Ingredients

1 c sifted all purpose flour
1/4 c powdered sugar
1/2 c melted butter
2 eggs
3 Tbsp fresh lemon juice
zest of a lemon
2 Tbsp all purpose flour
1 c sugar
1/2 tsp baking powder
powdered sugar for dusting

Steps:

1. for the lemon bar crust: In a bowl mix the crust ingredients until crumbly. And then press onto a 8x8 inch pan. Bake at 350 for 20 minutes.
2. In a large bowl beat eggs sling with juice, zest, flour, sugar and baking powder pour the lemon filling on top of crust. Return to oven for 20-25 minutes until set. Dust with powered sugar while it's out of the oven let cool. Cut into squares and enjoy

In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a handheld mixer, beat the butter and granulated sugar together for 1 to 2 minutes or until well combined. Add the egg and mix until fully combined.
Mix in the lemon zest, lemon juice, lemon extract, and yellow food coloring until fully combined, making sure to stop and scrape down the sides of the bowl as needed.
