- Cook and brown patties, add onion, broth and mushrooms.
- Cover and simmer 10 minutes.
- Heat onion to boiling.
- Remove patties.
- Mix water and cornstarch.
- Add to skillet and stir until thickened.

- In a large bowl, combine Worcestershire sauce, garlic, seasoned salt and pepper. Add beef; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 5-7 minutes on each side. Top with cheese; grill, covered, until cheese is melted, 1-2 minutes longer., Meanwhile, in a small bowl, combine mayonnaise, ketchup, vinegar and honey; spread over cut sides of buns. Top bun bottoms with bacon, burgers, french-fried onions and, if desired, lettuce and tomato. Replace tops.

- In a small bowl, whisk the mayonnaise, pickle relish, ketchup, sugar, and onion until well blended. Cover and refrigerate. In a large bowl, combine Worcestershire sauce, salt, garlic powder and pepper. Crumble beef over mixture; mix well. Shape into eight patties.
- Place bacon on a piece of heavy-duty foil on one side of the grill. Place the patties on the other side of the grill. Grill, covered, over medium-hot heat for 20 minutes or until bacon is crisp and burgers are no longer pink, turning once.
- Drain bacon on paper towels. Place a cheese slice on each burger; cover and grill until cheese is melted. Layer bottom half of each bun with lettuce, burger, bacon, and Special Sauce. Add bun tops.

Steps:
- Put all the ingredients into a large mixing bowl, except for the cheese. Mix thoroughly using your hands, ensuring the ingredients are well distributed.
- Cut cheese into disks, 3/4" thick. You can use any cheese of your choice, my favourites are Camembert, Brie and Monterey Jack.
- Divide mixture into 4 portions. Shape each portion into a burger patty, approximately 2" thick.
- Using a spoon, scoop out approximately 1 tbsp meat from the middle of the patty for the pocket, being careful not to scoop all the way through to the bottom (leave 1/2" of meat for the base of the pocket). Reserve the scooped meat.
- Place cheese in the pocket and cover with the reserved meat, pinching the sides to close and smooth to flatten.
- Cook on a grill for approximately 7 minutes on each side to allow the cheese to melt, or to desired doneness.
- Serve as you would a regular burger, or on its own with side dishes.

HERBED BURGER PATTIES
We make our burger patties from scratch rather than buying the pre-made supermarket variety, as they're too salty for me. This recipe ramps up the flavour by trading the salt for a variety of either fresh or dried herbs instead. These are good on turkish breadrolls or ciabatta rolls with salad of your choice.

Steps:
- Freeze the butter.
- Separate out the beef in a mixing bowl so it's grainy.
- Combine all herbs in a second bowl.
- Grate the frozen butter into the beef.
- Mix in herbs, and combine all ingredients loosely.
- Shape mixture into 4 large round pattiess 1cm thick. Make a depression in the centre of each.
- Grill patties 7-10 minutes (depending on how well-done you like your burger!).
