BEEF SLIDERS FOR A CROWD

Beef Sliders for a Crowd image

We're redefining sliders with this easy press-in-a-pan recipe - no forming and cooking individual patties! And we took a cue from our favorite burger joints: onions on the bottom, beef on the top. You can prepare the meat mixture on the cookie sheet a few hours ahead, refrigerate and cook just before serving.

Provided by Food Network Kitchen

Categories     appetizer

Time 40m

Yield 8 servings (3 sliders per person)

Number Of Ingredients 13

1 medium onion
1 1/2 pounds 90/10 ground beef
1 large egg
1/4 cup plain breadcrumbs
Kosher salt
2 teaspoons vegetable oil
Freshly ground black pepper
6 slices American cheese, quartered
24 thin plum tomato slices (from 2 to 3 tomatoes)
24 dill pickle slices
24 mini potato buns
4 large iceberg lettuce leaves, cut into 24 even pieces
Ketchup and yellow mustard, for serving

Steps:

  • Special equipment: a 10-by-15-inch rimmed baking sheet
  • Preheat the oven to 425 degrees F. Cut the onion in half, and shred each half on the large holes of a box grater. Squeeze the shredded onion dry between 2 towels, and scatter around a 10-by-15-inch rimmed baking sheet.
  • Put the ground beef, egg, breadcrumbs and 1 teaspoon salt in a large bowl, and mix gently, just enough to incorporate evenly. Drop mounds of the mixture all around the baking sheet, and press them into an even layer without disturbing the onions too much (but expect some of the onions to move around and peek through the meat). Brush the top of the meat with the vegetable oil, then season it evenly with 1/2 teaspoon salt and several grinds of fresh pepper. Score the meat into 24 squares, cutting completely through with a spatula.
  • Bake until browned and no longer pink in the middle, 8 to 9 minutes. Put a small square of cheese on each patty, and return to the oven to melt, about 30 seconds. Let rest a few minutes, then recut along the scores to separate.
  • Top each patty with a slice of tomato and pickle. Slide a spatula into the pan, and let guests serve themselves. Serve alongside a platter with the buns and lettuce. Don't forget the ketchup and mustard.

BACKYARD BBQ PARTY GUIDE AND FOOD SUGGESTIONS

From thespruceeats.com
  • Planning Your Cookout. The BBQ is a great American tradition, where food is cooked outside, shared, and eaten in a most casual of fashions, whether a gathering in a backyard, a park, the beach—even a parking lot or a rooftop.
  • Steaks. Because of their hefty price tag, steaks are not at every BBQ party, but people sure do get excited when they see cuts of beef sizzling on the grill.
  • Burgers. When cooking burgers on the grill, the golden rule is to leave them alone. Don't flip them over and over, and definitely don't squash them with the spatula—when you press down on the meat, you're pressing out the juiciness.
  • Pork. Real BBQ is a regional thing. What flies in North Carolina (some form of pork) won't look even remotely familiar in Texas, where beef brisket is usually slow-cooking on the grill.
  • Hot Dogs and Sausages. Hot dogs are always a favorite at BBQ parties, but after the first few cookouts of the season, they can get a bit tiresome. For a change of pace, pop bratwurst on the grill, set up a condiment station, and a basket of buns, and call your work over.
  • Chicken. Chicken is usually a safe bet when it comes to feeding a crowd, but too often grilled chicken gets overcooked (for fear of serving it uncooked) and dry.
  • Kebabs. Kebabs provide a great way to feed a crowd with minimal fuss (especially if you have some small hands around that will help thread the skewers).
  • Fish. Something about live fire and fresh fish is magical. While a whole side of salmon on the grill is a visually stunning delight and easy to cook (just put it skin-down, cover the grill, and remove when cooked—there is absolutely no need to flip it!)
  • Shellfish. You may not think of grilling shellfish, but this cooking method is actually ideal for this type of seafood. Their shells protect their sweet insides from the heat, the fire adds flavor, and cooking them outside minimizes the mess.
  • Coleslaw. A ubiquitous side dish on any barbecue buffet table, coleslaw is classically made with hearty green cabbage and a creamy dressing. When eaten alongside grilled meats, it seems as if it were made for summertime cookouts.

BEST BEEF CUTS TO BBQ | TESCO REAL FOOD

From realfood.tesco.com
  • Steaks. A juicy steak is a crowd-pleaser at any summer barbecue. As steaks cook quickly on the grill, tender cuts such as sirloin, ribeye and fillet give the best results.
  • Sirloin. Sirloin steak, cut from between the fillet and the rib, has the perfect balance of flavour and tenderness – making it a popular choice for barbecuing.
  • Ribeye. Cut from the eye (the middle) of the forerib, ribeye steaks are marbled with a little bit more fat than most steaks, which makes them extra juicy and full of flavour.
  • Beef mince. If you’re nervous about cooking large cuts of meat on the barbecue, start with beef mince instead for easy family favourites. Burgers are a must-have and making your own at home means you can add different flavours and toppings, follow our easy video for the perfect grill.
  • Brisket. Brisket is from the shoulder and is generously marbled with flavourful fat which prevents it from drying out. As a firm hardworking cut, brisket benefits from long, slow cooking but that doesn't rule it out for barbecue cooking.
  • Top rump. Give your Sunday roast a summer makeover by c ooking a whole joint on the barbecue. Cuts such as top rump are great for roasting, but can be cooked on a barbecue to get that extra smoky flavour.

  • Slow Cooker Chicken Tortilla Soup. Share on Pinterest. • Slow Cooker Pulled Pork. Share on Pinterest. Cinnamon, dark brown sugar, chili powder, and cumin combine for a deliciously sweet-smoky flavor and the tender, juicy pork shreds apart like a dream.
  • Slow Cooker Burmese Chicken and Noodles. Share on Pinterest. Eva Kolenko. This Burmese chicken slow cooker dish is enhanced with coconut milk, paprika, turmeric, cayenne pepper, fresh ginger, and garlic.

  • Easy Slow Cooker Chili. Share on Pinterest. The flavor of this chili develops slowly as it cooks—you can make this recipe overnight and it only gets better the longer you let the flavors meld.
  • Slow Cooker Beef Goulash. Share on Pinterest. Rich beef short ribs flavored with sweet paprika, caraway, and coriander plus tender chunks of carrots and onion…this dish smells almost as good as it tastes.
  • Slow Cooker Cheesy Sausage Breakfast Casserole. Using the slow cooker to make breakfast? A perfect plan. This easy, cheesy casserole is studded with sage-spiced breakfast sausage and is the perfect make-ahead brunch dish.
  • The Best Slow Cooker Baked Beans. Bacon makes these beans better than the rest (though if you need to make them vegetarian or vegan, just leave it out and add a few drops of liquid smoke instead).
