1/2 cup all-purpose flour
1 tablespoon Essence, recipe follows
2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
1 tablespoon olive oil
4 tablespoons butter
3 cups sliced mushrooms (cremini, oyster, shiitake)
3/4 cup Marsala
1 cup chicken stock
Salt and freshly ground black pepper
Chopped chives, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly. Quickly dredge the chicken breast halves in the seasoned flour mixture, shaking to remove any excess flour.
  • Heat the oil in a large skillet over medium-high heat until very hot but not smoking. Add 1 tablespoon of the butter and cook the chicken breasts until golden brown on both sides, about 3 minutes per side. Transfer to a plate and set aside. Add 1 tablespoon of the remaining butter to the pan and add the mushrooms. Cook, stirring frequently, until mushrooms are golden brown around the edges and have given off their liquid. Add the Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan. When the wine has reduced by half, add the chicken stock and cook for 3 minutes, or until the sauce has thickened slightly. Lower the heat to medium and return the chicken breasts to the pan and continue to cook until they are cooked through and the sauce has thickened, about 5 to 6 minutes. Swirl in the remaining 2 tablespoons of butter, add salt and pepper, to taste. Garnish with chopped chives and serve immediately.

1½ pounds boneless skinless chicken breasts, pounded ¼-inch thick (see note), or chicken tenderloins
3 tablespoons all-purpose flour
Salt
Freshly ground black pepper
1 tablespoon olive oil
3 tablespoons unsalted butter, divided
1 (8-oz) package pre-sliced bella or button mushrooms
3 tablespoons finely chopped shallots, from 1 medium shallot
2 cloves garlic, minced
⅔ cup chicken broth
⅔ cup dry Marsala wine
⅔ cup heavy cream
2 teaspoons chopped fresh thyme
2 tablespoons chopped fresh Italian parsley, for serving (optional)

Steps:

  • Place the flour, ¾ teaspoon salt, and ¼ teaspoon pepper in a ziplock bag. Add the chicken to the bag; seal bag tightly and shake to coat chicken evenly. Set aside.
  • Heat the oil and 2 tablespoons of the butter in a large skillet over medium-high heat. (Use a stainless steel pan for the best browning. Nonstick will work too, but you won't get that nice golden color on the chicken.) Place the flour-dusted chicken in the pan, shaking off any excess first, and cook, turning once, until the chicken is golden and just barely cooked through, about 5 to 6 minutes total. Transfer the chicken to a plate and set aside.
  • Melt the remaining tablespoon of butter in the pan. Add the mushrooms and cook, stirring frequently, until the mushrooms begin to brown, 3 to 4 minutes. Add the shallots, garlic, and ¼ teaspoon of salt; cook for 1 to 2 minutes more. Add the broth, Marsala, heavy cream, thyme, ¼ teaspoon salt, and ⅛ teaspoon of pepper; use a wooden spoon to scrape any brown bits from the pan into the liquid. Bring the liquid to a boil, then reduce the heat to medium and gently boil, uncovered, until the sauce is reduced by about half, slightly thickened, and darkened in color, 10 to 15 minutes (you're going for a thin cream sauce; it won't start to thicken until the very end of the cooking time). Add the chicken back to the pan, along with any juices that accumulated on the plate. Reduce the heat to low and simmer until the chicken is warmed through and the sauce thickens a bit more, 2 to 3 minutes. Sprinkle with parsley, if using, and serve.
  • Note: If your chicken breasts are large (like the ones in the photos that are about ¾ lb. each), it's best to first cut them horizontally to form four flat fillets, then pound them to an even ¼-inch thickness. If you pound large chicken breasts without first halving them, they'll be huge. Of course, you could also pound them thin first and then cut them in half vertically; the only drawback is that they'll lose their natural shape (which, admittedly, is not a big deal!).

1 1/2 teaspoons seasoning salt (can use regular salt)
1 teaspoon black pepper
1 teaspoon garlic powder
1 1/2 teaspoons oregano
6 boneless chicken breasts (pounded to about 1/4-inch thickness)
1/4 cup butter
1/4 cup olive oil
3 -4 cups sliced mushrooms
1 cup marsala wine
1/3 cup sherry wine
grated parmesan cheese (optional)

Steps:

  • Pound the chicken breasts to about 1/4-inch thick (does not have to be exactly 1/4-inch).
  • Mix together flour, seasoning salt, pepper, garlic powder and oregano in a shallow dish.
  • Coat the chicken pieces in the flour mixture on all sides.
  • Heat butter and oil in a large skillet and brown the chicken on one side.
  • Turn the chicken over and add in the sliced mushrooms.
  • Pour in the Marsala and sherry; mix to combine.

1/2 cup all-purpose flour ((plain flour))
1 teaspoon kosher salt
1 teaspoon garlic powder
1/2 teaspoon black cracked pepper
2 large boneless skinless chicken breasts, (halved horizontally to make 4 fillets*)
2 tablespoons olive oil, (divided)
4 tablespoons unsalted butter, (divided)
1 tablespoon unsalted butter (as needed)
8 ounces (250g) brown or Cremini mushrooms, sliced
4-5 cloves garlic, (minced)
3/4 cup dry Marsala wine
1 1/4 cup low-sodium chicken broth ((or stock))
3/4 cup heavy cream ((thickened cream, evaporated milk or half and half may also be used)**)
2 tablespoons fresh chopped parsley

Steps:

  • Mix the flour, salt, garlic powder and pepper in a shallow bowl. Dredge the chicken in the flour mixture and shake off excess.
  • Heat 1 tablespoon oil and 2 tablespoons butter in a 12-inch pan or skillet over medium-high heat until shimmering. Fry 2 of the chicken breasts until golden-brown on both sides (about 3 to 4 minutes per side). Transfer to warm plate, tent with foil and keep warm. Repeat the same with the remaining 2 chicken breasts.
  • In the same pan with remaining pan grease leftover from the chicken, melt 1 tablespoon of butter. Add the mushrooms and for 2-3 minutes until browned, scraping away at any of the leftover chicken bits off the bottom of the pan.
  • Add the garlic and cook until fragrant, about 1 minute.
  • Pour in the Marsala and the broth and simmer until reduced by half and starting to thicken, (about 10-15 minutes).
  • Pour in the cream and return the chicken back into the sauce. Cook until the sauce thickens (about 3 minutes). Garnish with chopped parsley and serve immediately. (The sauce will continue to thicken off the heat.)
  • Serve over cooked angel hair pasta (or pasta of choice), rice, potatoes, cauliflower rice or zucchini noodles, if desired.

1½ Cups Sliced mushrooms
½ Cup Chicken broth
½ Cup Marsala wine
2 Tsp Butter
1 Tsp Corn starch

Steps:

  • Heat the olive oil in a large pan over medium-high heat. Season the chicken on both sides with salt and pepper.
  • Cook the chicken for 4-5 minutes on each side, until golden brown and cooked through. Remove the chicken from the pan; place on a plate and cover with foil to keep warm
  • Add the mushrooms to the pan and cook until softened, 3-4 minutes. Season the mushrooms with salt and pepper.
  • Add the chicken broth and wine to the pan; bring to a simmer. Simmer for 3-4 minutes.
  • In a small bowl, whisk together the cornstarch with 2 teaspoons water. Add the cornstarch to the pan and stir constantly until sauce has just thickened.
  • Add the chicken back to the pan and coat with the mushroom sauce. Top with parsley and serve.

3 boneless skinless chicken breasts, 1 1/2 to 2 pounds
Kosher salt and freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup olive oil
12 ounces cremini mushrooms, sliced 1/4-inch thick
1 large shallot, finely chopped
1 1/2 cups dry marsala wine
6 tablespoons unsalted butter, cut into pieces
1/3 cup flat-leaf parsley, chopped, plus more for garnish

Steps:

  • Set a wire rack inside a rimmed baking sheet. Cut two 12-inch sheets of plastic wrap.
  • Cut the chicken breasts in half lengthwise, making 6 roughly equal pieces; they should look like large chicken tenders. Place one sheet of plastic on a clean cutting board. Put a chicken piece in the center of the plastic and top with the other sheet of plastic. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4 inch thick and 6 to 8 inches long. Transfer to the wire rack. Repeat with the remaining chicken pieces. Liberally sprinkle the chicken with salt and pepper.
  • Mix the flour with 1 1/2 teaspoons salt and a generous amount of pepper in a shallow bowl or plate. Dredge the cutlets in the seasoned flour, shaking off any excess. Heat 3 tablespoons of the oil in a large skillet over medium-high heat until very hot, about 1 minute. Sear 3 cutlets until golden brown, about 2 minutes per side. Transfer the cutlets to a plate. Add the remaining 1 tablespoon of oil to the pan and sear the remaining 3 cutlets until golden brown, about 2 minutes per side. It's ok if the chicken is not completely cooked through; it will finish cooking in the sauce.
  • Add the mushrooms and 1/2 teaspoon salt to the same pan and cook, stirring and scraping up any browned bits, until the mushrooms are slightly softened and just beginning to release some liquid, 3 to 4 minutes. (The mushrooms will soak up the oil quickly and dry up the pan; that's ok, more liquid will release as they cook longer.) Add the shallots and cook, stirring and scraping up any browned bits, until starting to soften, 3 to 4 minutes.
  • Remove the pan from the heat. Pour in the wine and 1/2 cup water. Return the pan to high heat and bring to a boil. Reduce the heat to medium and simmer until the liquid reduces by a third and starts to thicken, 6 to 7 minutes. Whisk in the butter and continue whisking until it is melted and the sauce has thickened, 1 to 2 minutes.
  • Add the cutlets and any accumulated juices to the pan and cook, flipping halfway through, until the chicken is cooked through and the sauce has thickened, about 2 minutes.
  • Remove the chicken to a platter and stir the parsley into the sauce. Pour the sauce over the chicken and garnish with more parsley.

4 chicken breasts, skin removed
40g/1½oz plain flour
50g/1¾oz butter
2 tbsp olive oil
2 shallots, finely chopped
1 garlic clove, finely chopped
160g/5¾oz chestnut mushrooms, sliced
250ml/9fl oz dry Marsala
150ml/5fl oz chicken stock
small handful chopped flatleaf parsley
salt and freshly ground black pepper

Steps:

  • Put the chicken breasts between sheets of cling film and beat, using a meat mallet or rolling pin, until about 5mm thick. Season with salt and pepper on both sides.
  • Put the flour on a plate and dip the chicken in it to coat lightly, shaking off any excess.
  • Melt half the butter and oil in a frying pan over medium-high heat and fry the chicken for 2-3 minutes on each side until golden-brown. Set aside.
  • Wipe the pan with kitchen paper. Heat the remaining butter and oil over a medium heat and gently fry the shallot and garlic for about 5 minutes until softened. Add the mushrooms and cook for 2 minutes. Add the Marsala and increase the heat to high. Cook until the liquid has reduced in volume by about half. Turn the heat back down to medium, add the stock and chicken. Cook for about 10 minutes. Serve sprinkled with parsley.

Steps:

  • Sprinkle the chicken breast with salt and pepper.
  • Dredge the chicken breasts in flour.
  • Add 2 tablespoons butter to the Instant Pot and press the Sauté button.
  • Once the butter is heated, sauté each chicken breast for 3-4 minutes per side until golden brown. You will need to do this in batches. Use 2 more tablespoons of butter for the second batch.
  • Once the chicken is browned, set aside on a plate.
  • Add in another tablespoon of butter. Once melted, add in the shallot and garlic and sprinkle with salt. Sauté for 1-2 minutes.
  • Add in the mushrooms and a dash of salt and sauté for a couple minutes.
  • Pour the wine and chicken broth into the pot, and add the chicken back in.
  • Cook on the Manual setting for 10 minutes. Then, release the pressure using the quick release function.
  • Open the lid and transfer the chicken to a serving platter or plates.
  • Combine the corn starch and water to make a slurry and pour it into the pot.
  • Press the Cancel button. Then, press the Sauté button and let the mixture simmer and thicken.
  • Once the mixture has thickened, stir in the heavy cream if using.
  • Pour the mushroom sauce over the chicken breasts and finish with a sprinkle of fresh parsley.

1 tablespoon plus 2 teaspoons extra-virgin olive oil
2 pounds boneless skinless chicken breasts (about 3 breasts)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 medium shallot or 1/2 small yellow onion (finely chopped)
2 cloves minced garlic
1 cup dry Marsala wine (not cooking wine)
8 ounces sliced cremini mushrooms
1 tablespoon cornstarch (mixed with 2 tablespoons water to create a slurry)
For serving: chopped fresh parsley or basil
For serving: whole wheat pasta (zucchini noodles, or simply a big loaf of crusty bread)

Steps:

  • Lightly coat a large slow cooker with nonstick spray. Heat 1 tablespoon olive oil in a large skillet over medium high. Season both sides of the chicken with salt and pepper. Once the oil is hot and shimmering, add the chicken in a single layer. Cook on the first side for 3 to 4 minutes, until browned, moving the chicken as little as possible so that it gets a nice sear. Flip and brown on the other side, about 2 additional minutes. It does not need to be cooked all the way through. Transfer the chicken to the slow cooker.
  • Reduce the skillet heat to medium low. Heat the remaining 2 teaspoons oil. Add the shallot and cook until softened, about 3 minutes. Stir in the garlic.
  • While the skillet is still warm, pour in the Marsala. Increase the heat to medium and let simmer 2 minutes. Remove from the heat.
  • Scatter the mushrooms over the top of the chicken. Pour in the Marsala reduction. Cover and let cook on LOW, until the chicken is cooked through and reaches 165 degrees F on an instant read thermometer, about 2 1/2 to 3 hours on low (timing will vary based on your slow cooker model and the size of your chicken breasts). Remove to a plate and cover to keep warm.
  • In a small bowl, whisk together the cornstarch and water. Pour into the slow cooker. Cover and cook on HIGH for 15 to 20 minutes, until thickened. Return the chicken to the slow cooker and let heat over high for 5 additional minutes to warm through. Serve hot with desired accompaniments, with the sauce spooned over the top and a sprinkle of fresh parsley as desired.

1 small onion, sliced
1/4 cup marsala wine

1/2 teaspoon mrs. dash's seasoning
1/4 teaspoon pepper
1/2 teaspoon oregano
1/2 teaspoon garlic powder
2 tablespoons butter (or 1 tablespoon butter and 1 tablespoon olive oil)

Steps:

  • In a shallow bowl, mix together the flour, Mrs. Dash's seasoning, pepper, and oregano. Coat each chicken breast in the mixture.
  • Put in refrigerator for 15 minutes.
  • Put the olive oil in a skillet over medium high heat, then add the butter and stir until it begins to melt.
  • Saute the onion and sprinkle garlic powder. Saute until onion is clear.
  • Once the onion is done, remove from the pan.
  • Saute chicken. Sprinkle garlic over chicken. cook until the chicken starts to brown. Remove the chicken from the pan. Add mushrooms; cook until lightly brown.
  • In a small mixing bowl, mix can of gravy and 1/4 cup wine. Add gravy-wine mixture to pan and simmer 2 to 5 minutes and return the onion to the pan.
  • Let it cook another minute.
  • Add the chicken and cook at medium-low temperature for 10 minutes.

4 skinless boneless chicken breasts (pounded)
salt and pepper (to taste)
1/2 cup flour
2 tablespoons avocado oil
3 tablespoons butter
16 ounces mushrooms (sliced)
1/2 cup onion (finely chopped)
1 clove garlic (finely chopped)
3/4 cup white wine (Chardonnay wine)
3/4 cup chicken broth
parsley for garnish

Steps:

  • To make chicken marsala, using a meat pounder, pound chicken breasts under plastic food wrap until about 1/4 inch thickness. After, season pounded chicken breasts with salt and pepper on both sides.
  • In a mixing bowl, combine 1/2 cup flour, salt and pepper to taste and mix well. Coat chicken breast with flour mixture, on both sides.
  • Using a large skillet, preheat 2 tablespoons of avocado oil and 2 tablespoons of butter over medium/high heat. Next, add 2 chicken breasts and saute for about 4 minutes or until golden brown on each side.
  • Transfer chicken to a plate and keep warm using a lid from the pot or a foil paper. Cook another 2 chicken breasts until golden color and transfer to a plate.
  • Into the same skillet add 1 tablespoon of butter, 16 oz. of sliced mushrooms and 1/2 cup of chopped onion. Saute for 10 minutes, stirring few times.
  • Next, add 1 clove of finely chopped garlic and saute for about 1 minute, stirring continuously. After pour in 3/4 cup of white wine and 3/4 cup of chicken broth, simmer until mixture reduce in half, scraping up browned pieces from the bottom of the skillet. Season with salt and pepper to taste, if needed.
  • Now add browned chicken breasts back to the skillet, cover with sauce, cook until heated thru, about 2 minutes. Garnish with freshly chopped parsley and sprinkle of back pepper. Serve with Quick Mashed Potatoes. Enjoy!

2 cups Italian breadcrumbs
1/2 cup olive oil
1 tablespoon chopped garlic
1 pound sliced mushrooms
2 red tomatoes, chopped

Pinch ground black pepper
Pinch dry basil
1 1/2 cups Marsala wine
1 cup chicken broth
1/2 cup ounces marinara sauce
3 ounces heavy cream

Steps:

  • Bread chicken breast on both sides in Italian breadcrumbs. Place a very large saute pan over high heat with olive oil. Once the oil is hot, add all the chicken breasts. Cook until lightly browned, then turn over and cook the same on the other side. Push the chicken breast to one side of the pan and drain all the oil out. Place chicken in the pan back on high heat and add garlic, mushrooms, tomatoes, parsley, pepper and basil. Add Marsala, chicken broth, marinara and cream. Let it reduce on high heat until sauce thickens and is a golden brown gravy. Take the chicken breast out first and place on plates. Pour the Marsala sauce on top to cover the chicken, then serve.
