1 ½ cups mashed banana (about 3-4 large ripe bananas)
2 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup unsalted butter (softened to room temperature)
3/4 cup granulated sugar
3/4 cup brown sugar (packed)
3 large eggs (at room temperature)
1 teaspoons pure vanilla extract
1 cup sour cream (at room temperature)
8 ounces full-fat cream cheese (room temperature)
1/2 cup unsalted butter (softened)
1 teaspoon pure vanilla extract
1/2 teaspoon salt
3-4 cups powdered sugar

Steps:

  • Preheat the oven to 350°F and grease a 9x13 inch pan. Set aside
  • To make the cake, mash the bananas with a potato masher or the back of a fork in a medium bowl and set aside.
  • In another medium bowl, whisk the flour, baking soda, baking powder, salt and cinnamon together. Set aside.
  • Using a stand mixer fitted with the paddle attachment of a handheld electric mixer, beat the butter on high speed until light and creamy, 1-2 minutes. Add the granulated sugar and brown sugar and beat on high speed again for -3 minutes until light and fluffy. Scrape down sides of the bowl as needed.
  • Add the eggs and the vanilla and beat on high speed until combined, another 1-2 minutes. Then add bananas and beat until combined, scraping down the sides of the bowl as needed.
  • Slowly add the dry ingredients into the mixture in three rounds, alternating with the sour cream until completely combined.
  • Pour batter into prepared pan and bake for 43-46 minutes. Cake will be done when a toothpick inserted in the center comes out clean.
  • Allow to cool completely before frosting.
  • To make the frosting, beat the cream cheese and butter on high speed until smooth and creamy, 2-3 minutes. Add the vanilla and salt and beat to combine. Add the powdered sugar one cup at a time, mixing well between each addition. Stop at 3 cups and add more sugar 1/8 cup at a time until you reach desired consistency.
  • Spread cream cheese on frosting cooled cake and top with extra bananas and cinnamon if desired.

Peels from 2 very ripe bananas, stem and very bottom discarded (see note)
1/2 cup unsalted butter, softened, plus more for buttering the pans
1 1/2 cups granulated sugar
2 large eggs, separated
1/2 cup buttermilk
1 2/3 cups cake flour, plus more (any type) for flouring the pans
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon fine-grain sea salt
1/2 cup unsalted butter
1 cup packed light or dark brown sugar
1/4 cup milk, 2 percent or higher
1 3/4 to 2 cups powdered sugar, sifted

Steps:

  • Heat the oven to 350 degrees F.
  • To make the cake: Cut the banana peels into 1-inch pieces and place them in a small saucepan with 1 cup of water. Bring to a boil over medium-high heat, then reduce the heat and simmer for 10 minutes. Remove the pan from the heat and allow the mixture to cool slightly, then drain the banana peels, reserving 1/4 cup of the cooking water.
  • Meanwhile, butter and flour the sides of two 8-inch round cake pans and line the bottoms with parchment paper. Butter and flour the pans again to coat the paper.
  • Transfer the peels and the 1/4 cup of cooking water to a tall, narrow container and puree with an immersion blender until completely smooth (a mini food processor would do the trick, too!).
  • Cream together the butter and sugar in a large bowl using an electric mixer (or a wooden spoon for an arm workout) until pale and fluffy, 3 to 5 minutes. Add the egg yolks one at a time, mixing until incorporated, and scraping down the sides of the bowl after each addition. Mix in the banana peel mixture, then stir in the buttermilk until well-combined.
  • In a medium-size bowl, whisk together the flour, baking soda, baking powder, and salt. Add the dry ingredients to the bowl with the butter mixture and stir gently, just until combined.
  • Put the egg whites in another bowl (make sure it's clean and dry!) and whisk until soft peaks form -- either by hand or with the whisk attachment on an electric mixer. If using an electric mixer, start slowly and gradually increase speed to medium-high. You're done when you pull out the whisk or beater and a soft peak is formed, but immediately collapses. Gently fold the egg whites into the batter and divide the batter evenly between the two prepared pans.
  • Bake, rotating the pans halfway through, until the tops are golden and a toothpick inserted into the center of each cake pulls out with dry crumbs rather than wet batter, about 25 minutes. Let the cakes cool completely in the pans.
  • When the cakes are completely cool and you're ready to assemble, make the frosting: Melt the butter in a medium saucepan over low heat. Stir in the brown sugar and cook, stirring constantly, for 2 minutes. Stir in the milk, raise the heat to medium-high and cook, stirring constantly until the mixture boils. Remove from the heat and let cool to lukewarm. Gradually whisk in 1 3/4 cups powdered sugar, beating until smooth. Add the additional 1/4 cup powdered sugar if the frosting is too loose. Use the frosting immediately, as it will begin to thicken and stiffen as it sits.
  • To remove the cake from the pans, invert one cake pan on a serving plate, lift pan, and peel the parchment. Repeat for the second cake pan. Put one layer of the cake on a serving platter and spread about one-third of the frosting evenly over the top. Set the other layer on top, and spread the remaining frosting over the top and sides of the cake.

1 cup granulated sugar
1/2 cup brown sugar (packed)
1/4 cup vegetable oil ( or light olive oil)
1 & 1/2 cups bananas (Three soft brown, mashed)
3 large eggs
3/4 cup buttermilk*
1/2 cup sour cream
2 teaspoons vanilla (I like Mexican vanilla)
1/2 teaspoon maple extract (optional)
2 & 1/2 cups flour (spooned and leveled)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon (optional)
1/8 teaspoon nutmeg (optional)
1/8 teaspoon cloves (optional)
1/2 cup butter (softened (1 stick))
1 and 1/2 (8-oz) packages cream cheese (softened)
2 teaspoons vanilla (I like Mexican vanilla)
1/2 teaspoon kosher salt
4 cups powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Line an 11x17 inch jelly roll pan** (OR a 9x13 inch pan, see note) with parchment paper, or spray generously with nonstick spray.
  • Make the cake. In a large bowl or stand mixer, beat 1/2 cup butter until it is smooth and creamy and there are no lumps. Scrape the sides as necessary.
  • Add 1 cup sugar and 1/2 cup packed brown sugar. Beat with the butter for 1 minute, scraping the sides and bottom of the bowl.
  • Add 1/4 cup oil. You can use canola oil, vegetable oil, or light tasting olive oil. Mix it in.
  • In another bowl or on a plate, use a fork to smash 3 large bananas (about 1 and 1/2 cups mashed). See photos. Add to the butter mixture.
  • Add 3 eggs, 3/4 cup buttermilk*, and 1/2 cup sour cream, 2 teaspoons vanilla, and 1/2 teaspoon maple extract. The maple is optional! I like the extra flavor it adds. Beat it all together until smooth, scraping the sides as necessary.
  • Add 2 and 1/2 cups flour to the mixture, but don't stir yet. Make sure you spoon and level the flour (don't pack it).
  • On top of the flour, add 1 teaspoon baking soda, 1 teaspoon baking powder, and 1/2 teaspoon salt. If you would like to add spices (it's optional) add 1/4 teaspoon cinnamon, and 1/8 teaspoon each cloves and nutmeg. You can of course add more spices if you want (I like to focus on the banana flavor, so I want the spices to just be an accent.) Use your teaspoon to stir the soda, powder, salt and spices into the flour a little bit.
  • Beat the flour mixture in, making sure to scrape the sides and bottom. Once it has come together and there are no streaks, stop mixing.
  • Pour the batter into the prepared pan and bake at 350 for 25-30 minutes. You will know the cake is done when a toothpick inserted in the center comes out with no wet batter on it. The edges will pull away from the sides of the pan. Don't over bake! No one likes dry cake.
  • Remove from the oven and set on a wire rack to cool completely.
  • Meanwhile, make the cream cheese frosting. In a large bowl or stand mixer, beat together 1/2 cup softened butter and 12 ounces total softened cream cheese. (This is one 8-ounce package, plus another half package.) Beat well, scraping the sides and bottom of the bowl, until smooth and creamy. There should be no lumps at all!
  • Add 2 cups of powdered sugar. Beat well.
  • Add 2 teaspoons vanilla and 1/2 teaspoon kosher salt.
  • Add the remaining 2 cups of powdered sugar and beat well, scraping the sides.
  • When the cake is completely cool, spread the cream cheese frosting to the edges of the cake.
  • Slice and serve! Store leftovers covered on the counter. You can also store it in the fridge, chilled banana cake is pretty amazing.

Best Ever Banana Cake With Cream Cheese Frosting image

This is one of (if not) the BEST banana cake I have ever tasted! I thought the oven temp of 275° sounded a little low, but this cake baked up (and rose) beautifully in my oven at this temp after pretty much exactly one hour. I do not know if the little "freezer trick" to this recipe is what ensured its moistness or not, but I did it, and it was exceptionally moist & delicious. Would be interesting to see if it still came out as great if this step was skipped. All I know is that I followed this recipe EXACTLY as stated (except that I had no buttermilk, so I subbed with a mix of lemon juice & milk) and I got exceptional results. So moist and yummy...a dense cake, similar in texture to a carrot cake... I personally would not call this frosted banana bread :o) Depending on the amount of frosting you like you can decide whether to half the recipe or not. I used the full recipe and had some leftover. I sprinkled on the chopped walnuts and threw this baby in the fridge and cut it the next day...TO DIE FOR! I really liked it slightly chilled, but great at room temp too! It got better each day it sat, I always make this cake at least the day before I need or want it. I was extremely pleased with this cake and will be making it over & over again!! So glad I came across this one!! (on another website). (* * Just to update the recipe, (based on some of the reviews), the baking time may vary based on individual ovens. 200g golden caster sugar
300g ripe bananas (2 medium), peeled
125ml flavourless oil like sunflower or grapeseed
4 eggs
125g wholemeal or rye flour
100g plain flour
1 tsp cinnamon
3 tsp baking powder
100g white chocolate chips or chopped walnuts (optional)
100g unsalted butter, softened
100g icing sugar, sieved
200g full-fat cream cheese
large pinch cinnamon

Steps:

  • Line a 25 x 20cm traybake tin with baking parchment and heat the oven to 190C/170C fan/gas 5. Tip the sugar, bananas, oil and eggs into a large bowl and whisk them together. If your bananas are very ripe then you can use a balloon whisk for this, or use a fork to mash. Add the flours, cinnamon and baking powder and whisk the mixture until everything is just combined - don't take too long over this bit as the baking powder will have started to activate. Stir in the chocolate chips, if using, and scoop the mixture into your tin. Bake for 30-40 mins or until the sponge is firm and springy to the touch and lightly browned on top. Cool in the tin.
  • To make the frosting, beat the butter until it is really soft then beat in the icing sugar. Use a spatula to fold in the soft cheese, making sure it is all thoroughly mixed in. Don't be tempted to beat the mixture, this will make it runnier.
  • Lift the cake carefully out of the tin, peel off the paper and transfer it to a plate or board. Spread over the frosting, making it as neat or messy as you like. Lightly dust the top with cinnamon - use a tea strainer to help with this if you have one. Cut into pieces to serve. Will keep for up to 3 days in an airtight container.

1/2 teaspoon salt
CREAM CHEESE FROSTING:
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
Dash salt
Sliced banana, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Add bananas and milk; mix just until combined. Combine flour, baking powder, baking soda and salt. Add to creamed mixture just until blended., In another bowl, beat egg whites until soft peaks form. Fold into batter. Pour into a greased 13x9-in. baking pan. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool completely on a wire rack., In a large bowl, beat cream cheese and butter until fluffy. Add the confectioners' sugar, vanilla and salt; beat until smooth. Spread over cake. Store in the refrigerator. If desired, serve with sliced bananas.
