This Easy Bruschetta Chicken recipe is made with tender chicken breast pieces coated in garlic and spices that are grilled, then topped with a fresh tomato and basil topping. A little drizzle of balsamic glaze takes the flavors over the top!

2 cups (260g) diced Roma tomatoes (5-6 tomatoes)
1 head of garlic, minced
1 1/2 tbsp olive oil
1 1/2 tbsp balsamic vinegar
5 tbsp (9g) fresh chopped basil
1/4 tsp salt
1/4 tsp black pepper
4 boneless skinless chicken breasts
1 tbsp olive oil
2 tsp Italian seasoning
1 tsp garlic powder
1/2 tsp salt
1/8 tsp black pepper
4 slices mozzarella cheese
4-5 tablespoons balsamic glaze

Steps:

  • In a medium sized bowl, combine the tomatoes, garlic, olive oil, balsamic vinegar, basil, salt and pepper. Stir to combine and set aside.
  • 2. Prepare your chicken breasts. You can pound them to even thickness or leave them as is. Coat the chicken with the olive oil.
  • 3. In a small bowl, combine the Italian seasoning, garlic powder, salt and pepper. Coat the chicken breasts evenly with the seasoning.
  • 3. Grill the chicken over high heat for 6-8 minutes per side or until cooked through.
  • 4. When the chicken is cooked, top each piece with a slice of mozzarella cheese and allow it to melt.
  • 5. Remove the chicken from the grill and let it rest for about 5 minutes. Top the chicken with the tomato basil topping and a drizzle of balsamic glaze and serve.

1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder

1/4 cup red onion (finely chopped)
8 basil leaves (chopped)

Steps:

  • Place the chicken breasts in a large bowl. Sprinkle the salt, pepper, onion powder, garlic powder, and Italian seasoning over the chicken and add in the olive oil. Toss the chicken in the seasonings and oil until evenly coated. Marinate for at least 15 minutes or up to 8 hours.
  • Combine the bruschetta topping ingredients in a separate bowl.
  • Heat the grill or bring a grill pan to medium-high heat. Then, grill the chicken until it's cooked through. (Approximately 5-7 minutes per side. The chicken is done when it reaches an internal temperature of 165F)
  • Top each chicken breast with a few spoonfuls of the bruschetta topping.
  • Drizzle the balsamic reduction over each chicken breast and garnish with chopped fresh basil and parmesan cheese.

6 tablespoons sun-dried tomato vinaigrette dressing, divided (I've used both Kraft and Good Seasons brand with equally good results)
4 boneless skinless chicken breast halves
1 tomatoes, chopped
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh basil

Steps:

  • Pour 4 tablespoons of the dressing over chicken in resealable plastic bag and seal. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes to marinate.
  • While chicken is marinating, combine tomatoes, cheese, basil and remaining 2 tablespoons of dressing.
  • Remove chicken from marinade bag and place in baking dish. Bake at 350 degrees for 10 minutes.
  • Spoon tomato mixture over chicken breasts and bake an additional ten minutes.

3 cups diced crusty bread
5 tablespoons olive oil
Kosher salt and freshly ground black pepper
6 chicken cutlets (thin-cut chicken breast)
5 Roma tomatoes, diced
2 cloves garlic, pressed
6 fresh basil leaves, chiffonade, plus whole fresh basil leaves for garnish
3 tablespoons balsamic reduction/glaze

Steps:

  • Preheat the oven to 375 degrees F.
  • Toss the diced bread with 1 tablespoon olive oil. Sprinkle with a pinch of salt and pepper and place on a sheet pan. Toast in the oven until golden, but still a little chewy, about 5 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a skillet over a medium-high heat. Sprinkle the chicken cutlets with salt and pepper and, when the oil is hot, add to the skillet. Fry, flipping as needed, until cooked through and nicely seared, 3 to 4 minutes per side.
  • Combine the tomatoes, garlic, basil chiffonade, the remaining 2 tablespoons olive oil, some salt and pepper and 1 tablespoon balsamic reduction in a bowl. Toss and set aside.
  • Remove the bread from the oven and, at the last minute, toss with the tomato mixture. Top the cooked chicken with the bread/tomato mixture, allowing it to fall around the edges and fill in the gaps of the skillet. 1 lb chicken breast, boneless and skinless cut into serving pieces and pounded 1/2-inch thick
1 large egg, lightly beaten
1/2 cup breadcrumbs
3 tablespoons vegetable oil

2 tablespoons fresh basil, chopped
1/8 teaspoon garlic powder
