Was craving bread pudding today and realized that I had bought Cinnamon Raisin Bread, so of course I just had to give it a try - ingredient amounts are guesstimated.

Steps:
- Preheat oven to 400°F.
- Slice your raisin bread into cubes and set aside in 9X9 oven proof dish (buttered).
- Mix all other ingredients into bowl and mix until well blended.
- Pour milk/egg/sugar mixture over bread cubes and let sit about 1/2 hour - or until all liquid has absorbed into bread cubes.
- Turn down oven temperature to about 350°F and place baking dish into oven and bake until golden brown and a toothpick inserted comes out clean and dry.
- Sprinkle top with extra sugar and cinnamon if desired and enjoy right out of oven with little milk or cream poured over top, or let cool and enjoy!

- Preheat oven to 350°F.
- Whisk together eggs, milk, Splenda® Granular, cinnamon, and vanilla in a large bowl. Gently stir in bread cubes and raisins. Pour mixture into a 1 1/2-quart ungreased baking dish.
- Bake 40 minutes or until a knife inserted in center comes out clean. Let stand 10 minutes before serving.
- Note. Bread Pudding may be prepared in individual baking dishes. Baking time will be decreased by approximately 10 minutes.
- Exchanges per serving: 1 1/2 starch.

Let's face it, bread pudding is wildly underrated. And I honestly believe it's because so often, the bread pudding we've experienced in restaurants or even at potlucks more closely resembles a sweetened bread cinder block than a rich, custardy pudding. This recipe is here to give you a new lease on the classic dessert. It's almost too easy, but yields utterly decadent results. The key is in the ratio of bread to custard base; this recipe calls for quite a bit of bread, but also has an adequate amount of liquid components to balance it out.

- Prepare the pudding. Whisk eggs in a large mixing bowl to beat lightly. Whisk in milk, 1 cup white sugar, 1 cup brown sugar, heavy cream, butter, vanilla extract, and salt until evenly combined.
- Tear sourdough and brioche breads into bite-sized pieces. Add both breads to the custard mixture and stir with a rubber spatula until well coated. Allow to stand at room temperature and soak for 20 to 30 minutes, stirring occasionally.
- Meanwhile, preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish with butter.
- After soaking, spoon bread mixture into the prepared baking dish.
- Bake in the preheated oven for 55 minutes.
- Meanwhile, whisk together the remaining 2 tablespoons white sugar, remaining 2 tablespoons brown sugar, and cinnamon in a small bowl.
- Remove the pudding from the oven and sprinkle the cinnamon-sugar mixture evenly over the top. Increase oven temperature to 450 degrees F (230 degrees C).
- Return pudding to the oven and bake until firm with a lightly crisped top, about 6 minutes. Cool at least 20 minutes before slicing.
- While pudding cools, prepare the sauce. Beat egg in a small mixing bowl. Whisk in the heavy cream.
- Combine sugar and butter in a medium saucepan over medium heat. Cook, stirring frequently, until butter melts and sugar dissolves. Remove saucepan from heat. While rapidly whisking the butter and sugar mixture, slowly pour in the beaten egg and cream mixture, whisking until entirely incorporated. Whisk in bourbon and return to medium heat. Cook, whisking constantly, for 1 to 2 minutes. Whisk in salt.
- Cut the pudding into squares and serve with warm bourbon sauce.

- Preheat the oven to 300 degrees F. Grease an 8-inch square baking dish with the butter.
- Toast the bread cubes on a baking sheet until they start to dry and harden, about 20 minutes. Set aside. Raise the oven temperature to 325 degrees F.

- Heat oven to 350.
- Cube rolls into 1 inch pieces.
- In a saucepan, heat milk, butter, but don't allow to boil.
- When cooled, add vanilla, beaten eggs, sugar and baking powder.
- Blend until smooth.
- Spray 9X13 baking dish with Pam, layer the bread cubes and pour the liquid all over, making sure the bread is well saturated.
- Sprinkle brown sugar topping all over the bread and cover with pecans.

This is by far the easiest and most delicious bread pudding I have ever encountered. People swoon at the first bite and beg me for the recipe. The quality of your ingredients is crucial to the success of this recipe. Be sure to use a good, bakery-quality Challah bread, and do not make low-fat substitutions for the milk and cream. If you cannot find Challah, substitute it with another slightly-sweet egg bread, like Hawaiian bread. Use only homemade or bakery bread.

- Preheat oven to 350 degrees.
- Line a 9"x13" glass ovenproof pan with the stale bread cubes (You can leave them out on a tray overnight to air dry).
- Sprinkle the raisins over the bread, pushing some between the cubles.
- Drizzle cubes with the melted butter.
- Using a medium size bowl, mix together the milk, eggs,sugar cinnamon, and vanilla. Pour the mixture over the cubes.
- Press the cubes down into the mixture;and, let sit for 10 minutes to let the bread absorb some of the liquid.
- Bake for 45 minutes at 350 degrees. Pudding will become quite puffy.
- Sprinkle with 2 Tablespoons of sugar and return to the oven 5-10 more minutes or until center of the pudding is firm and top is brown.

BREAD PUDDING UMMM . . . BEST EVER
I had never had Bread Pudding before I went to Vegas and had it at a buffet. Well, I fell in love. My obsession use to be chocolate, but since I've lost 52 lbs. I gave it up. NOW, my obsession has become THIS version of Bread Pudding. ( I have to be careful how much of this I make, so I don't gain all of that chocolate weight back!) I found this recipe on the "Momswhothink.com" website and I hope it is ok to post it here. This is true comfort food. Do not over bake or you will lose the eggy texture of the bread. The cinnamon, nutmeg, and vanilla are the key ingredients to the rich flavor of this dessert. I use french bread, and have even used dry bread that has been sitting around a few days. I even used wheat french bread once and it turned out great! The sauce is more a vanilla, butter, cream sauce. I usually make about 4 times (yes, that is what I said!) in order to smother the bread pudding. One recipe of it is just not enough. Ummm. Make the sauce while the pudding is baking and you will save time. You can also use a Hard Sauce if you would rather. (recipe # 102574 sounds like a good one.) Even if you have never tried Bread Pudding, be daring, and try it. I use to turn my nose up at it, and now, I cannot wait for an excuse to make it, again and again. Enjoy!

- Bread Pudding Directions.
- In medium saucepan, over medium heat, heat milk (or half & half) just until film forms over top. Combine butter and milk, stirring until butter is melted. Cool to lukewarm.
