One-Skillet Bratwurst and Onions image

4 Bratwurst Sausages
1 Red Onion, sliced
canola oil
1/2 cup Water or Stock

Steps:

  • Heat a large cast iron skillet with a drizzle of canola oil over medium-high heat until it just starts to smoke.
  • With a fork, poke a few holes on each side of the bratwurst sausage to keep them from bursting while they cook.
  • Place the brats in the hot skillet, then place the onions around them.
  • Stir the onions to spread them around and to coat with oil.
  • Cook the brats for about 4 minutes per side, or until they are nicely browned.
  • Carefully pour 1/2 cup water in the skillet, then immediately cover and reduce the heat to medium-low.
  • Cook covered for about 10 more minutes, or until the internal temperature reaches 160 degrees.
  • Remove the lid and the brats from the skillet.
  • Increase the heat and season the onions with salt and continue to cook the onions for a few more minutes to reduce the liquid.
  • Serve the sausages topped with the onions and your favorite mustard.

Skillet Brats with Beer Caramelized Peppers and Onions image

This recipe alludes to my time at culinary school. Right around the fall, it was standard to head to the Hudson River with my fellow comrades, drinking beer and cooking the brats on an open fire. By caramelizing the brats in the beer sauce, they just get better and better.

2 tablespoons olive oil
2 large Vidalia onions, sliced thin
4 medium bell peppers, sliced thin
4 cloves garlic, minced
Kosher salt
2 pounds bratwurst, uncooked
12 ounces beer, stout or porter preferred
Hot Pepper Mustard, for serving, recipe follows
Pretzel rolls, for serving
1/2 cup apple cider vinegar
1/2 cup water
1/4 cup honey
1 1/2 teaspoons sugar
2 banana peppers, stems and seeds removed and chopped
1 yellow bell pepper, seeded and chopped
1 small yellow onion, roughly chopped
2 cloves garlic, chopped
3 tablespoons stone-ground mustard
Kosher salt

Steps:

  • Preheat a large cast-iron skillet over medium heat. Add the oil, then the onions, peppers and garlic. Season with salt. Cook, stirring occasionally, until they just begin to soften and the onions turn translucent, 5 to 10 minutes. Move the onions and peppers to the side of the skillet and add the bratwurst. Score the bratwurst with a knife on both sides. Add to the pan and sear, about 3 minutes per side. Add the beer to the skillet. Bring to a simmer and cook, turning the bratwurst and stirring the vegetables occasionally, until the beer reduces by half and the brats are cooked through to an internal temperature of 160 degrees F, 15 to 20 minutes.
  • Serve with hot pepper mustard and pretzel rolls.
  • Whisk together the vinegar, water, honey, sugar, banana peppers, bell peppers, onions and garlic in a medium saucepan and bring to a boil over medium heat. Once boiling, reduce the heat to low/medium low and simmer until the peppers and onions are soft, about 5 minutes.
  • Transfer to a small food processor or blender and puree until very smooth. Add the mustard and puree until just incorporated. Season with salt. Transfer to a bowl and let cool completely, then refrigerate until well chilled, about 30 minutes.

Add an extra layer of flavor to your bratwurst by simmering them in beer or ale and then finishing them on the grill. Caramelized onions make for a luscious topping.

8 bratwurst sausages
1 12-ounce bottle beer ( or ale)
1 onion (sliced)
salt
black pepper
1/4 tsp dried thyme
1/4 tsp paprika
1 tsp balsamic vinegar
8 hot dog buns
condiments for bratwurst

Steps:

  • Preheat an outdoor grill.
  • Place the bratwurst, beer, and onion in a large skillet. Season with pepper. Simmer, slightly covered, until the brats are cooked through, about 10 minutes.
  • Drain off the beer. Place the brats on the grill and cook until the skins are crisp, about 5 minutes. (If you've got inclement weather, brown the brats in the pan.)
  • Meanwhile, saute the onions in the skillet, stirring in the thyme and paprika. Deglaze the pan with the balsamic vinegar, scraping up any browned bits. Adjust seasonings.
  • Serve the brats in buns with the onions and your favorite condiments.

One 12-ounce bottle hard apple cider
1 1/2 cups beef broth
6 fresh bratwurst sausages (about 1 1/2 pounds total)
1 tablespoon olive oil
1 tablespoon unsalted butter
2 large sweet onions, thinly sliced
Kosher salt and freshly ground black pepper
6 pretzel rolls, split
Spicy brown mustard

Steps:

  • Combine the hard cider, 1 cup of the broth and the bratwurst in a large saucepan, bring to a simmer and gently simmer over low heat for 15 minutes.
  • Meanwhile, heat the oil and butter in a large skillet over medium heat. Add the onions, sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper and cook until just tender, about 5 minutes. Add the remaining 1/2 cup broth and simmer until the onions are browned and completely soft, about 5 minutes more. Keep the onion mixture warm while you cook the bratwurst.
  • Preheat a grill to medium-high heat or heat a grill pan over medium-high heat.
  • Transfer the bratwurst to the grill or grill pan and cook, turning occasionally, until browned, about 10 minutes. Lightly grill the pretzel rolls, cut-side down. Serve the bratwurst topped with the onions and with the pretzel rolls and mustard on the side.
