BUCKWHEAT PANCAKES

Buckwheat Pancakes image

Layer these earthy pancakes with sausage patties and fried eggs for a hearty, crowd-pleasing breakfast. Or go lighter and top with yogurt and fresh fruit. Either way, don't skimp on the maple syrup!

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Pancake Recipes

Time 50m

Number Of Ingredients 12

1 1/2 cups unbleached all-purpose flour
1/2 cup buckwheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons sugar
1/2 teaspoon kosher salt
3 large eggs, room temperature
2 tablespoons unsalted butter, melted, plus more, room temperature, for serving
1 1/2 cups buttermilk
1 teaspoon pure vanilla extract
Safflower oil, for griddling
Pure maple syrup, for serving

Steps:

  • In a large bowl, whisk together flours, baking powder, baking soda, sugar, and salt. Make a well in center; add eggs, butter, buttermilk, and vanilla. Whisk until just combined but still lumpy (do not overmix). Let stand 15 minutes.
  • Preheat a large cast-iron or nonstick skillet or griddle over medium. Drizzle with 1 teaspoon oil; wipe with a paper towel to leave a thin film. Pour 1/4 cup batter per pancake onto skillet, leaving 1 inch between each. Cook until bubbly on top and golden on bottom, and beginning to lift from skillet along bottom edges, 2 to 3 minutes. Flip and cook on other side until golden on bottom, puffed, and just cooked through, about 1 minute more. Transfer to a baking sheet lined with a wire rack; keep warm in oven on low heat until ready to serve. Serve with butter and syrup.

BUCKWHEAT AND OAT PANCAKES

Buckwheat and Oat Pancakes image

I've been working on this recipe for a few months now and I'm happy with this final version. I've attempted to make it healthy without being austere. If you can't buy oat flour locally you can make it by processing rolled oats or just go ahead and use the rolled oats as is. Hope you enjoy it as much as we do. This is great for a cozy winter supper with grilled turkey sausage and a grilled seasonal vegetable.

Provided by sugarpea

Categories     Breakfast

Time 25m

Yield 10 pancakes

Number Of Ingredients 12

1/2 cup buckwheat flour
1/2 cup oat flour or 1/2 cup rolled oats
1/2 cup chopped walnuts
1 teaspoon sugar or 1 teaspoon sugar substitute
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 eggs or 1 equivalent egg substitute
3/4 cup buttermilk
1/2 cup unsweetened cinnamon applesauce
2 tablespoons melted butter or 2 tablespoons oil, of choice
maple syrup

Steps:

  • Mix dry ingredients in a large bowl.
  • Beat liquid ingredients ( except syrup or topping) in a small bowl; add to dry ingredients and stir until just mixed.
  • Spray or lightly oil a hot griddle or non-stick skillet and add batter by 1/3 cup measures; turn when bubbles form on top surface and underside is browned. Cook second side until browned. This should result in 10 each 5" pancakes.
  • Serve with syrup or topping of choice.

CHOCOLATE BUCKWHEAT PANCAKES

Chocolate Buckwheat Pancakes image

A delicious looking and sounding recipe I was sent from Clean Home Journal. Healthy buchwheat meets luscious chocolate! ;)

Provided by Mommy Diva

Categories     Breakfast

Time 35m

Yield 12 5 inch pancakes, 4 serving(s)

Number Of Ingredients 10

1 cup buckwheat pancake mix
1/3 cup unsweetened cocoa powder
4 tablespoons powdered sugar (plus additional for dusting)
2 tablespoons vegetable oil (plus 2 teaspoons for griddle)
1 large egg
1 1/4 cups low-fat milk
1/4 cup mini chocolate chip (optional)
butter
1/2 cup fresh raspberries or 1/2 cup fresh sliced strawberry
raspberry flavored syrup or strawberry syrup

Steps:

  • Preheat the oven to 200 degrees F and place a baking sheet or oven-proof serving platter in the oven.
  • In a medium bowl, blend the pancake mix, cocoa and 4 Tablespoons of powdered sugar with a whisk or fork.
  • In a 2-cup liquid measuring cup mix the oil, egg and milk; Add the wet mixture to the dry mixture and stir just until blended, about 30 seconds, leaving lumps in the batter (Do not over-mix.).
  • Let the batter rest 5 to 10 minutes then gently stir in mini chocolate chips, if using.
  • While the batter rests, warm an electric griddle to 375 degrees F then lightly brush the surface with 2 teaspoons of vegetable oil (a large, heavy-bottomed nonstick skillet or griddle on the stove, on medium high heat, will also work - heat until drops of water dance on the surface and evaporate) .
  • Pour 1/4 cup of the batter onto the heated griddle for each pancake, flipping the pancakes with a flat spatula when bubbles appear on the pancake edges, after approximately 1 to 2 minutes.
  • Cook until steam rises from the pancakes, about 30 to 60 seconds then transfer to the baking sheet or platter to keep warm in the oven until all pancakes are cooked.
  • Remove the platter from the oven, dust lightly with powdered sugar and serve immediately along with butter, syrup and berries already on the table.
  • Enjoy! ;).

BUCKWHEAT PANCAKES

Buckwheat Pancakes image

I decided to make buckwheat pancakes for a few reasons: I get lots of requests for anything breakfast, I'm trying to cook with more whole grains, and I heard someone say it's almost impossible to make a great pancake using 100% buckwheat flour.

Provided by Chef John

Categories     100+ Breakfast and Brunch Recipes     Pancake Recipes     Whole Grain Pancake Recipes

Time 25m

Yield 4

Number Of Ingredients 9

1 cup buckwheat flour
1 ½ teaspoons white sugar
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon baking soda

¼ teaspoon vanilla extract
1 tablespoon unsalted butter, or as needed

Steps:

  • Whisk buckwheat flour, sugar, baking powder, salt, and baking soda together in a bowl.
  • Beat buttermilk, egg, and vanilla extract together in another bowl. Pour flour mixture into buttermilk mixture; whisk until batter is thick and smooth. Let batter rest for 5 minutes until bubbles form and batter relaxes.
  • Melt butter on a griddle over medium heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

  • Buckwheat Pancakes. Would you have guessed that you can make pancakes from buckwheat? This is great news if you love them for breakfast but are gluten intolerant.

  • Russian Porridge. Did you know that buckwheat is the main grain in many Russian cuisines? No wonder they are the masters of cooking with buckwheat. After preparing the base recipe you can add milk and butter for a warm and filling morning meal.
  • Beef’d Up Buckwheat Kasha. Eating buckwheat does not have to be boring. While many recipes feel fairly similar this one is very convincing due to its high protein content and nutty taste.
  • Healthy Buckwheat Salad. Although the author of this recipe states that it is good for breakfast, I’d probably eat it for dinner. High in protein and full of crunchy vegetables.
  • Seeded Buckwheat Cookies. This dough can be made 5 days ahead of time, and a trick is to roll it between parchment paper so it won’t stick to your rolling pin.
  • Cauliflower Cashew Buckwheat Soup. This recipe features buckwheat mostly as a garnish, but the end results are nonetheless mouthwatering. I love cashew nuts, and I have never considered the idea that I could cook them in a soup.
  • Broccoli Buckwheat Salad. Adding feta cheese to this recipe is optional, just leave it out if you are vegan. The main ingredient is broccoli and the dried tomatoes ensure that the dish keeps very well in the fridge – up to four days according to the author.
  • Buckwheat with Mushrooms. I have to admit, the cover photo of this recipe looks absolutely stunning. Use the green onions as a garnish if you want to recreate it, as it balances out the brown color of the mushrooms and the buckwheat.
