Serve this empanada pie with a salad, hard-boiled eggs, salsa or sour cream, and shredded Mexican cheese (optional).

cooking spray
1 medium onion, quartered
3 cloves garlic
2 tablespoons canola oil
1 (8 ounce) package mushrooms, chopped
½ cup pitted Kalamata olives
1 tablespoon dried oregano
2 ½ teaspoons paprika
1 teaspoon ground cumin
½ teaspoon crushed red pepper flakes
⅛ teaspoon ground black pepper, or to taste
1 pound 90% lean ground beef
1 (15 ounce) package pie crusts
1 small egg
1 teaspoon water

Steps:

  • Place onion in a food processor and process to a medium chop. Use a garlic press to add garlic to the chopped onion.
  • Preheat a saute pan over medium-high heat. Add oil, onion, and garlic to the hot pan. Reduce heat to medium and saute until golden, about 5 minutes.
  • Place mushrooms in the food processor and process to a medium dice. Stir into the onion mixture and cook for 3 to 4 minutes. Meanwhile, process olives to a fine mince and set aside.
  • Add oregano, paprika, cumin, red pepper flakes, and pepper to the pan; cook and stir until fragrant, 1 to 2 minutes. Crumble in ground beef and cook, breaking up with a spoon or spatula, until thoroughly browned, 5 to 8 minutes. Stir in olives. Remove from heat and cool for 20 to 30 minutes, stirring occasionally.
  • Preheat the oven to 425 degrees F (220 degrees C). Spray a 9-inch pie plate with cooking spray. Line the plate with 1 pie crust.
  • Carefully spoon the cooled beef mixture into the crust. Press the second crust on top. Slice air vents in the top crust.
  • Beat egg and water together in a small bowl. Brush egg wash thoroughly over the complete surface of the pie.
  • Bake in the preheated oven until crust is golden brown, 45 to 50 minutes. Let cool for 5 to 10 minutes before cutting and serving.

1 lb. new potatoes
1 cup KRAFT Shredded Cheddar Cheese
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
4 OSCAR MAYER Wieners, chopped
2 green onions, chopped
1 pkg. (15 oz.) ready-to-use refrigerated pie crusts (2 crusts)
1 egg, beaten

Steps:

  • Heat oven to 425ºF.
  • Cook potatoes in boiling water in large saucepan 15 min. or until tender; drain. Mash potatoes. Stir in cheese, sour cream, wieners and onions.
  • Place 1 crust on baking sheet; top with potato mixture, spreading to within 1 inch of edge. Cover with remaining crust; seal edge with fork. Brush with egg.
  • Bake 30 min. or until golden brown. Cool 5 min. before cutting into wedges to serve.

Quick and Easy Empanadas image

This is such a simple recipe w/ just a few ingredients I almost always have on hand. It's a quick dinner w/ a green salad. You can double this easily for make ahead lunches.

Number Of Ingredients 8

1 lb ground beef
1 garlic clove
1 teaspoon salt
1 (15 ounce) can fresh cut corn, drained
1/2 cup chopped onion
8 ounces grated cheddar cheese
1 cup salsa
2 (16 ounce) cans large refrigerated biscuits (I use buttermilk, and you may only use 1 and 1/2 cans depending on how full you make them)

Steps:

  • Brown the ground beef in a frying pan adding the salt and pepper just before done.
  • Let the beef cool.
  • In a large bowl mix the corn, onions, cheese, and salsa, then add the cooled beef mixing carefully so not to break up all the cheese.
  • Roll the biscuits out flat to about 2-1/2 times their size.
  • Place approx 1/3 cup filling on one side of the center of the circle lengthwise.
  • Fold the dough over the filling like a turn over and crimp the edges like a pie crust. Be careful not to tear the dough, and to seal the edges completely or your filling will come out! depending on how much filling is used will determine how many biscuits you will use.
  • Place on slightly greased cookie sheet and bake at 375 till lightly browned.

  • In a bowl mix 2 cups of the Maseca corn dough with 1 1/2 cups water and mix well with your hands. The dough will start to form. Form 2 or 3 inch balls with your hands, you will yield about 10- 12 balls. Set aside on a platter and cover with a moist paper towel to prevent balls from drying out while you prepare your chicken mixture.
  • In a frying pan over medium heat, add the 2 tablespoons of oil and onion. Cook for about 5 min or until onions are translucent. Add tomatoes and garlic, cook for a minute. Add chicken, chipotle peppers, cumin, chicken powder and cilantro. Mix well together and add salt and pepper to taste. Cook all together for about 5 minutes.Note: If mixture is dry, you can add a few tablespoons of water to moisten. Turn stove off and set pan aside, let chicken cool off. Chicken must be cool before putting in empanada dough or your dough may fall apart.
  • While chicken is cooling off, make your sauce for your empanadas. Add all sauce ingredients to a blender or chopper. Add the plain yogurt, mexican crema or sour cream with chipotle peppers, lime juice and salt to taste. Blend well. Set aside. Note: You can also leave the seeds in peppers for extra heat.
  • Now to form the empanadas. With scissors, cut open a ziploc bag on both sides to make one long piece or you can cut to form 2 separate pieces. Now get a pie bowl or heavy skillet.
