DREAM OF BROCCOLI SOUP

Steps:
- In a stock pot, cook the onions over medium heat in the butter for about 8 minutes. Add broccoli and half the stock; bring to almost a boil.
- Using hand held immersion blender, puree the broccoli mixture until smooth.
- Stir in the remaining broth, 1/2 cup buttermilk, 2 ounces of the goat cheese, bay leaf and nutmeg. Heat for 5 minutes but do not boil.
- Adjust seasoning and add salt and pepper.
- In a plastic bag combine the remaining buttermilk and cheese. Mix together. Snip the corner of the plastic bag.
- Pipe dots on top of the soup, dragging a toothpick through the dots to form "hearts".
- Serve warm.

CREAM OF BROCCOLI SOUP WITH ROASTED GARLIC CROSTINI

- Preheat oven to 400 degrees F.
- Arrange bread slices on a baking sheet. Bake for 6 minutes, until toasted.
- Meanwhile, in a large stock pot, heat olive oil over medium heat. Add onion, celery, garlic, carrot, and broccoli. Pour broth over vegetables and increase the heat to high. Bring to a boil, reduce heat to medium and simmer 5 minutes. Using an immersion blender, puree until smooth or you can use a blender. Add milk and simmer 1 minute to heat through. Puree again. Season, to taste, with salt and pepper. Using a fork, mash garlic cloves with a pinch each of salt and black pepper, making a thick paste. Spread mixture on toasted bread and serve with soup.
CREAM OF BROCCOLI AND PEA SOUP
Steps:
- Simmer the broccoli and half the onion in the water or stock for 15 minutes or until tender. Add the peas and simmer 5 minutes longer just to cook through. (As you are simmering, be sure to keep the level of the water constant so that it does not evaporate too much.) When the vegetables are tender, puree the mixture (vegetables and liquid) through a food mill or blender. (If you puree it with a food processor or a blender, pass the puree through a sieve to remove any tough bits.)
- In a clean saucepan heat the butter. Add the remaining onion and cook for 5 minutes, over low heat or until very tender but not brown. Add the flour and cook for a few seconds. Whisk in the strained puree, bring to a boil and simmer for 10 minutes, stirring on occasion to make sure the flour does not stick to the bottom of the saucepan. Gradually add the half and half or evaporated milk and adjust it to the texture you like. Bring the liquid to just to under a boil; season to taste with salt and pepper. Ladle out and garnish with chives if you wish.
SIMPLE CREAM OF BROCCOLI SOUP

- In a large pot, melt butter and cook onion until tender over medium high heat. Add potato and toss to coat with butter. Add hot stock and bring to a simmer. Stir in broccoli and return to a simmer. When potato and broccoli are tender, puree in batches in a blender or food processor. Return to pot and add cream. Season to taste and serve warm.
CREAMY BROCCOLI SOUP
Puree potato and broccoli with garlic, leeks and thyme for a silky, savory soup.

Steps:
- Heat the oil in a medium saucepan over medium heat. Add the leeks and cook, stirring, until soft, 3 to 5 minutes. Add the potato, thyme, bay leaf, garlic, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes. Pour in the broth and bring to a simmer.
- Add all but 2 to 3 of the broccoli florets, bring back to a simmer and cook until the broccoli is tender, about 20 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat, and let cool at least 5 minutes. Remove and discard the thyme and carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill blender more than halfway full).
- Meanwhile, cut the reserved broccoli florets in half, lengthwise. Put in a small microwave-safe bowl, toss with a splash of water and a pinch of salt, cover and cook until bright green and crisp-tender, 2 to 3 minutes. Set aside.
- Add the cream and reheat the soup if necessary. Adjust the consistency and seasoning with water, salt and pepper.
- Serve hot and garnish each soup with a broccoli half.

- In a saucepan, combine the chicken broth, chopped onion, broccoli, bay leaf and garlic powder.
- Bring mixture to boiling. Reduce heat; cover and simmer for 10 minutes or until vegetable is tender. .
- Remove bay leaf.
- Place half of the vegetable mixture in a blender or food processor.
- Cover and blend 30 to 60 seconds or till smooth. Take care when blending hot liquids. Pour into bowl.
- Repeat with remaining vegetable mixture; set all aside.
- In the same saucepan, melt the butter or margarine.
- Whisk in flour, salt and pepper. Add the milk all at once, whisking till smooth.
- Cook and stir till mixture is thickened and bubbly.
- Stir in the blended vegetable mixture.
- Cook and stir till soup is heated through.
- Season with additional salt and pepper to taste.
CREAM OF BROCCOLI SOUP

- Cook broccoli in large pot of boiling salted water until tender but still bright green, about 5 minutes. Drain broccoli. Set aside 4 small florets for garnish.
- Combine broth and 1 cup cream in heavy large saucepan and bring to boil. Working in batches, puree broccoli, broth mixture, and butter in blender until smooth, about 45 seconds per batch. Return puree to same pan. Season soup to taste with salt and white pepper. (Soup can be made up to 8 hours ahead. Cool slightly, cover, and refrigerate.)
- Bring soup to simmer, thinning with water if desired. Ladle soup into 4 bowls. Drizzle 1 teaspoon cream over each; garnish with reserved florets.

- Melt 2 tablespoons butter in medium sized stock pot, and sauté onion, garlic and celery until tender.
- Add broccoli and broth; cover and simmer for 10 minutes.
- Purée soup (I use a hand blender) or mash with potato masher.
- Return to heat.
- In small saucepan, over medium heat melt 3 tablespoons butter, stir in flour and add milk.
- Stir until thick and bubbly, add to soup.
- Add cheese; stir until melted.

- In a medium pot, melt butter over medium. Add onion and cook, stirring occasionally, until softened, 8 minutes.

I found this in the Easy Cooking card collection that I have. I have fixed it once, and loved it, then proceeded to forget about it. Since discovering Recipezaar, I have been culling through all the cooking info, recipes etc that I have and came across this again. So, here it is!

Steps:
- In a large saucepan, mix and bring to boil broth and soup.
- When it is boiling, add broccoli and bring to second boil.
- Reduce heat.
- Cover and simmer for about 5 minutes, or until broccoli is cooked.
- In medium skillet, heat butter and sautee onions for about 5 minutes, or until tender.
- Add the flour and cook for about 1 minute longer. If necessary, use whisk to remove lumps.
- Slowly stir milk into flour mixture in skillet.
- Cook, until thickened, stirring constantly. It will take about 5 minutes, then add salt and pepper.
- Mix well.
- Stir milk mixture into broccoli mixture and simmer over low heat for about 10 minutes.
- Stir frequently.
- Ladle into bowls and top with grated cheese.
