APPLE PIE
Kids will love to help make and eat this comforting, classic fruity pudding with homemade shortcrust pastry

Steps:
- Heat oven to 200C/180C fan/gas 6. To make the pastry, sift the flour into a large mixing bowl and add the butter or margarine. Using your fingers, mix together until the mixture resembles breadcrumbs.
- Add about 3 tbsp cold water - 1 tbsp at a time - to bind the mixture into a ball. Then wrap it in cling film and leave to chill in the fridge while you prepare the apples, or for 30 mins if you have time.
- While the pastry is chilling, core the apples, then cut into even-sized chunks so they all cook in the same amount of time. Put the apples into the pie dish, drizzle over the honey and add the cinnamon, mixed spice and about 2 tbsp water.
- Roll out the pastry on a floured work surface until it is large enough to cover the pie dish. Using the rolling pin, carefully lift the pastry and lay it over the top of the apple mixture. Carefully trim off the excess pastry (this can be rerolled and cut into shapes to decorate the pie crust if you like) and press the pastry edges onto the dish to create a seal.
- Make a small cut in the pastry so that the air can escape during cooking, then brush with beaten egg to glaze.
- Bake the pie in the oven for 20-30 mins until the pastry is golden and sandy in appearance and the apple filling is bubbling and hot. Serve while still warm with crème fraîche, ice cream or natural yogurt.

DRIED APPLE PIE
Another easy to make recipe (my favorite kind). I love good recipe, but I like them to be easy. Prep time includes standing time for apples and juice. All else can be mixed while waiting on the apples to stand in the juice.

Steps:
- Heat juice or cider to a boil and pour over dried apples; let stand for 1 hour.
- Cook apples in juice for 10 to 15 minutes or till tender.
- Stir remaining ingredients together.
- Add to apples and mix well.
- Put prepared pie crust in a 9-inch pie pan.
- Pour prepared apple mixture into crust.
- Top with 2nd crust.
- Brush with milk and sprinkle with sugar.
- Bake at 400° for 50 minutes or till done.
EASY AS APPLE PIE
Steps:
- Place bottom crust in pan. Add apples, sprinkle with sugar and nutmeg. Top with butter, place top crust over and vent with a few holes poked in pastry top. Bake 375 degrees for one hour.

- 1. Preheat oven to lowest temp.-On my oven, this is 170F. (If your oven won't go lower than 200F, don't try this method. Any higher than 200F and this probably won't work well)
- 2. Add the lemon juice to the water in a shallow dish.
- 3. Core and slice apples into rings or slices. Slice about 1/8in. if you want thin apple "chips". Slice about 1/4in. for thicker chewier slices. This is definitely easier with a mandolin type slicer(I used the Pampered Chef simple slicer), or food processor, but a sharp knife and patience would work, too!
- 4. As you slice, place the apple slices into the water/lemon juice.
- 5. Place the apple slices, in a single layer on cooling racks that have been placed on baking trays*. (No need to drain or dry them, just shake off the excess liquid and put them right on the tray.) Pop in the oven and ignore for the next 7-8 hrs. (It is helpful to prop the oven door open a couple of inches while the apples are drying, to let moisture escape.)When apples have reached desired dryness, turn off the oven and leave for another 30-60 min. Remove, cool, and store in airtight container.
- 6. *You could do this without the cooling racks, but I think you would probably need to flip the apple slices half way through the drying time.

Steps:
- Preheat oven to 350 degrees.
- Soak the dried apples in water overnight.
- Drain off the water and mix the apples with the sugar, cinnamon, and allspice.
- Line an 8-inch pan with one of the pie crusts and add the apple mixture.
- Dot with the butter and cover with the second crust.
- Slash the top of the pie for ventilation.
- Bake in the oven for about an hour, or until the crust turns golden brown.
