DOUBLE CHOCOLATE RAINBOW CHIP COOKIES

Number Of Ingredients 11

2 cups semisweet chocolate chips
2 cups white chocolate chips
1 cup rainbow chips
1 cup unsalted butter, at room temperature
1 cup brown sugar, packed
1/2 cup granulated sugar
2 eggs
2 tsp vanilla extract
1 tsp kosher salt
1 tsp baking soda
3 cups all purpose flour

Steps:

  • Preheat the oven to 400°F.
  • Line two baking sheets with parchment paper and set aside.
  • In a gallon size Ziplock bag combine the chocolate chips with the rainbow chips. Shake to evenly mix (this is great to get your kiddos something to do). Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment mix together the butter and sugars together for 30 seconds on low speed to help prevent the butter and sugar from flying everywhere (been there done that).
  • Turn the mixer up to medium speed and mix for about 3 minutes until light and fluffy.
  • Add in the eggs one at a time and scrape down the bowl after each addition. Mix until fully combined.
  • Add the vanilla, salt, and baking soda and mix for 1 minute until smooth, scraping the sides of the bowl as necessary.
  • Turn the mixer to low and add in the flour, mixing until just combined.
  • With mixer still on low, add in 1 1/2 cups of the chocolate rainbow chip mixture, mixing until incorporated.
  • Pour the remaining chocolate rainbow chips into an 8-x-8 pan. I find this works better than a bowl but that's just me. Something else might work better for you.
  • Using a large ( 1/4- cup) cookie scoop, portion the dough and roll it into a ball.
  • Coat the ball with the chocolate chip mixture, leaving the bottom of the ball free from chocolate chips. Make sure the chips are pressed firmly and evenly into the dough.
  • Place the dough balls onto the prepared baking sheet 3- inches apart. I pushed them down slightly to flatten them a little. Then if they had any bald spots on the cookie I would place more chocolate or rainbow chips where the space was. I baked 6 cookies at a time.
  • Bake for 9-10 minutes, until the edges and tops are lightly golden. Each oven is a little different so just watch.
  • Allow the cookies to cool for 2-3 minutes on the baking sheet, and then transfer to a wire rack to cool completely.

Steps:

  • Beat the butter, granulated sugar and brown sugar in a bowl with a mixer on medium speed until fluffy. Add the egg and vanilla; beat.
  • Whisk the flour, cocoa powder, baking soda and salt in a bowl. Add to the butter mixture and beat until just combined. Stir in the chocolate chunks.
  • Preheat the oven to 350 degrees F. Scoop rounded tablespoons of dough and roll into balls. Arrange on parchment-lined baking sheets about 2 inches apart. Refrigerate 30 minutes, then bake until the cookies are golden on the bottom, 12 to 15 minutes. Cool on the baking sheets, 10 minutes, then transfer to racks to finish cooling.

1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
⅓ cup unsweetened cocoa powder
3 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the margarine, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Sift in the flour, baking soda, salt, and cocoa powder; mix well. Stir in the chocolate chips. Roll tablespoonfuls of cookie dough into balls and place them 1 inch apart onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

3 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup sugar
1 cup dark brown sugar, packed
2/3 cup unsalted butter, softened
2/3 cup vegetable shortening
2 large eggs
2 teaspoons vanilla
2 cups semi-sweet chocolate chips
1/2 cup milk chocolate chips

Steps:

  • Preheat oven to 350°F degrees.
  • Whisk dry ingredients, set aside.
  • Combine wet ingredients with a hand mixer on low.
  • To cream, increase speed to high and beat until fluffy and the color lightens.
  • Stir the flour mixture into the creamed mixture until no flour is visible.
  • (Over mixing developes the gluten, making a tough cookie).
  • Now, stir in the semi-sweet and milk chocolate chips.
  • Use a cookie scoop (2 tbs per scoop) to measure and drop dough 2" apart onto an ungreased baking sheet.
  • Bake on center rack of oven 12-14 minutes, until lightly browned and edges are set.
  • Remove from oven; leave cookies on baking sheet for 2 minutes to firm up.
  • Transfer to a wire rack to cool.
  • If you are reusing the warm baking sheet, reduce baking time slightly.
