DRESSED-UP RED BEANS AND RICE
This is a recipe I've adapted from the American Dry Bean Board. The original includes meat. I was able to cut it out in the interest of saving time, money, sodium, etc., and this is still a big hit around our house. The basic recipe works wonderfully when served over any kind of noodles (we particularly like soba or udon) as well as over white or brown rice. For added color and slightly different flavor, try using yellow or red bell peppers instead of green. A very versatile and adaptable recipe!

Steps:
- Heat olive oil in a medium nonstick skillet over medium heat.
- Add onion, bell pepper, jalapeno, and garlic to pan. Sautee for 3 minutes or until soft.
- Stir in sugar, pepper, oil, and vinegar. Allow to come to a boil, then add beans and cook for 3 minutes or until beans are heated through.
- Stir in kale. Cook for 3 more minutes or until kale is wilted. (The kale should still be bright green, not dull and turning brown.).
- Divide bean mixture in half and serve each half over one cup of rice.

DRESSED UP, SLOW COOKED CANNED BAKED BEANS
My sister turned me on to this wonderful way to dress up canned baked or barbeque beans (and she nabbed it from our cousin). They are delightful, and such an easy way to make canned taste homemade. I love to serve these with barbequed meat, and either cold slaw or potatoe salad. This recipe can easily be adjusted to serve the number of people in your party. You can also add more or less brown sugar, depending on how much sweetness you prefer.

Steps:
- Place beans in saucepan.
- Add diced jalapenos, with juice (add as much juice as you prefer, based on how spicy you want it).
- Add bacon and brown sugar.
- Stir well.
- Bring to a boil and then turn down heat to simmer.
- Simmer for one hour, or more.

- In a medium saucepan over medium heat, heat oil and then cook onion and green pepper, stirring frequently, until tender.
- If necessary, add a bit of water or broth so it doesn't stick.
- Stir in beans and drained pineapple.
- In a small bowl, stir cornstarch into reserve pineapple juice.
- Add to saucepan.
- Add spices.
- Cook, stirring, until it boils.
- Cook and stir 1 minuter longer.

Green beans were never a favorite vegetable of mine, until I tasted this version of them. Try to use fresh green beans, but frozen will work in a pinch. This is wonderful with asparagus also!

- Wash beans, trim ends and remove strings.
- Combine beans and water in a dutch oven.
- Bring to a boil.
- cover, reduce heat and simmer 6 to 8 minutes until crisp-tender.
- drain.
- Plunge into ice water to stop the cooking process.
- Drain beans and set aside.
- Saute mushrooms and next 7 ingredients in oil in a Dutch oven.
- Stir in beans and cook until thoroughly heated.
- sprinkle with Parmesan cheese.
