VEGAN APPLE CAKE
Steps:
- Preheat the oven to 325°F (160°C). Spray a 9x13 dish with non-stick spray and set aside.
- Sift the flour into a mixing bowl and add the brown sugar, baking soda, salt, cinnamon and nutmeg and mix together.
- Prepare your vegan buttermilk by adding 1 Tbsp fresh lemon juice to a measuring jug and then adding soy milk up to the 1 cup (240ml) line. Leave it for a minute to allow it to curdle.
- Add the vegan buttermilk, oil, vanilla, apple cider vinegar and applesauce to the mixing bowl and mix in properly. The batter will be thick.
- Add in the chopped apple pieces and fold in.
- Transfer to your prepared baking dish and smooth down.
- Prepare the cinnamon sugar topping by adding the sugar and cinnamon to a bowl and mixing together. Then add in softened vegan butter and mix it in until properly combined and the mixture is crumbly.
- Sprinkle over the top of the cake.
- Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Serve warm with vegan whipped cream or vegan ice cream.

This Dutch apple cake recipe is one of the best apple cake recipes of all time. It's moist, delicious and very easy to make.

- Preheat the oven 375 degrees.
- Grease a 9-inch spring form pan or metal baking dish. Set aside.
- In a large mixing bowl, sift together the flour, baking powder, sugar and salt.
- Next, using two knives or a fork gently cut the soft butter into the flour mixture. Making sure to incorporate it until there are no large lumps.
- Next, add a whisked egg, vanilla and milk.
- Gently fold everything together until the batter forms. It will be slightly sticky so don't worry. The juice from apples will moisten the cake as it bakes.
- Next, peel and slice 3 medium sized apples. I used 2 honey crisp and 1 grnny smith apple.
- If you opt to slice the apples, you should get about 4 slices per quarter. If you cube the apples, just give them a rough chop. Each piece should be about the size of a nickel.
- In a separate mixing bowl, add the cubed apples, cinnamon, cane and brown sugar. Toss until the apples are evenly coated.
- Next, pour the batter into the greased pan. Spread the batter and place the apples on top of the batter.
- Gently press the apples into the batter.
- Bake for 40 minutes or until the center is fully cooked.
- Remove from the oven and serve slightly warm.

- In a large bowl, combine the apples, 3 tablespoons sugar and cinnamon; let stand for 1 hour. , In another bowl, cream butter and remaining sugar until light and fluffy, 5-7 minutes. - Sift flour with baking powder and salt.
- In a large bowl, cream shortening and 1 cup sugar until light. Beat in egg and vanilla until fluffy. Add sifted ingredients to the creamed mixture alternately with milk, beginning and ending with the sifted ingredients. Spread the batter into a greased 7 x 11 inch baking pan.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10 inch tube pan.
- In a large bowl, stir together flour and baking powder. In a separate bowl, beat together 2 cups sugar, vegetable oil, eggs. Stir egg mixture into flour mixture, alternately with orange juice, until smooth. In a small bowl, combine 5 tablespoons white sugar, 5 tablespoons brown sugar and 2 teaspoons cinnamon.

- Cut apples thinly, mix with 3 tbs sugar and 1 tsp cinnamon.
- Set aside.
- Cream together sugar and margarine until light and fluffy.
- Add egg and beat well.
- Add vanilla.
- Sift in flour with baking powder and mix well.
- Spread half the batter in a greased and floured 8 inch square pan.
- Place apples in even line, close together on batter.

- Butter a 10 inch round pan (2 inches deep) and line with a disk of buttered parchment; set aside.
- Position oven rack in middle of oven; preheat to 350°.
- In a bowl, stir the flour, baking powder, and salt together; set aside.
- Add butter and ¾ cup sugar to the bowl of an electric mixer and beat with paddle on medium speed until soft and light, about 3-4 minutes.
- Beat in 1 egg until smooth, beat in the vanilla and lemon zest.
- Beat in about 1/3 of the flour mixture until smooth, and then beat in another egg.
- Beat in another 1/3 of the flour mixture and then beat in the remaining egg.
- Stop and scrape the bowl and paddle, and then beat in the remaining flour mixture.
- Scrape the batter into the prepared pan and smooth the top.
- Arrange 11 of the apple quarters, core side down, on the batter, in a circle near the edges of the pan.
- Place the last apple quarter in the center of the batter; sprinkle the apples with the 2 tablespoons of sugar.
- Bake the cake until the apples have softened, about 1 hour; the batter will definitely be baked through in this amount of time.
- Cook the cake on a rack in the pan, then unmold it onto another rack and lift away the first rack and replace it with a platter; invert cake again and lift off the top rack.
- Make the glaze: stir the preserves and water together in a small saucepan; cook over medium heat, stirring occasionally, until the glaze comes to a simmer.
- Strain the glaze into another pan and place it back on the heat; allow the glaze to reduce until it is slightly sticky and no longer watery, about 2 minutes.
- Immediately pain the hot glaze onto the apple quarters, using a brush; let the glaze cool and set before serving the cake.
- Cut the cake into wedges; a little whipped cream would be good with this cake.
