- Cut a long rectangle through the top of the baguette and partially unstuff the baguette.
- Line the bottom of the inside with Mozzarella cheese, spoon pizza sauce on top of the cheese, add another layer of cheese, then lay the pepperoni slices on top and tuck the edges inside the bread.
- Bake for 25 minutes at 350˚F (175˚C).
- Cut and serve while still warm.

- Then add fresh basil, fresh crumbled mozzarella, and sliced baby tomatoes.

- In large bowl, mix first 4 ingredients.
- Mix water and oil; add to flour mixture.
- Turn onto floured surface; knead for 2 minutes.
- Place in a greased bowl; turning to grease top.
- Cover and let rise for 20 minutes.
- Punch down; place on 12in, greased pizza pan.
- Pat into a circle.
- Topping: Mix first 5 ingredients and spread over crust.
- Put a few pepperoni slices on top of sauce.
- Sprinkle with 1/2 the mozzeralla; 1/2 the monterey jack, and 1/2 the parmesan.
- Put the rest of the pepperoni on.
- Repeat the cheese layer.
- Bake at 400* for 20 minutes or until light brown.

- Heat water to 105-110 degrees Fahrenheit. Then add sugar and yeast. Proof.
- In the bowl of a standing mixer place the flour and salt.
- Then add the proofed yeast to the flour mixture.
- Mix on medium speed for 5-7 minutes. Form into ball and let rise for an hour.
- After the dough has risen, cut and roll into 3 baguettes. Place on a baking sheet or baguette tray. Let rise for about 45 minutes to an hour.

- "Bloom" the yeast by sprinkling the sugar and yeast in the warm water. Let sit for 10 minutes, until bubbles form on the surface.
- In a large bowl, combine the flour and salt. Make a well in the middle and add the olive oil and bloomed yeast mixture. Using a spoon, mix until a shaggy dough begins to form.
- Once the flour is mostly hydrated, turn the dough out onto a clean work surface and knead for 10-15 minutes. The dough should be soft, smooth, and bouncy. Form the dough into a taut round.
- Grease a clean, large bowl with olive oil and place the dough inside, turning to coat with the oil. Cover with plastic wrap. Let rise for at least an hour, or up to 24 hours.
- Punch down the dough and turn it out onto a lightly floured work surface. Knead for another minute or so, then cut into 4 equal portions and shape into rounds.
- Lightly flour the dough, then cover with a kitchen towel and let rest for another 30 minutes to an hour while you prepare the sauce and any other ingredients.
- Preheat the oven as high as your oven will allow, between 450-500˚F (230-260˚C). Place a pizza stone, heavy baking sheet (turn upside down so the surface is flat), or cast iron skillet in the oven.
- Meanwhile, make the tomato sauce: Add the salt to the can of tomatoes and puree with an immersion blender, or transfer to a blender or food processor, and puree until smooth.
- Once the dough has rested, take a portion and start by poking the surface with your fingertips, until bubbles form and do not deflate.
- Then, stretch and press the dough into a thin round. Make it thinner than you think it should be, as it will slightly shrink and puff up during baking.
- Sprinkle semolina onto an upside down baking sheet and place the stretched crust onto it. Add the sauce and ingredients of your choice.
- Slide the pizza onto the preheated pizza stone or pan. Bake for 15 minutes, or until the crust and cheese are golden brown.
- Add any garnish of your preference.

It has taken me a while to find a good baguette recipe. Many are very complicated and take a long time to make and others aren't a true baguette at all (too soft, more like a white bread). I was very pleased with this recipe that I found on kingarthurflour.com and I love how easy it is! Make sure to start this the evening before you want the bread. Prep time includes rise times.

- Place all ingredients in bowl of a stand mixer.
- Mix well, then knead using the dough hook for about 2 minutes.The dough will be very sticky.
- Place in a very large (it will almost triple in size) greased bowl.
- Let sit at room temperature for 2 hours, then refrigerate overnight.
- You can use the dough at any point in the next 7 days. When you are ready, take out about a pound of dough and roll it into an oval.
- Fold the dough in half the long way and seal edges with the heel of your hand.
- Flatten dough into an oval and fold again.
- Gently roll dough with hands to form into a classic baguette shape, about 15 inches long.
- Let rise on a baking sheet sprinkled with cornmeal (or greased) for 90 minutes.
- Make 3-4 large diagonal slashes on the top, using a serrated knife at a 45 degree angle.
- Spritz with warm water to help give the bread a crispy exterior.
- Bake at 450 degrees for 25-30 minutes.
