These are a totally sinful concoction containing more calories than one would care to count. A decadent dessert! Will satisfy any sweet tooth!

½ cup butter
¼ cup white sugar
5 tablespoons unsweetened cocoa powder
1 egg
1 teaspoon vanilla extract
2 cups graham cracker crumbs
1 cup shredded coconut
½ cup chopped walnuts
¼ cup butter
2 cups confectioners' sugar
2 tablespoons vanilla custard powder
3 tablespoons milk
4 (1 ounce) squares semisweet chocolate, chopped
1 tablespoon butter

Steps:

  • Mix 1/2 cup butter or margarine, white sugar, cocoa, egg and vanilla in a heavy sauce pan or double boiler. Stir over low heat until mixture is of custard like consistency.
  • Combine graham crackers, coconut and walnuts and add to the melted mixture. Mix well and pack into buttered 9 inch square cake pan.
  • Cream 1/4 cup butter, confectioners' sugar, vanilla custard powder and milk. Beat until creamy and spread over melted base.
  • Refrigerate till hardened.
  • Melt semi-sweet chocolate with 1 tablespoon butter and drizzle over custard icing. Refrigerate. When totally hard cut into square bars.

My mother taught me to make these rich, delicious bar cookies when I was young. Though I've tried many variations, I always come back to this old favorite.

3/4 cup plus 1 tablespoon butter, divided
1/4 cup sugar
1/3 cup baking cocoa
1 teaspoon vanilla extract
1 egg
2 cups graham cracker crumbs
1 cup sweetened shredded coconut
1/2 cup chopped walnuts, optional
2 tablespoons instant vanilla pudding mix
3 tablespoons milk
2 cups confectioners' sugar
3 ounces semisweet chocolate

Steps:

  • In a large saucepan, melt 1/2 cup butter. Remove from the heat; blend in sugar, cocoa, vanilla, egg, crumbs and coconut. Also add nuts if desired. Press into a 9-in. square pan. In a small bowl, cream 1/4 cup butter, pudding mix, milk and sugar. Spread over crumb layer; chill. Melt chocolate and 1 tablespoon butter; spread over pudding layer. Chill before cutting into bars.

I got this from a business associate of DH who was raised in Canada. This is her Nana's recipe. A little different that the other Nanaimo bars on the 'zaar because it uses condensed milk. There is no baking envolved. Chill time is cook time.

1/2 cup butter, do not use margarine
1/4 cup brown sugar, packed
1/4 cup cocoa
1 egg, well beaten
2 cups graham cracker crumbs
1 cup coconut, shredded
1/2 cup pecans or 1/2 cup walnuts, finely chopped
14 ounces condensed milk
1/3 cup lemon juice, fresh
1/3 cup melted semisweet chocolate morsel

Steps:

  • In a saucepan melt the butter.
  • Stir in brown sugar, cocoa, egg, graham cracker crumbs, coconut and nuts.
  • Press into bottom of a 9x9 pan.
  • Combine condensed milk and lemon juice.
  • Mix together until well blended.
  • Spread onto cookie base evenly.
  • Drizzle with melted semi sweet morsels.
  • Refrigerate until firm, about 2 hours.

1 teaspoon vanilla
1 medium egg (beaten)

1 3/4 cups graham cracker crumbs
1/2 cup almonds (chopped)
1/4 cup margarine (softened)
1 tablespoon cherry juice (from maraschino cherries)
2 cups icing sugar
1/3 cup maraschino cherry (chopped)
2 ounces semisweet chocolate (2 squares)
1 tablespoon margarine

Steps:

  • Base:.
  • Melt margarine, sugar, cocoa, vanilla and egg in saucepan over low heat stirring constantly until it begins to thicken.
  • Remove from heat and stir in coconut, graham cracker crumbs, and chopped almonds.
  • Press into greased 9x9-inch pan.
  • Chill 1 hour.
  • Filling:.
  • Cream butter, cherry juice, and vanilla.
  • Gradually beat in, with hand mixer or by hand, icing sugar to make a smooth spreading consistency.
  • Stir in chopped cherries.
  • Spread evenly over chilled base.
  • Chill until firm.
  • Topping:.
  • Heat chocolate and butter over medium heat until smoothly melted. Drizzle over filling.
  • Chill.
  • Cut into 30 bars with sharp knife pressing down gently to break the drizzle first then drag to slice.

  • Meanwhile, in a food processor, pulse the biscuits until fine crumbs form; add to the walnuts. In a resealable plastic bag, crush the pretzels with a rolling pin until small chunks form; add the pretzels to the walnuts.
  • In a large saucepan, melt the stick of butter over very low heat. Add the brown sugar and cocoa powder and whisk until smooth. Slowly drizzle the egg and vanilla into the saucepan, whisking, until thickened, 2 minutes. Mix in the walnut mixture.   • Prepare an 8 or 9 inch pan by lining it with foil or parchment paper, and greasing it with cooking spray or butter.
  • In a large bowl, cream the softened butter using an electric mixer. Add the cherry juice and almond extract and mix. Gradually beat in the icing sugar until it is s a smooth, spreadable consistency. On low, mix in the maraschino cherries.
  • Chop or break apart the chocolate into small pieces so that it melts more easily. Place in a small bowl with the butter and microwave for 30 seconds at a time, stirring in between. Do not over-do it otherwise the chocolate could seize. Once melted and smooth, use a fork to flick/drizzle the melted chocolate over the top of the cherry icing. If it's too thick, warm in the microwave briefly. Place the pan in the freezer to set.
