Beef Tips & Gravy image

Tender chunks of beef in a rich brown gravy. This meal is perfect over mashed potatoes.

Number Of Ingredients 10

2 tablespoons olive oil
1 onion (chopped)
2 pounds cubed chuck (or stew meat)
10 ½ ounces beef broth
10 ½ ounces French onion soup (condensed)
1 tablespoon Worcestershire sauce
1 bay leaf
salt & pepper (to taste)
3 tablespoons cornstarch
1/3 cup water

Steps:

  • In a large pot or dutch oven, heat 1 tablespoon olive oil over medium-high heat. Season beef with salt and pepper and brown in small batches. Remove beef from the pot and set aside.
  • Turn heat down to medium, add remaining oil and onion. Cook until softened, about 10 minutes.
  • Add beef, broth, soup, Worcestershire sauce and bay leaf to the pot. Bring to a boil, cover and reduce heat to simmer 1 1/2 to 2 hours or until beef is fork tender.
  • To thicken gravy, combine cornstarch with 1/3 cup cold water. Pour into the beef a little at a time while stirring until it reaches desired consistency.
  • Taste and season with salt and pepper. Discard bay leaf and serve over mashed potatoes.

Perfectly fork-tender beef is coated in a simple and rich gravy sauce and combined with pearl onions and sliced mushrooms. This dish hits high on comfort, nutrition, and cozy satisfaction.

1 tablespoon avocado oil, divided (for Instant Pot version only)
2 lbs. beef tips (cubed sirloin) or cubed beef stew meat (1- to 2-inch pieces)
1 (12-ounce) bag frozen pearl onions (unthawed)
¼ cup tomato paste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon coarse sea salt
½ teaspoon black pepper
8 ounces fresh mushrooms, sliced or coarsely diced
1 ½ cups low-sodium beef broth
2 to 4 tablespoons cornstarch
For serving: Cooked mashed potatoes, mashed parsnips or cauliflower, or noodles
Snipped fresh parsley for garnish (optional)

Steps:

  • In a 6- to 7-quart slow cooker, place the beef tips, frozen pearl onions, tomato paste, garlic powder, onion powder, dried thyme, salt, and pepper; stir until beef and onions are coated in the tomato paste and seasonings.
  • Add the mushrooms and pour the beef broth over all. Place the lid on the slow cooker and cook on high for 4 hours or on low for 6 to 8 hours.
  • When the beef is tender, thicken the liquid with a cornstarch slurry.* To do so, place 2 tablespoons cornstarch in a small bowl and ladle ¼ cup of the hot liquid from the slow cooker into the bowl. Use a small whisk or fork to mix the cornstarch into the liquid until dissolved (should look like a muddy liquid). Pour the cornstarch slurry into the mixture in the slow cooker and mix until incorporated. Set slow cooker to high setting, cover, and cook for 30 minutes or until liquid is thickened. If you prefer even thicker gravy, repeat the cornstarch slurry step with 2 more tablespoons of cornstarch. The gravy will thicken even more over time and as the recipe cools.
  • Serve over mashed potatoes, other mashed veggies, or cooked noodles.
  • Store leftovers in a covered container in the refrigerator for up to 5 days.

1-1/2 teaspoons minced garlic
1 teaspoon dried oregano
1 teaspoon pepper
4 beef top sirloin steaks (6 ounces each)
3/4 cup Catalina salad dressing, divided

Steps:

  • In a small bowl, combine the oil, garlic, oregano and pepper. Rub over both sides of steaks. Brush with 1/4 cup salad dressing. Place on a broiler pan., Broil 4 in. from the heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with remaining dressing.

1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 cups water
3 tablespoons vegetable oil
1 teaspoon garlic
1 teaspoon salt
1 teaspoon ground pepper
1 cup water

Steps:

  • In a large skillet, heat oil over high heat.
  • Saute the onion until translucent.
  • Add stew meat and cook on high heat until meat is browned on all sides (3-5 minutes). Pour 2 cups water, soy sauce, and worcestershire sauce into the skillet.
  • Stir in garlic powder, salt and pepper.
  • Bring to boil and reduce heat.
  • Cover and simmer for 1 1/2 to 2 hours.
  • Then combine the gravy mix with 1 cup of water, mix thoroughly and stir into the meat. Bring to boil, stirring frequently until it slightly thickens.
  • Serve over egg noodles.

I prefer to use homemade or Mary B's frozen biscuits, thawed....I just don't like refrigerated biscuits. But to make this quick and easy, I've included it in the ingredient list.

1 1/2 lbs ground beef
1 cup onion, chopped
1 garlic clove, minced
1 (10 3/4 ounce) can cream of mushroom soup
1 (8 ounce) package cream cheese, softened
1/4 cup milk
1/4 cup ketchup
1 teaspoon salt
1 (10 ounce) can refrigerated biscuits or 1 (10 ounce) can fresh biscuits, to cover

Steps:

  • Brown ground beef, onion, and garlic in a large skillet, stirring until meat crumbles; drain and set aside.
  • Combine soup and next 4 ingredients in a large bowl; stir well. Add reserved ground beef misture and stir well. Place in a lightly greased 2 quart casserole. Bake uncovered in a 375 degree oven for 10 minutes.
  • Place biscuits on top of ground beef mixture. Bake an additional 15 to 20 minutes or until biscuits are done.
