1 cup chilled kelp (dashi) stock
1 ounce Dulse Maine Coast Sea Vegetables
1 teaspoon seasoned rice wine vinegar
1/2 teaspoon mirin
1/4 teaspoon soy sauce
1 tablespoon kelp sauce
1/2 teaspoon kelp cayenne sea seasoning optional

Steps:

  • Separate dulse fronds and rinse in 1 cup of chilled kelp stock for 15 to 20 seconds. Squeeze out moisture and place in a deep bowl. Mix the seasoned rice wine vinegar, mirin, soy sauce and dashi and pour over the separated dulse fronds. Mix all together for one minute or so. Divide into four chilled dishes and sprinkle the kelp cayenne sea seasoning over the top. Serve immediately. This salad has a wonderful ocean brine aroma. Great with smoked fish.

Seaweed comes in many forms, and is used extensively in Japanese cuisine. Most of us are familiar with the pressed sheets of nori that are wrapped around sushi, and kombu, the dark green algae that is simmered to make classic dashi broth. Japanese groceries have a dizzying array of salt-packed specialty varieties, but many supermarkets and health-food stores sell packages of dried seaweed, which may be the most user-friendly. Two types that are commonly available are reddish-purple dulse and bright green wakame. Both simply need bathing in cold water for a few minutes to soften and ready them for use. Once soaked and drained, the seaweed is tossed with a simple traditional dressing of sesame oil with ginger and soy. My version makes a fine vegetarian meal, with thin slices of carrot, radish, cucumber and daikon, along with avocado, green onion, pumpkin seeds and sesame seeds.

1 ounce dried red dulse seaweed
1 ounce dried green wakame seaweed
2 tablespoons rice-wine vinegar
2 teaspoons sugar
2 teaspoons grated ginger
1/2 teaspoon wasabi powder
2 teaspoons soy sauce
1 tablespoon roasted sesame oil
Juice of 1 lime
Sea salt, to taste
1 small carrot, peeled and sliced paper-thin
4 red radishes, thinly sliced
2 ounces daikon radish, peeled and thinly sliced
1 small cucumber, peeled and thinly sliced
1 firm-ripe avocado, sliced
1 teaspoon toasted white sesame seeds
1 teaspoon toasted black sesame seeds
2 teaspoons toasted pumpkin seeds
4 green onions, slivered

Steps:

  • Put the dulse and wakame in a large bowl and cover with cold water. Let soak 5 to 10 minutes, until softened. Drain in a colander, pat dry and place in a serving bowl.
  • To make the dressing, whisk together the rice vinegar, sugar, ginger, wasabi powder, soy sauce and sesame oil in a small bowl.
  • Spoon half the dressing over the seaweed, add the lime juice and toss gently. Taste and add a small amount of salt if necessary. Surround the salad with the carrot, radish, daikon, cucumber and avocado. Season them lightly with salt and drizzle with the remaining dressing.
  • Sprinkle the salad with the white and black sesame seeds, pumpkin seeds and green onions.

This pretty scarlet salad is enhanced by dulse (shown opposite), a sea vegetable with a rich, meaty taste-try toasted dulse in place of bacon in a DLT! Several eco-friendly companies along the North American Atlantic coast harvest dulse by hand in small boats, dry it outside, and sell it with minimal packaging. When toasting dulse, pass it back and forth a few times over a flame and then let it cool. The texture should be crisp and crackly. If the dulse is still soft, repeat this process until it breaks up easily. Toasting it gently and gradually prevents burning.

2 scallions, green and white parts, minced
1 tablespoon sweet white miso
1 teaspoon Dijon mustard
1 1/2 tablespoons rice vinegar
3 tablespoons olive oil
1 teaspoon grated fresh ginger
1 sweet, crisp apple
1/2 cup whole dulse leaves
2 cups shredded cabbage
Salt

Steps:

  • In a large bowl, whisk together the minced scallions, miso, mustard, vinegar, oil, and ginger. Julienne the apple and add the slices to the dressing, tossing lightly to coat. Using scissors, cut 1/4 cup of the dulse into thin strips. Add it to the apples, followed by the cabbage. Toss and season with salt.
  • Turn a gas burner on medium. Holding the pieces with tongs, quickly pass the remaining dulse leaves over the flame once or twice. They should be lightly toasted with a crackly texture. Break into bite-size pieces.
  • To serve, divide the salad among the plates and top each with several pieces of toasted dulse.

1 ounce wakame seaweed, snipped into 1-in . pieces if in large chunks (about 1 cup)
1 cup dulse seaweed (about 1/2 oz.)
1 cup arame seaweed (about 1/2 oz., or use more dulse)
2 tablespoons sesame seeds
2 tablespoons toasted sesame oil, divided
3 large garlic cloves, thinly sliced crosswise
2 green onions, sliced
1 1/2 tablespoons reduced sodium soy sauce
1 tablespoon unseasoned rice vinegar (optional)

Steps:

  • Look through seaweeds for any small pebbles or debris and discard. Soak wakame and arame in separate bowls with cool water to cover generously until tender, 5 to 12 minutes for wakame and 9 to 10 minutes for arame. Drain well. Snip dulse into 2-in.-long pieces; don't soak.
  • Toast sesame seeds in a large frying pan over medium heat, stirring often, until golden, 3 to 4 minutes. Pour into a bowl.
  • Add 1 tablespoons oil to the pan with the garlic and onions; sauté over medium heat until softened, 1 minute. Remove from heat.
  • Add seaweeds, remaining 1 tablespoons oil, and soy sauce. Toss gently to coat well and let stand until dulse is softened, 5 minutes. Mix in sesame seeds.
  • Taste and add rice vinegar if you like. Serve warm or at room temperature.
