Cake
2 cups stout (such as Guinness)
2 cups (4 sticks) unsalted butter
1 1/2 cups unsweetened cocoa powder (preferably Dutch-process)
4 cups all purpose flour
4 cups sugar
1 tablespoon baking soda
1 1/2 teaspoons salt
4 large eggs
1 1/3 cups sour cream
Icing
2 cups whipping cream
1 pound bittersweet (not unsweetened) or semisweet chocolate, chopped

Steps:

  • For cake:
  • Preheat oven to 350°F. Butter three 8-inch round cake pans with 2-inch-high sides. Line with parchment paper. Butter paper. Bring 2 cups stout and 2 cups butter to simmer in heavy large saucepan over medium heat. Add cocoa powder and whisk until mixture is smooth. Cool slightly.
  • Whisk flour, sugar, baking soda, and 1 1/2 teaspoons salt in large bowl to blend. Using electric mixer, beat eggs and sour cream in another large bowl to blend. Add stout-chocolate mixture to egg mixture and beat just to combine. Add flour mixture and beat briefly on slow speed. Using rubber spatula, fold batter until completely combined. Divide batter equally among prepared pans. Bake cakes until tester inserted into center of cakes comes out clean, about 35 minutes. Transfer cakes to rack; cool 10 minutes. Turn cakes out onto rack and cool completely.
  • For icing:
  • Bring cream to simmer in heavy medium saucepan. Remove from heat. Add chopped chocolate and whisk until melted and smooth. Refrigerate until icing is spreadable, stirring frequently, about 2 hours.
  • Place 1 cake layer on plate. Spread 2/3 cup icing over. Top with second cake layer. Spread 2/3 cup icing over. Top with third cake layer. Spread remaining icing over top and sides of cake.

¾ cup 60gr unsweetened natural cocoa powder
½ teaspoon baking soda
½ teaspoon salt
3 large eggs
2 cups 400gr sugar
2/3 cup 150gr Greek yogurt
1 cup 240ml stout (such as Guinness)
1 cup 230gr unsalted butter, melted
1 teaspoon pure vanilla extract
4 oz 115gr semi-sweet chocolate, finely chopped
2 oz 55gr semi-sweet chocolate, broken into small pieces
2 tablespoons heavy (whipping cream)
2 tablespoons stout

Steps:

  • To make the cake, preheat the oven to 350°F (175°C). Generously spray 14-cup bundt pan with a cooking spray.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda and salt.
  • In a large mixing bowl, beat the eggs and sugar on medium high speed for 2 minutes. Add Greek yogurt, stout, butter and vanilla extract and mix until combined. Add the dry ingredients and continue to mix until the batter is smooth, about a minute. Stir in the chopped chocolate.
  • Pour the batter into the prepared pan and bake for 45-50 minutes, or until inserted toothpick comes out clean. Cool the cake completely in the pan on a wire rack, and then invert it onto a serving platter.
  • To make the ganache, chop the chocolate into small pieces. Warm up the heavy cream in a microwave for 30 seconds. Pour it over the chocolate and stir until smooth. Stir in the stout. Pour the ganache over the cake while it's warm and runny.
  • Store the cake in the fridge for up to 5 days.

1/3 cup dark molasses (not blackstrap)
7 1/2 ounces all-purpose flour (1 2/3 cups)
2 1/4 ounces unsweetened natural cocoa powder (not dutch process, 3/4 cup)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 ounces unsalted butter, softened at room temperature (1 1/4 cups)
1 1/2 cups packed light brown sugar
3 large eggs, at room temperature
6 ounces semisweet chocolate, very finely chopped
3/4 cup heavy cream
6 ounces semisweet chocolate, chopped

Steps:

  • Position rack in the center of the oven and preheat to 350 degrees.
  • Butter a 10-12 cup bundt pan and lightly dust with sifted cocoa.
  • Tap out excess.
  • In a small saucepan over high heat, bring the stout and molasses to a simmer.
  • Remove from heat and let stand while preparing the batter.
  • Sift together the flour, cocoa powder, baking powder, baking soda and salt.
  • In a mixer with paddle attachment, cream the butter for about 1 minute, add brown sugar and beat on medium speed until fluffy and light- about 3 minutes.
  • Scrape down sides as needed.
  • Beat in eggs one at a time, scraping down after each addition.
  • With the mixer on low, alternate adding the flour mixture and the stout mixture, beginning and ending with the flour.
  • Scrape down sides of bowl and then beat for 20 seconds until smooth.
  • Stir in chopped chocolate.
  • Spoon batter into prepared pan, spreading evenly.
  • Run knife through batter to eliminate air pockets.
  • Bake until wooden skewer comes out with only a few moist crumbs clinging to it- about 45-50 minutes.
  • Let cake cool for 20 minutes then invert cake on to a rack to cool until just barely warm.
  • To make glaze: bring cream to a boil in a saucepan over high heat, remove pan from heat and add chocolate.
  • Whisk until chocolate is melted and smooth.
  • Let cool for 5 minutes before drizzling over cake.
  • Drizzle glaze over cake.
  • If you are making the cake ahead- do not glaze, wrap in plastic wrap and refrigerate or freeze.
  • Glaze when ready to serve.

175g golden caster sugar
3 eggs
140g self-raising flour
85g ground almonds
½ tsp baking powder
100ml milk
4 tbsp cocoa powder
50g plain chocolate chip or chunks
few extra chunks white, plain and milk chocolate, for decorating

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb/900g loaf tin with a long strip of baking parchment. To make the loaf cake batter, beat the butter and sugar with an electric whisk until light and fluffy. Beat in the eggs, flour, almonds, baking powder, milk and cocoa until smooth. Stir in the chocolate chips, then scrape into the tin. Bake for 45-50 mins until golden, risen and a skewer poked in the centre comes out clean.
  • Cool in the tin, then lift out onto a wire rack over some kitchen paper. Melt the extra chocolate chunks separately in pans over barely simmering water, or in bowls in the microwave, then use a spoon to drizzle each in turn over the cake. Leave to set before slicing.

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan and set aside.
  • In a medium bowl, sift together the flour, cocoa, baking soda, and salt.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugars on high speed until light, approximately 5 minutes. Add the eggs, one at a time, and the vanilla and mix well. Combine the buttermilk, sour cream, and coffee. Off the heat, add the corn syrup and vanilla and allow the chocolate mixture to cool to room temperature. In the bowl of an electric mixer fitted with the whisk attachment, whisk the chocolate mixture and softened butter on medium speed for a few minutes, until it's thickened.
  • Spread the frosting evenly on the cake. Have the children decorate the cake with M&M's.

1/2 cup organic icing sugar
2 1/2 cups whole-wheat pastry flour
1 cup unsweetened cocoa powder (Dutch-process is best)
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
1 1/4 cups unsweetened applesauce
1 cup non-fat plain Greek yogurt
1/3 cup honey
1/3 cup organic sugar
1/3 cup unsalted butter
2 teaspoons pure vanilla extract
1 1/2 cups egg whites (about 12 large)

Steps:

  • Prepare icing: In a stand mixer fitted with a whisk attachment, or in a bowl using a whisk, combine yogurt, cocoa powder, melted chocolate and icing sugar until smooth. Cover and refrigerate for at least 12 hours, to firm up.
  • Preheat oven to 375 degrees F. Grease and flour two 10-inch cake pans.
  • Prepare cake: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt.
  • In a food processor, pulse applesauce, yogurt, honey, sugar, butter and vanilla until smooth. Gradually mix into dry ingredients until just combined; do not overmix.
  • In a separate dry bowl, using an electric beater on high speed, whisk egg whites until soft peaks form. Using a spatula, fold egg whites into batter. (Batter should seem a little lumpy; do not overmix.)
  • Pour batter into prepared cake pans. Bake for 20 to 25 minutes, until a toothpick inserted in the centre comes out almost clean. Transfer pans to wire racks to cool for 20 minutes, then turn out cakes onto wire racks to cool completely.
  • Remove icing from the fridge and allow to warm at room temperature until easily spreadable, about 1 hour. Using a serrated knife, slice a small portion off the top of each cake so that the top is flat. Place 1 cake on a stand or flat plate; using an offset or regular spatula, spread a layer of icing over cut side. Place remaining cake cut side down on top of iced cake. Thinly spread about one-third of remaining icing all over cake to form a crumb coat (see Note). Refrigerate for about 1 hour until set, leaving remaining icing at room temperature. Once crumb coat has set, cover cake with remainder of icing. Serve immediately or refrigerate, bringing cake to room temperature before serving.

1 cup stout beer (try to find one with a heavy malt flavour)
1/2 cup butter, sliced
1/2 cup applesauce
75 g dark cocoa (not Dutch-process)
400 g sugar
1/2 cup vanilla yogurt
1 egg
2 egg yolks
1 tablespoon vanilla extract
200 g plain flour
75 g cake flour
2 1/2 teaspoons baking soda

Steps:

  • Preheat the oven to 350F, and grease and line a 9 inch springform tin.
  • Pour the stout into a large saucepan, and add the sliced butter.
  • Heat until the butter is melted, and remove the saucepan from the heat. Stir in applesauce.
  • Whisk in the cocoa and sugar.
  • Beat the yogurt with the egg, yolks and vanilla, then pour into the saucepan. Stir well.
