JOHNSONVILLE EASTER BREAKFAST CASSEROLE
I found this in the Sunday ads this morning and plan to make this for breakfast Easter morning. Prep time does not include overnight refrigeration.

Steps:
- Cook sausage according to package directions. Cool slightly, cut into 1/4 inch slices. Place English muffin cubes in the bottom of a greased 13x9 baking dish Drizzle with butter. Layer with sausage, cheese, onion and bell pepper. In a large bowl, combine the eggs, milk, salt and pepper. Pour over cheese. Sprinkle with bacon, cover and refrigerate overnight.
- Remove from the fridge 30 minutes before baking. Uncover and bake 350 for 45-50 minutes or until a knife inserted in the center comes out clean. Let stand.

- Grease 9 x 13 glass pan.
- Mix bread with melted butter.
- Add cheese, ham or sausage, and mushrooms.
- Place in baking dish.
- Mix and beat eggs.
- Add milk and seasonings.
- Pour over mixture in pan.
- Cover with foil.
- Refrigerate overnight.
- Bake 1 hour @ 325° with foil removed.
- Remove from oven.
- Let stand for 10 minutes.
- Do not overbake.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch casserole dish.
- Fry the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain on a paper towel-lined plate. Crumble.
- In a large bowl beat together eggs and milk. Mix in cheese, bacon, onion and green pepper. Stir in the thawed hash browns. Pour mixture into prepared casserole.
- Cover with aluminum foil and bake in preheated oven for 45 minutes. Uncover and bake for another 30 minutes until eggs have set.

- Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan. , Add onion and chopped peppers to drippings; cook and stir over medium-high heat until tender, 6-8 minutes. In a large bowl, whisk eggs and ricotta. Stir in riced cauliflower, shredded cheeses, bacon, onion mixture, pepper and salt. Pour into a greased 13x9-in. baking dish. - Preheat oven to 350°F.
- Place cheese in a large bowl and toss to combine.
- Place half of the cheese blend in the bottom of a 13x9 casserole and spread evenly.
- In a medium skillet, melt butter, add mushrooms, green onions, and peppers cooking until onion and pepper are tender.
- Arrange vegetables over cheese evenly.
- Arrange ham or sausage over vegetables evenly.
- Add remaining cheese evenly over meat.
- Lightly spoon flour into measuring cup; level off.
