Easy 3 Hour Quick Dinner Rolls image

Yeast dinner rolls that are easy and quick to make. The finished rolls are feathery light with a delicious taste and fluffy texture.

Number Of Ingredients 9

1 1/2 cups distilled water (divided at room temperature)
1 teaspoon sugar
3 teaspoons instant yeast
3 1/2 cups unbleached all-purpose flour (will need more for dough board)
1 1/4 teaspoon salt
1 Tablespoon sugar
2 Tablespoons unsalted butter (melted)
1 Tablespoon extra virgin olive oil
1 egg white beaten with 1 Tablespoon water

Steps:

  • Put the kneader attachment onto the stand mixer.
  • In the stainless steel bowl of a stand mixer, dissolve the yeast with 1 teaspoon sugar and 3/4 cup distilled water, at room temperature.
  • In another bowl whisk together the 3 1/2 cups flour, salt, 1 Tablespoon sugar.
  • Add the dry ingredients on top of the yeast mixture.
  • Start the mixer on low speed and start to pour about 1/2 up of the remaining distilled water into the bowl as it is kneading. Save the remaining 1/4 cup water in case the dough is too dry.
  • Add the butter and the olive oil to the dough as the mixer is kneading.
  • If dough seems too dry, add water 1 Tablespoon at a time.
  • Total kneading time should take about 8 minutes. when finished kneading the dough, it should feel soft but semi-sticky and smooth. It should only slightly stick to you hands when removing from the bowl.
  • Do not add too much flour or the buns will be heavy.
  • Remove the dough to a very lightly floured surface; cover with a clean tea towel (not terrycloth) and let rest 5 minutes.
  • Shape into a ball (the dough will come together nicely after resting).
  • Place into a large greased deep container.
  • Cover and let rise in a warm place for about 60-90 minutes.
  • To check if the dough is ready to be punched down, very gently stick two fingers about 1/2-inch into the dough, the dough is ready when the finger marks remain.
  • Punch down dough and slice in half.
  • Slice each half into 6 even pieces. (12 total)
  • Shape each piece into a round ball.
  • Place balls spacing well apart onto a large oiled parchment lined baking sheet.
  • Cover and let rise 30-40 minutes.
  • Right before placing in oven, lightly brush with beaten egg white.
  • Bake at 375 F. for about 22 minutes or until light golden brown.

1 envelope Fleischmann's® RapidRise Yeast
2 tablespoons sugar
½ teaspoon salt
½ cup milk
¼ cup water
2 tablespoons butter OR margarine

Steps:

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

1 cup water (110 degrees F)
2 packages yeast (Do not use the quick rising in this recipe)
1/2 cup butter, melted
1/2 cup sugar
3 eggs
1 teaspoon salt
4 1/4 cups flour

Steps:

  • Combine water and yeast in lg bowl; let stand for 5 minutes.
  • With wooden spoon, stir in butter, sugar, eggs and salt.
  • Add flour, 1 cup at a time and beat in as much as you can.
  • (you will probably be able to use all the flour) Cover and refrigerate for at least 2 hours, or up to 3 days.
  • Grease a 13x9 baking pan.
  • Turn dough out onto floured surface.
  • Divide into 24 equal pieces.
  • Roll each piece into a smooth round ball.
  • Place in rows in prepared pan.
  • Cover and let rise for 1 hour; until doubled.
  • Heat oven to 375*.
  • Bake until golden brown, about 17 minutes.

3 1/2-4 1/2 cups flour
3 tablespoons sugar
5 teaspoons yeast
1 teaspoon salt
1 cup milk
1/2 cup warm water
1/4 cup butter

Steps:

  • Preheat oven to 425.
  • In a large bowl combine 1/2 of the flour with sugar, yeast and salt. Stir until mixed. In microwave heat milk until just under the boiling point. Pour into dry mixture. Melt butter, combine with water and add to flour mixture; stir until combined. Add remaining flour while stirring until dough leaves the sides of bowl and forms a ball. Turn dough out on a lightly floured board and knead in enough remaining flour until dough is smooth and elastic.
  • Wash out bowl and grease inside with oil. Placedough in greased bowl to rise. Cover with plastic wrap and a towel. Run 2 inches of very warm water in sink. Place bowl in water to speed rising. Allow to rise for 15 minutes.
  • Divide and shape dough as desired. Cover and let rise another 15 minutes. Bake at 425 degrees for 12-15 minutes or until golden brown.

I made these one time to go with soup that we were having for dinner. I made the dough balls too big and/or let them rise too much and they ended up being huge, but they were good and they were easy to make.

1 cup very warm water
2 tablespoons very warm water
1/3 cup oil
1/4 cup sugar
2 tablespoons yeast
1 teaspoon salt
1 egg, beaten
3 -4 cups flour

Steps:

  • Mix warm water, oil, sugar and yeast; let rest for 10 minutes until yeast activates.
  • Add salt and beaten egg; blend well.
  • Add flour, one cup at a time until soft dough if formed.
  • Knead on a floured surface 5-10 minutes or until dough is smooth and elastic.
  • Shape into small balls (walnut sized) and put into a greased baking pan.
  • Let rise at least 5-10 minutes.
  • Bake at 425 degrees for 15-20 minutes.

1 cup warm water (105 F to 115 F)
2 (1/4 ounce) packages active dry yeast (4 1/2 teaspoons)
1/2 cup butter, melted
1/2 cup sugar
3 eggs
1 teaspoon salt
4 -4 1/2 cups all-purpose flour
additional melted butter (optional)

Steps:

  • Combine the warm water and yeast in a large bowl.
  • Let the mixture stand until yeast is foamy, about 5 minutes.
  • Stir in butter, sugar, eggs and salt.
  • Beat in flour, 1 cup at a time, until dough is too stiff to mix with a spoon (some flour may not be needed). At this point, use dough hook or knead on floured surface for 10 minutes until dough is smooth.
  • Place in a greased bowl and cover. Let rise until doubled, or at this point it can be refrigerated for up to 4 days.
  • Grease one 16.5x12-inch or two 12x9-inch baking pans.
  • Turn the chilled dough out onto a lightly floured board.

  • Cover and let dough balls rise until double in volume, about 1 hour. (Remember if you are using dough that has been refrigerated and is cold this step will take longer).
  • Preheat oven to 375°F Bake until rolls are golden brown, 15-20 minutes.
  • Brush warm rolls with melted butter, if desired.
  • Break rolls apart to serve.
