  • Sautéing. Sautéing uses a small amount of fat or oil to cook food. Heat is transferred to the food from a hot pan using conduction. The amount of fat or oil used is usually less than what is needed for pan-frying and deep-frying.
  • Deep-frying. Deep-frying involves cooking foods that are submerged in hot fat. It is similar in principle to boiling, but it is still classed as a dry-heat cooking method because the liquid fat doesn’t contain any water.
  • Pan-frying. Pan-frying is similar to both sautéing and deep-frying. Heat is transferred from a hot pan to the food using conduction, but using a moderate amount of fat.
  • Broiling. Broiling involves cooking food using radiant heat from an overhead source. Food is typically placed on a pre-heated metal grate, which can mark the food with distinctive marks as the food is cooked off.
  • Grilling. Grilling is similar to broiling, in that food is also cooked using radiant heat. The main difference between the two methods is that grilling involves cooking food using a heat source from below the cooking surface, whereas broiling cooks using heat from an overhead source.
  • Roasting. Roasting typically refers to the cooking of meats and poultry using dry and heated air in a closed environment. Heat is transferred through the air to the surface of the food.
  • Baking. Similar to roasting, baking also involves cooking foods using dry and heated air in a closed environment. Some chefs use baking as a term to refer to the cooking of vegetables, fish, fruits, starches (such as potatoes), pastries, or loaves of bread in an oven.
