EASY APRICOT CAKE RECIPE
Apricot Cake is so easy to make from scratch! This simple but so flavorful cake is topped with fresh apricots and is perfect for summer entertaining.

- Preheat oven to 350°F (180°C) and grease the bottom and sides of a 9-inch springform pan with baking spray or butter. Set aside.
- Using a food processor, blender, or immersion blender puree half of the apricots with the lemon juice and set aside.
- Quarter remaining apricots and set aside.
- In the bowl of a stand mixer fitted with the paddle attachment cream butter and sugar together at medium-high speed until light and fluffy, about 4-5 minutes.
- Add eggs, one at a time. Then add vanilla extract and beat until combined.
- In a small bowl combine flour, baking powder, cinnamon, and salt. Add to the mixture and beat until just combined.
- Add pureed apricots to the batter and beat until just combined.
- Transfer batter to the prepared springform pan. Distribute the quartered apricots evenly on top of the batter and bake for 55-60 minutes or until a skewer inserted in the center comes out clean with only a few crumbs attached.
- Let cool then dust with powdered sugar.

COOKIE BUTTER AND APRICOT ICEBOX CAKE
Consider this no-bake dessert the layered cheesecake of your dreams. It's simple to make, but packed with complex flavors -- alternating bites of cookie butter-cream cheese, speculoos cookies (think spiced shortbread meets a biscuit cookie) and apricot preserves. A little extra plastic wrap helps you unmold the cake easily.

- Line an 8-by-8-inch baking dish with plastic wrap, leaving about 2 inches of overhang on all sides. Stir together the apricot preserves and 1 tablespoon water in a small bowl. Set aside.
- Combine the cookie butter, sugar and cream cheese in a large bowl and beat with an electric mixer until smooth, about 2 minutes. Scrape down the sides of the bowl as needed. Add the cream and continue to beat, starting on medium speed until the cream and cookie butter mixture are combined and then increasing the speed to medium high, until very stiff peaks form, about 3 minutes.
- Spread a quarter of the cookie butter-cream on the bottom of the prepared baking dish. Evenly dollop with 3 tablespoons of preserves. Arrange 10 cookies on top of the preserves, breaking some up into little pieces to fill in the gaps. Repeat this layering process 2 more times, each time with a quarter of the cookie-butter cream, 3 tablespoons of the preserves and 10 cookies. Make a final cookie butter-cream layer with the remaining mixture. Cover with plastic wrap and refrigerate for at least 8 hours and up to 12. Refrigerate the remaining preserves.
- Once completely chilled, remove the plastic wrap from the top of the icebox cake and invert onto a platter. Remove the rest of the plastic wrap. Lightly crush the reserved cookies and sprinkle on top of the cake. Drizzle the remaining preserves over the cookie crumbles.
EASY APRICOT PRESERVES CAKE
This recipe makes 2 round 8 or 9 inch single layer cakes. You can use any preserves you like but it works best if there are lots of fruity chunks in the preserves. - 1. Butter two 8 or 9 inch cake pans well. Pour 1/2 of preserves into each pan and spread evenly. Sprinkle nuts (if using) evenly over preserves. Set pans aside. Mix cake as directed on package. Use all ingredients called for on package. Gently pour 1/2 of cake mix into each pan, being careful not to disturb fruit. Bake as directed on package.
- 2. When cakes are done remove from oven and let cool for 10-15 minutes. Invert pans onto serving plates. If any fruit sticks to pans scrale from pan and spread on cake. Continue to cool. Serve cake with whipped topping if desired.
- 3. NOTE: For best results use preserves that have more fruit than syrup. I believe any flavor can be used as long as it is not too syrupy.

- Place egg whites in a small bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. Drain apricots, reserving 3 tablespoons syrup (discard remaining syrup); set aside., Place butter in a 9-in. square baking dish. Place in oven 3-4 minutes or until butter is melted; swirl carefully to coat evenly. Sprinkle with brown sugar. Arrange apricot halves in a single layer over brown sugar, cut side up., In a small bowl, whisk flour, baking powder and salt. In a large bowl, beat egg yolks until slightly thickened. Gradually add sugar, beating on high speed until thick and lemon-colored. Beat in reserved apricot syrup. - In a large bowl, combine the first six ingredients; beat on low speed for 30 seconds. Beat on high for 2 minutes. Pour into two greased and floured 9-in. round baking pans. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. - Preheat oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray.
- Mix brown sugar and melted butter in a small bowl and spread evenly over the pan.
- Pat the apricot slices with a paper towel to soak up any excess liquid. Line them on the bottom of the pan.
- Sift flour, baking powder, salt, and cinnamon together in a bowl.
- Beat white sugar and softened butter in a bowl using an electric mixer until creamy and fluffy. Beat in eggs until thoroughly mixed. Add the flour mixture, sour cream, water, and vanilla extract. Beat well. Spread the batter evenly into the prepared pan.

FRESH APRICOT UPSIDE-DOWN CAKE
Steps:
- Preheat oven to 375°F.
- Make topping:
- Heat butter in skillet over moderate heat until foam subsides. Reduce heat to low and sprinkle brown sugar evenly over butter, then cook, undisturbed, 3 minutes (not all of sugar will be melted). Remove skillet from heat and arrange apricot halves, cut sides down, close together on top of brown sugar.
- Make cake batter:
- Sift together flour, baking powder and soda, and salt into a small bowl.
- Beat together butter, sugar, and extracts in a large bowl with an electric mixer at medium speed until pale and fluffy, 2 to 3 minutes in a standing mixer or 3 to 4 minutes with a handheld. Beat in eggs 1 at a time, then beat until mixture is creamy and doubled in volume, 2 to 3 minutes.
- Reduce speed to low and add flour mixture in 3 batches alternately with buttermilk, beginning and ending with flour mixture, and beat just until combined.
- Gently spoon batter over apricots and spread evenly.
- Bake cake:
- If your skillet isn't ovenproof, wrap handle with heavy-duty foil (or a double layer of regular foil) before baking. Bake cake in middle of oven until golden brown and a wooden pick inserted in center comes out clean, 40 to 45 minutes.
- Wearing oven mitts, immediately invert a large plate over skillet and, keeping plate and skillet firmly pressed together, invert cake onto plate. Carefully lift skillet off cake and, if necessary, replace any fruit that is stuck to bottom of skillet. Cool to warm or room temperature.
