FIVE EASY APPETIZERS WITH CHEDDAR CHEESE

Steps:
- Spread some hummus on each endive leaf and add a thin slice of roasted garlic cheddar on top of the hummus.
- Toast your baguette slices in a hot oven until golden. Add a shaved slice of two year old cheddar and a pitted green olive
- Slice the garlic dill cheese into small cubes and add to a bowl. Add the diced melon and salami and toss. Place into individual small cups and drizzle with oil and pepper flakes.
- Discard the pit from each date and stuff with a small cube of cracked peppercorn cheddar. Place in a preheated 350° oven for 10 minutes. Drizzle with honey and chopped rosemary.
- Slice the apple into 1 inch dice along with the Spicy Jack cheddar. Place a slice of rolled up Copa salami onto a cocktail stick followed by an apple cube and cheddar cube. Drizzel with hone if desired.
EASY APPETIZER: FRIED CHEDDAR CHEESE BITES

Steps:
- Heat skillet to medium-high heat. Add butter and swirl it to coat the pan.
- Drop about ½ tablespoon of shredded cheese into the pan, arranging in a circle approximately 1 inch in diameter.
- Fry for 2-4 minutes, until the cheese is crispy and golden brown on the bottom.
- Flip and cook for an additional 1-2 minutes on the other side.
- Serve immediately while still crispy.

- Place 1/4 cup flour in a large resealable plastic bag. Add cheese curds, a few pieces at a time, and shake to coat. , In an electric skillet or deep fryer, heat oil to 375°. BROCCOLI CHEESE BITES
These cheesy, deep fried broccoli snacks are so tasty, and great for parties. Everyone loves them.

Steps:
- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- Place broccoli in a medium saucepan with 1 cup boiling water. Return to a boil. Cook covered until firm but tender, about 5 minutes.
- In a medium saucepan over low heat, melt the Cheddar cheese. Mix in the broccoli. Allow the mixture to cool and thicken approximately 15 minutes.
- In a medium bowl, mix the bread crumbs, salt and pepper. Spread the mixture onto a large piece of wax paper.
- Form the broccoli cheese mixture into balls and roll in the bread crumb mixture until thoroughly coated.
- Deep fry the balls until golden brown, about 5 minutes. Drain on paper towels.

CHEESE BITES (TOTALLY ADDICTIVE)
Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Steps:
- Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
- Roll dough into 1 inch balls and place on an un-greased baking sheet.
- If using olives, form each ball around 1 olive.
- If using pecans, press 1 pecan half onto each ball.
- Can bake them right now (see instructions below) or freeze for later.
- Place in trays in freezer for 30 minutes.
- Remove from freezer and place in freezer bags or container.
- Seal and freeze.
- Can bake them straight from freezer.
- Preheat oven to 425°F.
- Place cheese balls 3 inches apart on an un-greased baking sheet.
- Bake 15-17 minutes if frozen, 13-15 minutes if thawed.
