tablespoon each. Flatten each ball slightly in your palm. Sandwich a caramel between 2 pieces of dough; pinch closed. Repeat with the remaining cookie dough and caramels. Place cookies 2 inches apart on the prepared sheets.
  • Bake in the preheated oven until very lightly browned around the edges, 12 to 14 minutes. Slide parchment off of the baking sheet, onto your counter. Let cookies cool on the parchment.

1 1/2 cups Gold Medal™ all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups old-fashioned oats
1/2 cup plus 2 tablespoons unsalted butter, softened
1 cup plus 2 tablespoons packed brown sugar
1 egg
2 tablespoons milk
3/4 teaspoon vanilla
2 baking apples, peeled, chopped
20 caramels, unwrapped
2 tablespoons water

Steps:

  • Heat oven to 325°F. Line cookie sheets with cooking parchment paper.
  • In medium bowl, mix flour, baking soda and salt with whisk; stir in oats. In large bowl, beat butter and brown sugar with electric mixer on medium speed until creamy. Add egg, milk and vanilla; beat 2 minutes or until light and fluffy. On low speed, beat in flour mixture until blended. Stir in apples.
  • Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 14 minutes or until golden. Remove from cookie sheets to cooling racks; cool completely.
  • In 1-quart saucepan, cook caramels and water over low heat 7 minutes, stirring until smooth. Drizzle warm glaze over cookies. Let stand 15 minutes or until set. Store tightly covered up to 5 days.

Steps:

  • In a mixing bowl cream butter and both sugars together.
  • Beat in the egg and apple juice.
  • In a small bowl combine the dry ingredients.
  • Gradually add the dry ingredients to the creamed mixture; blend well.

  • Drop dough by heaping teaspoonfuls onto a greased cookie sheet about 2 inches apart.
  • Bake for 12-13 minutes, or until golden brown.
