Everyone loves these Chicken Patties, even the pickiest eaters! They are crisp on the outside with a juicy, cheesy center and it's a genius way to use leftover Rotisserie Chicken.

4 cups shredded chicken (from 2 large chicken breasts, (16 oz by weight))
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour
3 Tbsp fresh dill (finely chopped (or 1 Tbsp parsley))
3/4 tsp salt or to taste
1/8 tsp black pepper
1 tsp lemon zest (plus lemon wedges to serve)
1 1/3 cups mozzarella cheese (shredded)
2 Tbsp olive oil to saute (divided)
1 cup Panko bread crumbs

Steps:

  • In a large mixing bowl, whisk together: 2 eggs, 1/3 cup mayo, 1/3 cup flour, 3 Tbsp dill, 1/2 tsp salt, 1/8 tsp black pepper and 1 tsp lemon zest.
  • Add in shredded chicken and 1 1/3 cups shredded mozzarella then stir until chicken is well coated in batter.
  • Cover the bowl and refrigerate the mixture at least 30 minutes (this will help with forming patties). Use a trigger release ice cream scoop to divide into 12-15 cakes then form into 1/2-inch thick patties. Dip both sides in Panko crumbs.
  • Place a large non-stick skillet over medium heat. Add 1 Tbsp olive oil and half of the chicken patties. Sauté for 3-4 minutes per side until golden brown, adding more oil as needed. Repeat with remaining patties.
  • As soon as patties are off the heat, sprinkle with salt and squeeze fresh lemon juice over the patties. Serve warm.

1 onion, finely chopped
1 bunch fresh parsley, finely chopped
1 egg
2 cloves garlic, crushed, or more to taste
sea salt and freshly ground black pepper to taste
2 tablespoons mayonnaise
¼ cup all-purpose flour, or as needed
3 tablespoons vegetable oil

Steps:

  • Combine chicken, onion, parsley, egg, garlic, sea salt, and pepper in a bowl; mix well. Add mayonnaise and stir to combine; the mixture will be quite soft.
  • Place flour in a shallow bowl. Drop large spoonfuls of the chicken mixture into the flour. Roll to coat and press gently into patties.
  • Heat oil in a skillet over medium-high heat. Cook chicken patties in the hot oil until golden brown and no longer pink in the center, 5 to 7 minutes per side.

1 cup lemon juice
¼ cup vegetable oil
¼ cup vinegar
1 tablespoon dried oregano
2 teaspoons garlic powder
1 whole chicken, cut into pieces
salt and pepper to taste

Steps:

  • In a large glass bowl mix lemon juice, vegetable oil, vinegar, oregano, and garlic powder. Place chicken pieces in the bowl, and season with salt and pepper. Cover, and marinate in the refrigerator at least 1 hour.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • On the prepared grill, cook chicken until no longer pink and juices run clear. Periodically brush chicken with the remaining marinade mixture while cooking. Discard any leftover marinade.

Simply spiced ground turkey or chicken made into patties with seasonings readily available in most pantries. I used Ritz crackers and minced sweet onion instead of the onion flakes. You can cook these patties up to 2 days before serving. Wrap in plastic wrap and refrigerate until ready to cook. When you want to serve, microwave on HIGH for 30 to 45 seconds. Originally from a Family Circle magazine clipping. Excellent served with French Toast and fruit for breakfast or brunch. I have also made these patties into a breakfast sandwich with a fried egg and slice of cheese on top of a toasted English muffin.

1/2 cup butter flavored cracker, finely crushed (about 12 crackers,like Ritz)

3/4 teaspoon garlic salt or 3/4 teaspoon garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 tablespoon olive oil

Steps:

  • In a large bowl, mix ground turkey or chicken, crushed crackers, onion flakes, poultry seasoning, garlic salt or garlic powder, thyme, and black pepper.
  • Shape into six patties each about 1/2 inch thick and 3 inches in diameter or other size as desired. Adjust cooking time if changing size or thickness of patties.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add patties and cook on all sides for a total of 10 minutes or until nicely browned and internal temperature reaches 160 degrees Fahrenheit on an instant-read thermometer. Or,cut into one cooked patty to make sure it is no longer pink inside.

I'm really proud of this one. My hubby loves them with cheese and my Smoky & Spicy BBQ sauce in sandwiches. I just can't believe I came up with this recipe. The day I came up with it I didn't have egg, so I would say the egg is optional. The way you can have your crumbs stick a little better to the patties is by using a little bit of mustard. The end product won't look golden brown (especially without any oil and with the panko) but they will taste delicious and they will be healthy.

1 1/2 lbs ground chicken
2 -3 garlic cloves, pressed
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon sage, rubbed
1/2 teaspoon red chili pepper flakes
1/2 teaspoon paprika or 1/2 teaspoon Hungarian paprika
1/4 teaspoon cumin
1 cup panko breadcrumbs
1 egg

Steps:

  • Preheat oven to 375 degrees.
  • Combine onion powder, salt, sage, chili pepper flakes, paprika, and cumin and mix well.
  • Add garlic to the ground chicken mixed until combined.
  • Add your mixed spices to chicken and mix them in thoroughly.
  • Add 1/2 cup panko breadcrumbs reserve the other half.
  • Add egg and mix thoroughly.
  • On a flat surface spread the remaining breadcrumbs, make patties with the chicken and cover with the remaining breadcrumbs.
  • Place on a rack with a baking sheet under for the loose crumbs to fall. Discard fallen crumbs.
  • Bake at 375 degrees for 15 minutes, flip patties, and bake for an additional 7 minutes.

  • Bake chicken patties according to direction, usually about 17 minutes.

1 cup green giant valley fresh steamers niblets frozen corn, thawed
1/4 cup chopped fresh parsley
1/2 cup original Bisquick baking mix
3/4 cup milk
1/4 cup barbecue sauce
2 eggs
2 tablespoons barbecue sauce
3/4 cup French-fried onions
additional barbecue sauce, heated, if desired

Steps:

  • Heat oven to 400°F Spray 9-inch glass pie plate with cooking spray. Layer chicken, corn and 3 tablespoons of the parsley in pie plate.
  • In medium bowl, stir Bisquick mix, milk, 1/4 cup barbecue sauce and eggs with wire whisk or fork until blended. Pour into pie plate.
  • Bake 28 to 32 minutes or until knife inserted in center comes out clean. Brush 2 tablespoons barbecue sauce over top of pie. Sprinkle onions evenly over sauce.

3 cups shredded cooked chicken
1 1/2 cups plain breadcrumbs (or 10 finely crushed saltine crackers)
2 -3 slightly beaten eggs
0.5 (10 1/2 ounce) can cream of chicken soup
2 teaspoons onion powder (or more depending on taste)
2 teaspoons garlic powder (or more depending on taste)
1 tablespoon ground sage (or more depending on taste) or 1 tablespoon rubbed sage (or more depending on taste)
1 1/2 teaspoons dried parsley
1 teaspoon dried thyme
2 teaspoons salt
1 teaspoon pepper
1/4 cup oil (to fry in)

Steps:

  • In a large bowl, combine chicken and bread crumbs (or cracker crumbs).
  • Add 2 slightly beaten eggs.
  • In a small bowl, combine all spices including salt and pepper; mix well.
  • Add cream of chicken soup; blend well.
