5 tablespoons butter, divided
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste

Steps:

  • Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

2 quarts vegetable stock
1 white onion, chopped
2 tablespoons olive oil
4 garlic cloves, minced
salt
black pepper
1 -2 teaspoon fresh thyme leave
1 pinch cayenne pepper (optional)
8 ounces mushrooms, chopped
8 ounces broccoli florets, chopped
12 ounces evaporated milk
1/2 cup heavy cream
1 teaspoon Hungarian paprika
3 -4 tablespoons flour

Steps:

  • In a stock pot, heat the oil and add the onion, cooking until translucent, then add the thyme and garlic.
  • Season with salt, freshly ground black pepper, cayenne pepper and thyme leaves, and immediately add the stock; stir.
  • Bring stock to a boil, and add broccoli and mushrooms. Cover, lower heat to simmer and cook, stirring occasionally, for about 10-15 or until broccoli becomes tender (depends on the size of the broccoli pieces).
  • Whisk flour and paprika into a small bowl along with the evaporated milk. Stir into soup, and raise heat, stirring constantly. When soup comes to a boil, if your soup is thick as you like it finish by adding the cream and removing from heat. If it's a little thin for you, whisk some more flour in the heavy cream and add that, stirring until it boils and thickens.

1 bunch broccoli (about 1-1/2 pounds)
1 tablespoon canola oil
1/2 pound sliced fresh mushrooms
1 tablespoon reduced-sodium soy sauce
2 medium carrots, finely chopped
2 celery ribs, finely chopped
1/4 cup finely chopped onion
1 garlic clove, minced
1 carton (32 ounces) vegetable broth
2 cups water
2 tablespoons lemon juice

Steps:

  • Cut broccoli florets into bite-sized pieces. Peel and chop stalks., In a large saucepan, heat oil over medium-high heat; saute mushrooms until tender, 4-6 minutes. Stir in soy sauce; remove from pan., In same pan, combine broccoli stalks, carrots, celery, onion, garlic, broth and water; bring to a boil. Reduce heat; simmer, uncovered, until vegetables are softened, 25-30 minutes., Puree soup using an immersion blender. Or cool slightly and puree soup in a blender; return to pan. Stir in florets and mushrooms; bring to a boil. Reduce heat to medium; cook until broccoli is tender, 8-10 minutes, stirring occasionally. Stir in lemon juice.

1/4 cup butter
1/2 onion
2 1/2 cups mushrooms
2 1/2 cups broccoli
1 -2 tablespoon garlic
1 -2 stick celery
flour
1/2 cup milk
2 -3 cups chicken stock

Steps:

  • set the stove to low or medium heat and grab your pot you're going to be cooking with.
  • put the butter in, and let it heat up for a minute. (any oil will work too).
  • add your onion and garlic, and if your heart desires, feel free to add some pepper flakes for a nice kick. (this is mostly to add flavor).
  • after you've sauteed that for a few minutes (until a light brown color), add your mushrooms and let them cook. (if you dont have mushrooms, you can use bacon, zuchinni, potatoes etc.).
  • once you have your onions and garlic and mushrooms, you can sprinkle in some flour to give your soup a little thickness. if you prefer to use another kind of thickener, thats totally okay!
  • after we put some flour in we're gonna go ahead and stir it up good to make sure it's lump free. also let it cook for at least 30 seconds.
  • then you can add your milk in and stir it up. I usually go ahead and put the broccoli in at this time. (any other vegetable will work too! :)).
  • now you can add in the chicken stock and let it simmer for as long as you want and it's ready! feel free to add any spices you want throughout the course of making this. I didn't put anything specific in the ingredients because I tend to just add my spices in by taste.
  • some spices I use that you could use are: seasoned salt, black pepper, paprika, cayenne pepper, garlic powder, onion powder (although we've already used those in this recipe, I feel it adds good flavor.) thyme, curry, and accent. I also loveee to throw some valentina in when i cook. feel free to use my suggestions. or not :) have a good day and hopefully you made this!

Easy Broccoli Soup image

I saw this being made on TV (AWW) and thought it looked really good. On the programme they said to serve with toasted slices of french bread which were topped with crumbled blue cheese and grilled. I didn't have any on hand so I topped mine with parmesan cheese. I also, the second time round added some chopped bacon and simmered for another 15mins after I had blended the soup. You could also top each bowl of soup with a spoon of cream for a special occasion.

1 -2 tablespoon oil
1 onion (diced)
2 garlic cloves (minced or use 2teasp from a jar)
1 large head broccoli (trimmed and chopped, about 500g)
1 potato (peeled & diced or leave skin on if you prefer)
6 cups chicken stock (homemade, from a carton or use 6teasp granules to 6 cups water or to your taste)
salt & freshly ground black pepper
2 -3 slices bacon (diced, optional variation)

Steps:

  • In a large deep pan heat the oil over medium and add the onion & garlic.
  • Cook gently until softened for about 2-3 minutes.
  • Add the potato, broccoli and stock and bring to the boil.
  • Turn heat down and simmer for 20 mins until vegetables are cooked.
  • Either pour into a blender and blend or use a stick blender in pan to make a smooth mixture.
  • If using a blender add soup back to the pan and heat gently.
  • It is at this point you can add the chopped bacon and simmer til bacon is cooked, about 15mins, then check seasoning.
  • If not adding the bacon, check seasoning and add salt & pepper to taste & reheat gently.
  • Serve in nice bowls with slices of french bread which have been toasted on one side, turned over and topped with either blue cheese or whatever cheese you have on hand and grilled for a few mins til melted & crispy, on the side.
  • Note: cooking time does not include the extra time for the bacon addition.
