AWESOME BEEF ENCHILADAS
Oh man, I really love this recipe. It's truly awesome! Most people like corn tortillas with their enchys, but I prefer flour...by all means, go with what you like! Sometimes I throw black beans into the meat mixture, Anyway Enjoy!

Steps:
- Brown beef, onions, peppers and garlic in large skillet over medium-high heat until browned and veggies are soft.
- Add taco seasoning and 1/2 cup of enchilada sauce, stirring until combined. Turn off heat and add cream cheese. Stir until cream cheese has melted into mixture.
- Spread 1/2 cup of enchilada sauce into the bottom of a greased 13x9 casserole dish. Spoon about 1/4 cup of meat mixture down the center of each warmed tortilla and roll up. Place enchiladas seam side down in dish.
- Top enchiladas with remaining 1 cup of enchilada sauce. Then top with monterey jack cheese.
- Bake for 20 minutes at 350 degrees or until cheese is melted. Serve with rice and beans if you so desire!

- In a large skillet over medium heat cook the ground beef with onion and garlic until no longer pink; drain fat.
- Add in the package of taco seasoning mix; cook stirring for 5 minutes.
- Prepare the enchilada sauce according to the package directions.
- Pour 1/4 cup of the sauce into the bottom of a greased 13 x 9-inch baking dish.
- Place an equal amount of ground beef mixture on each tortilla, then sprinkle grated cheddar cheese.
- Sprinkle the black olives over the top of the cheese (reserve about 1 cup cheddar cheese for the top).
- Roll each tortilla up and place seam-side down on the sauce in the baking dish.
- Drizzle the remaining enchilada sauce over the enchiladas.
- Sprinkle with remaining cheddar cheese.
- Bake for about 20 minutes (no more than 25 minutes or the enchiladas will get too soggy). Bake at 350.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish, and pour the salsa into the bottom of the dish. Set aside.
- Cook and stir the ground beef in a skillet over medium heat for about 10 minutes, until meat is browned and crumbly. Drain the grease from the beef, and add the salsa con queso to the skillet, stirring to mix well. - Preheat oven to 350 degrees.
- Cook the ground beef in a skillet until brown.
- Add the taco seasoning and water (according to package instructions) and cook until beef is well coated, and sauce is thickened.
- Pour a bit of the enchilada sauce in the bottom of a 9x13in pan and spread evenly.
- Set up an assembly line: Tortillas, refried beans, taco meat, corn, any of the above optional ingredients, and lastly cheese.
- Assemble enchiladas: Smear a line of refried beans from the top of the tortilla to the bottom, then top beans with the remaining assembly line items.
- Fold in the sides of the tortilla to close the enchilada, then place in pan, side by side, until pan is full (pan should hold 6 enchiladas).
- Top each enchilada with enchilada sauce, then cover with cheese, and optional ingredients, if desired.
- Place assembled enciladas into the oven and heat through.
- Repeat process to make the next batch.

- Brown meat and onion in 10 inch skillet.
- Drain.
- Stir in 1/2 cup picante sauce and cumin.
- **Heat about 1/2 inch oil in a small skillet until hot but not smoking.
- Quickly fry tortillas in oil to soften, about 2 seconds per side.
- Drain on paper towels.
- **Note if you use flour tortillas, they do not need to be fried.
- Spoon about 1/4 Celsius of meat mixture down center of each tortilla.
- Roll and place seam side down in 13 x 9 x 2 inch baking dish.
- Spoon remaining picante sauce evenly over enchiladas.
- Cover with cheese.

The best enchiladas I've ever had- really, the only ones I've ever liked! I crave these, and usually make them at least two times a month. You can easily use shredded chicken instead of ground beef, and feel free to use corn tortillas instead of flour...it's the sauce that make these enchiladas so AWESOME!

- Preheat oven to 375 degrees.
- To make the sauce: Melt butter in a sauce pan, then add chili powder, flour, and salt. Stir until smooth.
- Add garlic and stir in water and tomato paste (may have to use a whisk). Simmer until thick.
- To make the filling: Cook ground beef with the onion, then drain. Add taco seasoning. Add approximately 1/2 cup of enchilada sauce to the meat.
- Place the beef and cheese in each tortilla and roll up. Pour the enchilada sauce on top and bake for 25 minutes.
