ANYTHING BUT BASIC MUFFINS

Steps:
- Preheat oven to 425°F. Line a muffin tin with 10 muffin cups, and spray the muffin cups with an oil-based spray. Set aside.
- In a large bowl, combine the sugar, eggs, melted butter, buttermilk, and vanilla extract.
- In a separate bowl, mix together the flour, baking powder, and salt.
- Fold the dry ingredients into the wet, mixing only until combined. Having a few lumps in the batter is totally fine!
- Scoop batter into prepared muffin cups, filling just shy of the top of the cups. Bake for 5 minutes at 425°F, then, without opening your oven door, turn the oven down to 350°F and bake for an additional 15 minutes.
- Remove from oven and allow to cool for 10 minutes, before transferring to a wire rack to cool completely.

- Combine the oats and buttermilk and let stand 30 minutes.
- Sift together the flour, baking powder, salt, baking soda and cinnamon.
- Stir the eggs into the buttermilk mixture, then add sugar, butter, and flour mixture.
- Stir until just combined.
- The batter will be lumpy.
- Fold in the raisins.
- Spoon into a muffin tin about 2/3 full.
- Bake at 400º F for 15 to 20 minutes.

- Preheat oven to 400 degrees F (200 degrees C). Grease 6 muffin cups or line with paper muffin liners.
- In a mixing bowl, mix flour, baking powder, nutmeg, sugar, and orange peel. In a separate bowl, mix eggs, margarine, and milk.
- Stir flour mixture into the wet ingredients until just moist. Stir in raisins, poppy seeds, and oats; mix well. Spoon batter into prepared muffin pan; fill muffin cups about 3/4 full.
- Bake in preheated oven for 20 minutes, until a toothpick inserted into center of muffin comes out clean. Serve warm.

- In a small bowl, combine oats and buttermilk.
- In a small mixing bowl, combine the egg, brown sugar and oil; stir in oat mixture.
- Combine the dry ingredients; stir into batter just until moistened.
- Fold in raisins.
- Fill greased or paper lined muffin cups three-fourths full.
- Bake at 400 degrees for 15-18 minutes or until tests done.
- Cool for 5 minutes before removing from pan to a wire rack.

- Heat oven to 400 degrees .
- Line 12 muffin cups with baking cups or lightly grease bottoms only.
- Mix streusel and set aside(I pulse the topping in a mini food processor. I like how the topping comes out this way).
- Muffin: Combine dry ingredients and mix well. Add liquids and mix just until dry ingredients are moist.
- Fill muffin cups.
- Sprinkle streusel over muffins and pat gently.
- Bake 18-20 minutes.
- Note: I made 10 muffins since I fill the pan to the top!
OATMEAL RAISIN YOGURT MUFFINS
I got this recipe from a container of Dannon Light & Fit yogurt. I made the muffins for breakfast, and every last one of them was gone by supper! Posting here so I can throw away the yogurt lid. :)

- Preheat oven to 375.
- Lightly grease 1/2 cup muffin tin or use paper liners.
- In a bowl, stir together, flour, oats, brown sugar, baking powder, salt, cinnamon, and raisins.
- In another bowl, whisk together eggs, oil, and yogurt.
- Add yogurt mixture to flour mixture and stir until just combined.
- Divide the batter among ten of the muffin cups and bake on middle rack for 22-25 minutes.
- Yield: 10 muffins.
- Note: As stated above, I omitted the raisins from this recipe, and we didn't miss them at all. Also, I added maybe 1-2 tablespoons of milk, just because the batter seemed a bit "dry." Finally, I did get 12 muffins out of this recipe, not 10. I don't know if my muffin tin has smaller cups than stated, or if the added milk "stretched" the batter a bit more.
