- Mix salt, peppers, crumbs together.
- Beat together egg and water.
- Roll scallops in crumbs.
- Dip scallops in egg wash.

- Pre heat oven to 450°F.
- Pulse oyster crackers in a food processor until coarsely ground. If you do not have a food processor, place in Ziploc bag and crush until coarse.
- Add melted butter, parsley, and lemon zest. Pulse (or mix well) JUST to combine and keep chilled.
- In a bowl, combine the scallops, garlic, wine, and melted butter. Toss well to combine.
- Season scallops with salt and pepper.
- Transfer to a casserole dish in one layer. Sprinkle the cracker mixture evenly over the scallops.
- Bake for 14-16 minutes, until crumbs have browned and scallops are cooked through.

- Rinse the scallops & pat dry.
- Set aside.
- Place the egg substitute in a shallow dish.
- Place bread crumbs in another shallow dish.
- Dip scallops in the egg substitute and then roll them in the bread crumbs.
- Coat a 9 x 13 inch pan with the olive oil cooking spray and arrange the scallops in a single layer in the pan.
- Spray the tops lightly with the spray.
- Bake at 500 degrees F for about 8-10 minutes or until the scallops turn opaque and nicely browned.
- Remove pan from oven and sprinkle with parsley.
- Squeeze the lemon over the scallops and serve.

DEB'S SCALLOPS FLORENTINE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie plate.
- Bring a pot of water to a rolling boil. Rinse the scallops, and drop them into the boiling water; cook for 2 minutes. Remove the scallops with a slotted spoon, and pat dry. Place on the bottom of the prepared pie plate.
- In a small saucepan, melt the butter, and stir in the flour. Cook over low heat for 3 minutes. Whisk in heavy cream and 1/4 cup Parmesan cheese. Season with salt and pepper to taste. Cook for another 2 to 3 minutes, stirring constantly, or until thick.
- Squeeze the spinach dry, and spread over the scallops. Pour the cream sauce over the spinach, and top with mozzarella cheese, 1/4 cup Parmesan cheese, and bread crumbs. Sprinkle Old Bay Seasoning over the bread crumbs.
- Bake in preheated oven for 15 minutes, or until browned and bubbly.

- In a large roasting pan or steamer, place one-inch layer of seaweed or layer of crumpled aluminum foil or on a rack.
- Parboil onions and potatoes.
- Shuck corn except the innermost leaves.
- Place lobster on seaweed or aluminum foil; arrange corn and onions between the lobster and the sides of the pan.
- Place clams, mussels, and potatoes gently over the lobster.
- Keep the top of the pan contents level.
- Cover with remaining seaweed and add water (salted if no seaweed) over the top.
- Cover the pan tightly with aluminum foil or a lid and place on stove or preheated grill to cook.
- If using a grill, make sure the coals are very hot.
- When steam becomes visible, cook covered for 15 minutes.
- Remove from heat, but leave covered for 5 more minutes.
- Serve with lemon, melted butter or margarine, or your favorite lobster accompaniment.
